IMO Underrated/not talked about enough anime list.
Mostly things I watched in recent years so most are more recent anime/not many classics.

86 -エイティシックス- (11ep - s1, 12ep - s2)
86 -Eighty Six-
Not necessarily underrated, but I don't see enough people talk about it. War anime with heavy themes so it's probably not for everyone, but I think it has one of the best symbolism and cinematography in anime. Cried so much
91Days (12ep)
Only one cour worth of episodes, so I think it's a pretty easy watch. About the mafia in the US during the Prohibition Era so it might not be for everyone, but if that kind of crime, fighting, gangs is your cup of tea, I think it's worth a watch.

ACCA 13-ku Kansatsu-ka (ACCA: 13-Territory Inspection Dept.)
SO UNDERRATED OMG!! I love this anime so much, the setting, landscapes, the ART STYLE!!!, it's so beautiful. The protagonist works as an inspector and goes around the 13 districts of the country to watch over the government branches.
Another (12ep)
This is a horror anime and maybe it's because I'm not good with the genre, but it was so scary. But if you watch it, PLEASE watch to the end!!
BANANA FISH (24ep)
This isn't minor or underrated but I personally don't see many people talk about it and it's one of my favorite anime I've rewatched many times, maybe because it's set in NY. I also love that the episode names are famous books. It’s about friendship in a setting of street gangs/mafia in NYC.
Fate Series
It's long and they're many so it was hard to get into at first but I'm so glad I did since the franchise has the best music and battles of all anime imo. For those who are confused with the different names, each anime series can generally be watched standalone. "Fate" is basically the name that comes with the franchise that uses the same concept of battles between magician/historical-figure-servant partners. Whatever comes after the / (e.g. Fate/stay night, Fate/Grand Order, Fate/EXTRA) indicates the different "worlds" (like AUs). There are series within each AU but even then, you don't need to watch all of them together.
My favs are Fate/Zero (13ep - s1, 12ep - s2), Fate/stay night UBW (prologue + 12 ep - s1, 13ep - s2), Fate/Grand Order 絶対魔獣戦線バビロニア (Zettai Maju Sensen Babylonia / Absolute Demonic Front: Babylonia - 21ep), Fate/EXTRA Last Encore (13ep). I also like Carnival Phantasm, it's pure chaos.
GREAT PRETENDER (23ep)
I loved the art and chaotic energy overall. The characters being scammers was so funny.
MONSTER (74ep)
It's long, but it's gloomy and mysterious and creepy in just the right ways. The protagonist is a doctor that travels around Europe in search of a boy he once performed surgery on.
PandoraHearts (25ep)
By the same author Jun Mochizuki and animation studio Bones of more recent work Vanitas no Carte. This one has the same magical essence with more fantasy and has Alice in Wonderland themes. Since the manga is now complete wish they could remake/continue to the end.
PSYCHO-PASS (22ep - s1, 11ep - s2, 11ep - s3, 4 movies)
Maybe not as underrated as I think, but it's not talked about enough. The utopia (actually dystopia) world-building is complex and the themes really can make you think. I recommend the 1st season, and if you like, then to watch the rest.
Vivy: Flourite Eye's Song (13ep)
I watched this during the season it was airing, and felt that every 2 episodes deserved to be an anime finale. The action, music, art, everything was amazing. The protagonist Vivy is an singer AI in a world where AIs and humans coexist.
WHITE ALBUM 2 (13ep)
There's a white album 1 but it's a completely unrelated story. It's a music school, love triangle story. I think the music was really good. Not many people might like it, but love triangles are my guilty pleasure.
アクダマドライブ (12ep)
Akudama Drive
I watched this very recently and it was only 12 episodes but was still very satisfying. It's about a journey of a group of criminals. Every episode is named after a famous film and has homages of them within the story was really cool.
あそびあそばせ (12ep)
Asobi Asobase
The funniest anime I've ever watched, it's so chaotic. Comedy is subjective so maybe it's not the case for everyone, but I laugh so hard no matter how many times I watch it.
ヴァニタスの手記 (24ep)
Vanitas no Carte (The Case Study of Vanitas)
Everything is so beautiful about this anime. IMO it's like Violet Evergarden kind of pretty art. My eyes were glued to the scene every episode. I love the magic in the art and story and the fact that it's not a typical type of vampire story?
クズの本懐 (12ep)
Kuzu no Honkai (Scum's Wish)
It's a pretty messed up love story and I watched it mainly for the pretty art, but it was still good nonetheless.
サクラダリセット (24ep)
Sakurada Reset (Sagrada Reset)
It’s about a city where it is normal to have special psychic abilities. The main protagonists are initially both loners at school who are brought together by a mutual upperclassman and they start to work together using their abilities.
さらい屋五葉 (12ep)
Saraiya Goyou (House of Five Leaves)
The main character is a retired samurai (ronin), who gets involved with a group of people, set during the Edo period. It's a quiet, gloomy, and mysterious in the best ways.
シャドーハウス (13 ep - s1, 12ep - s2)
Shadow House
Recent anime (s2 in Summer 2022) so it's not minor, but I'm giving it a shoutout since I want s3 to be made. The story (originally manga) gets interesting from here! The manga is just as pretty btw. I love the concept/world and mystery.
ジョーカーゲーム (12ep)
Joker Game
OMG ONE OF MY FAV ANIMES. It's much more popular in Japan, but if you know then please let's talk about it!! It's about the spy era after the world war with each episode focusing on a different Japanese spy in a different country. It’s a spy anime that’s more realistic in the way that it’s not flashy.
ダーリン・イン・ザ・フランキス (24ep)
Darling in the FranXX
I think it was pretty well known when it was airing but idk about now. I still love this anime a lot, it has a bit of everything; romance, action, fantasy, robot, mystery, angst. It was a really satisfying watch for me.
ダンス・ダンス・ダンスール (11ep)
Dance Dance Danseur
I used to do ballet professionally so this anime was especially nice to watch. I think it's really unique that the main focus is boys' ballet. I really need to read the rest of the story in the manga.
