Sapote Sunset
Here’s a sweet twist to the classic key lime pie by blending green sapote, avocado, lemon/lime, and a sprinkle of salt. And for a crumbly pie crust process walnuts, dates, vanilla bean and a pinch of salt. This yum tart sets up real nice in the fridge and freezer if time permits.

Hot Springs? And a cliff side trail along this enchanting river to get to them? Don't mind if I do! And specifically stated in many articles about this trail that after a 4.5km walk you end up at a 3D cabin. Because most cabins are made out of paper. And when continuing along the Dali-datung trail, you can visit a couple of aboriginal villages after applying for a permit. Maybe we could stop by and say hello.

Day 48:

Not too far on the outskirts of Taiwan sits a cluster of smaller islands, Penghu being one of them will be breathtaking I'm sure. It's also said to have one of Taiwanese oldest standing temples, Matsu Temple, dating back for more than 300 years. I'll shall validate this upon my hopeful visit.
The raw fig newtons need to be adjusted in the next trial. Make sure to add dates to fig paste, mine came out like >,< so I drizzled that raw agave on em and am dehydrating them for another hour.

This is one of the hotels we’ll be enjoying in a pretty poppin district. The photo I found is one taken of the restaurant inside Hotel B (the most appropriate name for a hotel, imo). So, I’m really excited to see if those are vacuum tubes above the food there because this is one of my dream restaurant ideas. And I might have to become the mayor of Sophie’s Garden while I’m at it.

The countdown begins for the opportunity to visit Taiwan with my sister and my mom for my mom’s high school reunion. I have been a handful of times before for about 10 days usually but in a traditional family manner. This time will be a little different because my sister and I will do whatever we want! We will be there for three weeks. I hope to capture these same photos and visit these places that I find within the next 50 days.
I’m looking forward to being inspired tremendously by this trip for a project developing, which launches when we return to LA.  Any recommendations for Taiwan? Bing!! >.<

Twilight:
A late night creation amongst the many more to come. And one of those that is weird enough to work. I was "phiending pho", but I'm more concerned about making sure my snooze is a luxurious one. So, this is my attempt to balance all the flavors I was thirsty for in a midnight snack, and will be a little easier to digest. In a bowl went a handful and a half of kelp noodles. In the blender went one avocado, coconut milk, squeeze of lemon and pinch of salt. Blended it and poured it all over the kelps and added warm water to soup it up. Garnished it with an heirloom and purple bell pepper. Missing some cilantro but I will get my hands on some tomorrow, for sure. I'm letting it soak and it's been about an hour while I took care of some other things... like blogging it... and I'm SO ready to dig in!!! I was tasting as I went, the balance is there and I can NOT wait any longer!! I'm goin in! Right now! Bon appetite!
