The  Common Man  state rest stop  and Visitor’s  Center.
This  state rest stop/welcome  center  was  extensively remodeled  a couple of years ago.  Facilities are on both sides of the highway   It  has a  gas station,  a  State Liquor Store,  two shops  (a  regular convenience store and a higher end NH theme gift shop)  and a grande piano.   Two  restaurants- a takeout  counter version of The  Common Man,  (which is on  the pricier  side  but  they offer  among other things,  poutine)   and  a 50s  themed  diner.   I’ve  tried both,   both have  good  food,  they’re clean,  with relatively friendly staff  and the  facility is  beautiful  and has  . both indoor and outdoor seating.   The Common Man counter is  tricksy,   don’t  think  you’re saving money by getting a drink from their freezer instead of ordering a hand poured one or fountain drink.  The drinks in bottles are often not  marked  with a price and tend to be overpriced.   I  bought one of those little  cans of  San Pellegrino sparkling water to go with my poutine.  They’re  usually 5  for $5  at a  place like  Shaw’s (  the  “expensive”  supermarket  according to everyone I know).    When I did the math on my bill,  I could see that  I’d  been charged $2.50-$3  for a  single  tiny can. 
The coffee  I got at the 50s  diner  was  so hot I got  a mild burn and couldn’t  drink it  until   a half hour  after  me  and my dad were back on the road.   This is partly my fault.  I  didn’t  have to order  coffee,   it was  self  serve,  so I could’ve  changed my mind and poured  something else.    And I already know a  lot of  places  serve coffee which is too hot to drink with your meal  so you should always get two drinks if you want hot coffee.    And YET.  
My only other complaint is  that  they have a strange idea  of  what a rest  stop’s  operating hours should be. I    was  driving back  from  Boston with @siriusstarjd,    we  needed to  stop  and  thought we  should  try the place out.  The  building on the right hand,  north bound side was  closed up except for the bathrooms  and the convenience store,  and this was only 9/10  at night. And  you’d  think  if  anything,  the one on the northbound  side would be  open later.   You’d  think  there’d  be more northern  traffic at night than Boston bound.   But in  any case,  that is  a  comparatively lonely stretch of road  and seeing a well lit  restaurant would be relief.  I’ve  always  thought it must be  surreal to work in the nearby toll  booth  overnight in winter.   Just  maybe two people in small lighted booths,  surrounded by  Arctic temperatures,  forest and the darkness  and every once in  awhile,  a stranger drives  by and almost  silently hands you a dollar.    It’s  closer to  various  hotels and businesses  than you’d  think,   but if you’re  an  exhausted  driver,   especially if  you’re not  from the area...
Alls  I’m saying is,  drivas  need  somewheres   like a  24hr  diner  to pull ova  at ‘n rest in when it’s  wicked  late at night.   But it’s  very NH  and in particular,  very Concord-area,  to not provide that.

I remember this article from Seventeen when I was 13, when bottled water was out of control. It was like we all discovered water for the first time. We could bring water with us anywhere we wanted. We could get water from fancy lands! Hose Water wasn’t the best tasting water on the block now. Celebrities carried around giant bottles of water like their babies.  There was even a bottled water bar on Rodeo Drive in Beverly Hills: 
Out on Rodeo Drive, where the high prices and desert temperatures can give anyone a man-size thirst, the hot new watering hole is the only bar in America where they water the drinks and get away with it.
The water bar is tucked away in the rear of lxi:z, pronounced ick-sees, a pricey clothing shop. (The name comes from a pronunciation of the Roman numeral twenty—that halcyon age, say the owners, when life is most effervescent.) On sale are 68 varieties of bottled water from 25 countries. At $1 to $2 a bottle, these still (and carbonated) waters run fairly cheap and are served strictly straight up. Ice cubes are a violation of international waters, says owner Steve Mills, because they “void out the subtleties.” 1
There was also a funny bit on Mystery Science Theater 3000 in the mid 90s when Dr. Forrester and his mom was trying to get Crow’s “Earth vs Soup” movie made, and every production meeting and test marketing thingy they went to, the bottles of water kept getting bigger and bigger, just like in Hollywood:

Evian 
Evian along with New York Seltzer and blue Nehi was my first beverage memories? I guess you could call it. I can’t remember my very very first memory of Evian, but one of them was from Troop Beverly Hills with Phyllis mourning over her divorce, watching her husband’s old commercials, laying in bed surrounded by giant Evian bottles:

I wanted this to be my life, Evian bottles surrounding my bed, watching old tapes. I was almost right. Minus the divorce. No man will marry me.

