Stolas met Blitz literally the day of his betrothal to a girl he had never met and would never love. He might be oblivious to a lot of the privileges that his position affords him, but that doesn't mean that he doesn't have reason to be upset by the constraints he's under.

Blitz was the catalyst for Stolas's divorce, and for his realisation that he has the ability to take control of his own life, rather than just conforming to what's expected of him. He's his guiding light to a better future.

Blitz, on the other hand, has always viewed Hell's hierarchy as something that it's within his power to change. Even as a kid, he saw nothing wrong with the idea of his one day being Stolas's boss (which like… Stolas is out of a job now…) and as an adult he’s running his own business as an imp, he's adopted a hellhound and he's regularly fucking a Goetia.

His relationship with Stolas, however, has lead to him developing much healthier relationships with the people around him. He's made up with Fizz. He's become more open with Millie and Moxxie. He's even come to a kind of truce with Verosika.

The sex in exchange for the grimoire arrangement with Stolas was set up in ep 1, and has been the catalyst for much of Blitz's character development since then. Stolas is Blitz's heart, not just in the sense that they love each other, but in the sense that their relationship has helped Blitz open his heart more to other people.
