There was a massive shadow perched atop it. Dorian froze.

Not a shadow but a giant beast, its claws gripping the wall, its wings tucked into its body, shimmering faintly in the glow of the full moon. Shimmering like the white hair of the rider atop it.

~ VEGAN | Pumpkin Soup Recipe ~

70 calories | 3g Protein | 2,5g Fat | 13g Carbs per serving (makes 6)

Time needed: 30 minutes

What you need

~ 1,5l | 6-¼ cups vegetable stock

~ 2 large onions, chopped

~ 10 garlic cloves, chopped very finely

~ 650g | 1,5lbs chopped pumpkin

~ 25g | 1oz parsley, chopped

~ ½ tsp ground pepper

How to:

1. Place the vegetable stock, onions, garlic, pumpking and parsley into a large stockpot and bring to boil. Then reduce the heat and let it simmer covered for about 20-25 minutes until the pumpkin is soft.

2. Pour into a blender and blend until it’s smooth. Add the pepper and a bit of salt and blend again

Tip: You can add a bit of soy or almond milk to make it creamier if you want. Can be kept in the fridge for up to 5 days!