Perrier
Perrier skyrocketed in popularity in the late 1970s with an advertising campaign the claimed that it was the Earth’s first soft drink, and with Orson Welles’ voiceover in commercials.

To show that people would buy anything in the 80s, there was even a book about Perrier, which I had to inter-library loan from work. There was only three copies of it when I searched for it in OCLC services. (that’s a library reference for my catalogers out there) The book was so-so-so boring. So many off topic photographs of France, where the beverage comes from. There was only a few pages on the history of the beverage. I think I only saw two, three pictures of people with Perrier, including this bizarre marathon?  Where you had to balance the Perrier on a tray(pictured above)? :

Thetmen's winner of the Vancouver Sea Festival event was Los Angeles, Calif. resident Roger Bourbon, a gourmet chef who is listed in the Guiness Book of World Records as the 'the world's fastest running waiter.'
His time was 17:58.04.
Sponsored by Perrier, the rules say entrants must be employed by a restaurant or hotel and must run in formal waiter's attire while carrying an open bottle of Perrier on a tray. The runner is disqualified if the bottle falls to the ground.
Al Thompson of Vancouver finished second in 18:33.07 while the top women finisher, and seventh overall, was Julie Barrett of Vancouver in 21:51.06. 2
In 1990, Perrier was recalled in the United Sates due to trace amounts of benzine:
Told of Perrier's action, Sirio Maccioni, owner of Le Cirque restaurant in Manhattan, said: ''Oh, my God. Oh, my God.'' Then, after a pause, he added, ''Well, we have a lot of other water, the Saratoga, the San Pellegrino.''
Another restaurant owner, Andre Soltner, of Lutece in Manhattan, said, ''Oh, my God.'' Then he paused and added, ''Maybe we'll sell some wine now.'' Mr. Soltner said Perrier consumption was up twentyfold in his restaurant over the last five years.
At Washington Square Bar and Grill in San Francisco, a bartender, Alan Sharf, said he had not heard that Perrier was being recalled, but he did not think a recall would affect business there..
''It is pretty popular,'' said Mr. Sharf, ''but this being California, we have our local water, so it won't affect our business. It's pretty easily replaced.'' A bartender at Pierre au Tunnel, a French restaurant in midtown Manhattan, said: ''People think it's prestigious; it's an 'in' thing. We sell a lot of it.''
''To me I think it's the biggest hype since the Beatles,'' said the bartender, who would give only his first name, Alan.
A man who answered the telephone at the D'Agostino Supermarket at 74th Street and Broadway in Manhattan early this morning said that he had not heard of the recall and that Perrier was selling well. ''People buy it by the case,'' he said. 3

Dasani debuted in early 1999:
Coke announced Friday that it will sell bottled water in the United States, and Dasani is it.
"Suffice it to say, we think this is the right time for us to get into this market and that Dasani is the right brand," said Coke spokesman Scott Jacobson.
The water, to be sold in a light blue plastic bottle, is expected to be available nationwide and in Canada before this summer. The name, developed over months, doesn't derive from any specific origin but is meant to convey "a clean, fresh taste," Jacobson said.
An advertising campaign will back the rollout as Coke plunges into a hot market. Bottled water has outpaced the growth of soft drinks, particularly in convenience stores, where water sales have increased as much as 30 percent in recent years. 6

Naya pretty much died when Coke came out with Dasani. Coke stopped putting Naya in its coolers and it was gone. I only see it at Whole Foods now.

