I think you might be confusing stretching with moving. When you pull the string on a bow, the string does move, but it doesn’t change length (by any appreciable amount). Instead, it bends, forcing the limbs of the bow itself to bend as well to allow the string to be pulled back. But no stretching/extending of length is required in that process, and in fact if the string did extend, it would make the bow much less effective.
By contrast, a slingshot has limbs/prods that are static, and the string stretches and extends when you pull it back, changing in length in the process. This elasticity is what launches the shot, but it is a very different process from the lever motion that bows use, making them a different tool (in the same way that airguns are different from firearms that use gunpowder).
The assassin’s creed bow pictured has a string that is so long that there is no possible way that that bow could return to a position where that string is straight, unless the string itself changed in length significantly. This is an animation trick, as it’s easier to animate a line changing length than a 3d bow model bending and flexing. But in real life, something that worked that way would not actually be a bow, since it would be powered by string elasticity rather than the lever motion of the bending limbs.
