Which Color is Canon?
     I’m going to play a game; We take two or three canon versions of a manga thing’s color and we’re going to determine which is canon. One rule is that the black and white pages do not count as a canon version of the color of something unless the characters in that world perceive everything in black and white.
Round One: Manga Cover or Manga Page or Anime?

This one’s tough because the first two were drawn by Sui Ishida himself. Logically, the first one should be the most canon because traditionally the volume cover’s purpose is to confirm what color things are that the author wants you to know the color of. But profiles like the second one that confirm things like height and blood type are also known to confirm colors. While the anime one seems like the odd one out, it is the same hair color as all of her blood relatives, so it’s genetically the most logical.
Round Two: Light Novel or Manga?

In Tokyo Ghoul Volume 2, Rize is depicted as light purple-haired, but in Tokyo Ghoul: Past, her hair is described as black. In Tokyo Ghoul Volume 7, Kaneki’s nails are depicted as having turned to a black that is like a badly bruised nail. In Tokyo Ghoul: Void, they are described as having turned a dark red. At first, the light novels might be dismissed because they weren’t written by Sui Ishida, but he did have to illustrate the panels and consequentially could look over facts written in the novels.
Round Three: Manga, Official Colored Manga, or Anime?

Now enough picking on Tokyo Ghoul, because honestly the manga covers have been known to be lucid (especially for :re) and the franchise is overall best left in Black & White. No right now we’re gonna pick on One Piece. In the cover of volume 77, her hair color and dress (you can barely see the shoulder strap but it’s there) are depicted as the same color as in the anime. But in the Digitally Colored Manga officially made by Shueisha, her hair and dress is depicted in a completely different color. Now while both the manga covers and digitally colored manga are both equally official, the manga cover was officially done by Eiichiro Oda, so you might dismiss the Official colored manga. But like those Tokyo Ghoul light novels, they must be overlooked by the creator. Perhaps Eiichiro Oda changed his mind on what colors Jora is.
I guess the point of this was to either encourage debating the colors of things in manga or to exploit the pointlessness of doing such a thing.