How Coke, Pepsi and Nestle plan to profit from your tap water
(Bloomberg) –Over the past four decades, consumers around the world have chugged trillions of bottles of water from brands such as Perrier, Evian, Dasani, and Aquafina. Few realize that most of what they pay for is plastic and time on a truck. Companies typically get the water for free or just a nominal fee, and bottling the stuff and getting it to consumers—as well as advertising it—accounts for the bulk of their costs.
Today, increasing concern about the carbon and plastic waste generated by that process is fueling a backlash that threatens the business. Across the industry, sales are softening and some towns are even banning plastic water bottles—spurring producers to respond with alternatives ranging from canned water to flavor pods for tap water to dispensers that sell sparkling and flavored mixes.
“The waters business has to cope with a number of sustainability issues that are becoming increasingly important,” Nestle SA Chief Executive Officer Mark Schneider told analysts in October.
Until the 1970s, bottled water was mostly sold in limited areas by European companies that tapped springs in the Alps. Then in 1973, DuPont patented PET plastic bottles, which were cheaper, lighter, and stronger than the glass that had been the industry standard. Combined with the rapidly globalizing economy, PET allowed water sellers to ship their wares much farther, opening up new markets. Bottlers sprung up in just about every country and the likes of Nestle, Coca-Cola, and PepsiCo added water to their portfolios, helping boost global revenue in the business to $130 billion last year, according to researcher Euromonitor.
These days, things aren’t quite so bubbly as consumers grow increasingly aware of their carbon footprint. Danone, the maker of Evian, on Oct. 18 reported its biggest decline in quarterly water revenue in a decade. That same day, Coca-Cola Co. said water sales were lower than it expected.
With shipments headed for a second annual decline, Nestle is reorganizing its bottled water business. Buffeted by lower-price rivals and high transport costs, Nestle raised prices—which sapped sales of its mass-market offerings such as Poland Spring and Pure Life as consumers shifted to cheaper generic brands. CEO Schneider has said the company wants to focus instead on higher-end products such as flavored and sparkling waters like its Perrier and San Pellegrino brands.
More than 80 U.S. colleges and a handful of municipalities have restricted sales of bottled water. In Concord, Mass., it’s illegal to sell still water in small plastic bottles, and San Francisco bars such sales on city property. In the U.K., a non-profit called City to Sea has introduced an app that points thirsty users to places where they can get free water—with a pledge from chains such as Starbucks and Costa to refill bottles at no cost.
“Producers face a real risk from the environmental movement, which has strong support among young people,” says Alain Oberhuber, an analyst at Mainfirst Bank, who predicts a sharp decline in sales of bottled water over the next two decades. “They know they have to do something.”
With bottled water now outselling carbonated soft drinks in the U.S., one part of that “something” is aluminum cans filled with water. Coke introduced cans of Dasani in the northeast U.S. this year and plans to try selling it in aluminum bottles in 2020. Pepsi has been selling canned Aquafina at restaurants and stadiums and is testing it in stores. And Danone is trying the idea with local brands in Britain, Denmark, and Poland.
The soda giants are also seeking to monetize consumption of tap water. Pepsi last year paid more than $3 billion for SodaStream, which produces systems for making fizzy water at home. And Pepsi has introduced a brand called Drinkfinity, which sells pods that attach to reusable bottles to infuse tap water with caffeine, vitamins, or electrolytes in a variety of flavors.
Coke is rolling out a water dispenser it calls Dasani PureFill, which allows consumers to refill their bottles with free filtered water and gives the option of adding flavors or carbonation for about $1 for a 20-ounce bottle. The company is planning to test the idea—and various prices—at roughly 100 locations such as offices, hospitals, and colleges.
Nestle next year plans to introduce a dispenser it calls Refill Plus, which filters tap water and can add flavors and varying levels of carbonation, and it’s working on a paper-based bottle that it says is fully biodegradable. Danone is exploring refill stations but for now is focusing on the home market with a new device that dispenses Evian delivered in balloon-like spheres that use less plastic than bottles.
Producers are counting on such initiatives to appeal to consumers who consider branded water healthier than tap. Howard Telford, head of soft drinks at Euromonitor, says such efforts will have only a marginal effect on the industry’s carbon footprint. But he says adding extras such as flavorings and fizz may help shore up profits for the likes of Coke, Nestle, and Pepsi.

Why would I choose San Pellegrino sparkling water as the product object of my work? As an advertising-based artwork, the selection of products is one of the most important aspects. I had tried some different selection of product when I came up with the concept. Among a large number of water products on the market, San Pellegrino is one of the expensive brands in sparkling water compared with other products of the same type. First of all, my concern was that I had been looking for a representative water product, especially as an advertising or artwork to be recognizable which is directly determined whether the art piece is going to be impressive for the first impression. San Pellegrino sparkling water is an ideal selection for a product in my work, it has a recognizable bottle design ( including bottle color), and the brand is well-known.

Design is the creation of a plan or convention for the construction of an object, system or measurable human interaction (as in architectural blueprints, engineering drawings, business processes, circuit diagrams, and sewing patterns).[1] Design has different connotations in different fields. In some cases, the direct construction of an object (as in pottery, engineering, management, coding, and graphic design) is also considered to use design thinking.

