Westerosi labor relations would also be so different from our history. What do the peasants *do* all winter? In our world there's lots of things to do for ~3 months, like mending clothes and planting winter wheat and spinning thread and banqueting neighbors and weaving cloth. I cannot stress enough the amount of time that went into fabric and related crafts.
But 3 years? Or longer? The only thing I can think of is a highly mobile peasantry, who migrate south to livable lands. This might work for the Dothraki, who *should* be a nomadic culture that herds sheep for food. They could thin their herds and go to the warm south of the Great Grass Sea. But the smallfolk of Westeros are treated much like British peasants - conscripted for war, loyal to a local lord. That hierarchy would have to be renegotiated with every migration.
Westerosi food culture would be insane. Eating half-rations of porridge for years, with the occasional Dornish citron to stave off scurvy. Poor people would probably resort to whatever meager meats and vegetables can provide enough vitamins on dried rations. Rats? Cockroaches?
