Raw Vegan Lu Rou Fan INGREDIENTS 1 jicama, cut into 1-inch pieces 1 cup activated walnuts 2 organic white button mushrooms, small dice 2 organic swiss brown mushrooms, small dice 1 organic portobello mushroom, small dice 2 shallots, sliced 1 tablespoon organic soy sauce from @tais_choice_kitchen, delivered by @everleafstoremalaysia 2 teaspoons shaoxing wine 1 tablespoon Masarang Arenga Forest Sugar (palm sugar) from @straitswholefoods ½ teaspoon five-spice powder To Garnish Coriander Red chilli METHOD 1️⃣Process jicama into rice-size pieces in a food processor. If preferred, place in nut milk bag and squeeze out liquid.Set aside. 2️⃣Process walnuts in a food processor until it turns into powder. Pour into mixing bowl. 3️⃣Add mushrooms, shallots, shaoxing wine, soy sauce, palm sugar and five-spice powder into mixing bowl with walnut powder and mix till combined. This is your raw vegan “braised pork”. 4️⃣Place jicama rice into a bowl and spoon the "braised pork" on top. 5️⃣Garnish with coriander and chilli. ------------ Lu Rou Fan or Braised Pork over Rice is a classic Taiwanese comfort food and it's also extremely popular over here in Malaysia.
