This is a clear bright medium lemon color wine with golden notes. Clean on the nose with medium+ aromatic intensity suggesting wet stones, lime, lychee, petrol, vanilla, orange, peach, and honeysuckle. Fully developed. Dry on the palate with high acidity, medium+ alcohol level, medium+ body and medium+ flavor intensity displaying wet stones, lime, lychee, petrol, vanilla, orange, peach, and honeysuckle. Medium finish with yellow fruit aftertaste. The high acidity is balanced by the generous fruit. Very good quality wine with great structure, oily texture, balance between acidity and fruit, high fruit concentration, and good length. Ideal to accompany all fish dishes in the company of loved ones.

This has been for a very long time my favorite Greek sweet wine! Vinsanto https://www.santorini.com/wineries/wines.htm from Santorini https://en.wikipedia.org/wiki/Santorini_(wine) This is how the producer describes it: “Vinsanto Mezzo is practically a Vinsanto of short ageing produced by grapes that sun dried for a shorter period and therefore the wine is lighter in the mouth and the nose. Vinsanto Mezzo is produced by 80% Assyrtiko, 10% Aidani, 10%, Athiri. Vinsanto mezzo is honey colored and has chocolate, smoke and dried fruits aromas. Vinification: Sun drying for 6-7 days. Ageing in French oak barrels for 5 years time. Alcohol: 14.0% vol. Total acidity: 6 g/l Sugar: 140 g/l Accompanies: It could be a good companion for desserts made of chocolate or served cold as an aperitif or a digestive drink. Ageing capacity: long ageing Serving suggestions: at 6-8 οC” I found a clear, bright deep amber color wine with salmon hues and long legs on the glass. Clean on the nose with medium+ intensity aromas suggesting of honey, red pear, chamomile, citrus peel, dried fig, elderflower, vanilla, petrol, almonds, nuts and caramel. Fully developed. Luscious on the palate with high acidity, medium- alcohol, medium body, medium+ intensity of flavours displaying apricot, pear, honey, honeysuckle, almonds, honey, elderflower, vanilla, citrus peel, butter, caramel, orange peel, and acacia. The high level of residual sugars, sweetness is balanced by the zesty acidity and a warm alcohol complements the expressive fruit. Long length. Outstanding quality wine with dense structure, balance and concentration, some complexity and medium length that is good to drink now, but can age another 10 years. Thank you Takis!

After undergoing the 12-hour skin contact process at around 10οC, the grape must is placed in small 1.000 litre INOX tanks and in new 225lt French and American oak barrels and acacia barrels. The temperature is then allowed to rise naturally, without any further involvement. From that point on, modern technology passes the baton to traditional winemaking. The wild yeast strains that prevail are the ones which eventually determine the wine’s character. In every tank and barrel something different occurs. After the end of the fermentation, we choose only those tanks and barrels which, according to our expertise, raise the Assyrtiko to new levels of enjoyment. The challenge in the production of ASSYRTIKO BY GAIA-WILD FERMENT is the fact that every year we discover a new dimension of this multifaceted variety. A special feature of most Assytiko from Santorini is that despite their white color they behave like red wines! Keep the wine for 2-3 years under proper cellar conditions and temperature 12o-14οC and it will undergo profound changes. Its mineral dimension will subside while the fruity and honey flavors will envelop its body.”. Dry on the palate with high acidity, medium+ alcohol level, medium+ body and medium+ flavor intensity displaying minerality, vanilla, orange peel, peach, nectarine, butter, lime, and honeysuckle. Creamy texture. Medium+ developing finish with yellow fruits and sweet spices aftertaste. The high acidity is balanced by the generous fruit and warm alcohol. Very good quality wine with balance between the zesty acidity and the generous fruit, high fruit concentration, and medium+ length. This wine could age at least another 5-10 years due to its high acidity and structure. Great to accompany oily fishes in the company of loved ones. Thank you!

This is a clear medium lemon green color wine with some tears on the glass. Clean on the nose with medium+ aromas suggesting of green apple, pear, melon, elderflower and pineapple. Fully developed. Dry on the palate with high acidity, medium+ alcohol, medium+ body and medium+ flavor intensity of green apple, pear, melon, lychee, elderflower and pineapple. Medium+ length with an aftertaste of tropical fruit and sweet spices. Very good quality for a well-rounded wine, typical of the variety with zesty acidity and complex fruit that can be enjoyed for another ten years and matches perfectly seafood dishes.

Here is how they describe the wine: “100% Assyrtiko, fermented in stainless steel tanks with the lees for a year.” This is a bright, clear medium intensity lemon-green color wine with green hues and some tears on the glass. Clean on the nose with medium intensity aromas suggesting of petrol, mushrooms, green apple, grass, lime, elderflower, honeysuckle, and pear. Fully developed. Dry on the palate with high acidity, medium alcohol, medium body and medium+ flavor intensity displaying green apple, grass, lime, elderflower, wet stones, honeysuckle, and pear. Medium+, evolving length with citrus aftertaste. Very good quality wine with medium+ length, high fruit intensity and concentration, and some flavor complexity. Good to drink now, could easily age 5 more years due to its high acidity, this is a typical Assyrtiko from Santorini – great to enjoy as a pairing to fish dishes in the company of good friends.

This is how the producer http://www.sigalas-wine.com/english/index.asp describes it: “Assyrtiko 100% Vinification techniques: Fermentation in French oak barrels and ageing of the wine with wine lees for approximately 6 months (method “sur lies”). Organoleptic characteristics: Bright gold and blonde color, with discreet presence of wood with hints of citrus fruits, full and round refreshing taste with balance, good acidity and long aftertaste with a characteristic minerality, typical of the variety, at its very best.” I found a clear bright medium lemon color wine. Clean on the nose with medium+ aromatic intensity suggesting of lime, vanilla, orange zest, wet stones, honeysuckle, yellow pear, and apple. Still developing. Dry on the palate with high acidity, medium+ alcohol, medium+ body and medium+ flavor intensity displaying lime, vanilla, orange zest, wet stones, honeysuckle, yellow pear, and apple. Balance between the well-defined fruit and the zesty acidity, the texture is creamy and the oak influence is noted, yet integrated. Medium+ length with sweet yellow fruit aftertaste. Very good quality wine with balance between the fruit and the acidity, high fruit concentration and complexity and medium+ length. Good to drink now, but could also last another 5-10 years due to its acidity and structure, this is a great match to most fish dishes. Ideal to enjoy in the company of good friends and loved ones.