The existence of design is inseparably related to the commercial society (pls refer to Nigel Whiteley, Design for Society, Reaktion Books, 1997, P19-20, P32-39, P55, P107, P159). In terms of art and design, I personally think that art is brought into the design into design. In other words, art and design course is the integration of art and commercialization. No taboo to say that many artists despise design from the established patterns of thinking, in the eyesight of some self-righteous artists, they stubbornly insist that fine art can be called genuine art,  while art and design are not entitled to be called art. Ironically, I don't think that some artists considered themselves as artists of their era even in classical art. I don't think Michelangelo, Leonardo Da Vinci, Paul Cézanne,Caravaggio, Francisco Goya and so on they would realize that they were artists of that period. I habitually call them painters rather than artists, as I call designer, engineer, teacher, lecturer etc.
TO ART: People could comprehend the portrayal of a period, a race, and even a country through Art. If art is exclusive, then the value of the existence of the genre artists such as Andy Warhol or Piero Manzoni is extraordinary. Personally opinion, Andy Warhol’s existence to satirize those who pretend that the genuine art is noble, exclusive. I don’t think art commercialized is shameful, the most shameful thing is that some poseurs who pretentiously self-righteous thought that art is exclusive to upper class. If art is priceless, it is more significant to bring art to the public, to every place in life, and to accept the art of every nation, every human race, rather than narrowing art. Air, water, sky, these things are gainable in everywhere, but no one wants to buy it at a high-price, because these are the necessities of mankind, and are priceless.

Seltzer Water. You either love it or you hate it. But is it actually good for you? After all, it is water. It just happens to be fizzy. Day 2 of my business trip (and venture into the Nordic cuisine) was very satisfying. After spending the entire day in negotiations for a Danish tax audit, its satisfactory result made the visit to Geranium*** that night even better. Geranium opened in 2007 in Copenhagen’s Rosenborg Gardens but the original inception had been closed due to bankruptcy of one of its investors in 2009, but reopened in its current location at the Per Henrik Lings Allé in 2010.
The head-chef Rasmus Kofoed has a quite impressive resume as he is the only chef in the world that won bronze (2005), silver (2007) as well as gold (2011) on the prestigious Bocuse d’Or competition. The restaurant got its first Michelin star in 2012 and the second and third followed in quick succession: 2013 and 2016. On April 5, it was announced that Geranium holds the 19th spot on the 2017 San Pellegrino’s The World’s 50 Best Restaurants (up from 28th in 2016) and wine list – overseen by Wine Director Søren Lodet – has been awarded the best Champagne and Sparkling Wine list for 2016. Enough accolades, I knew for sure that I was in for a treat that night…
The restaurant is advertised as dining in the canopy overlooking the Fælledparken, which sounds a lot better than dining on the 8th floor of the FC København football stadium. However, as soon as you exit the elevator, you step into a totally different atmosphere. Greeted heartily, I was ushered into the light dining area with indeed beautiful views over the park. The sunset was already at 8pm, but it must be spectacular dining there in the height of summer.
I was seated at a large round table just in front of the open kitchen which had been remodeled last year so that the entire dining area has a view on the kitchen rather than only the first four tables (which are no longer there) that had a side view. Luckily there was also a Dutch guy in the kitchen, Ruud, who served and explained some of the dishes and helped impromptu on Dutch translations of some of the ingredients.
After choosing a glass of champagne from 3 options – I went for a 2009 Brut Nature Champagne, La Pulpe et Le Grain Champagne by Charles Dufour (DKK 200 / € 27) – I was handed a small letter with a welcoming message from Rasmus and Søren, explaining their view on how they cook and source products as well as the wine list. It was immense: close to 80 pages with incredible wines, which often could also be offered as vertical tastings.
About the menu choices On the back of the note was the set menu, “The Spring Universe”. In principle, there are 4 seasonal menus but besides the signature dishes there are occasional changes within the seasons too. The menu is DKK 2.000 / € 269 and consists of 5 appetizers and 11 dishes – 8 savory and 3 sweet – and concluded with sweets to go with coffee or tea. The regular wine pairing was DKK 1.400 / € 188 (for 7 wines) and a juice pairing will set you back DKK 700 / € 94. As I was feeling much better than the night before, fermented grape juice it was…
Besides the regular wine pairing by the glass, also 3 more exclusive options were available. A Wine Lovers Experience with 6 rare and special wines by the glass for DKK 3.300 / € 443. To top that, for larger groups, there were also two possibilities to go berserk with pairings of 6 entire bottles, but those wines are exceptional (top cuvées from Taittigher and Krug, a 1982 Château Mouton Rothschild, a 1986 Chateau d’Yquem, etc.) and therefore also come at an exceptional price level: DKK 30.000 / € 4.000 for the The Great Bottle Experience and a whopping DKK 75.000 / € 10.000 for the Extreme Bottle Experience.

This quote from Christian Moueix of Dominus Estate donned on the first page of the wine list. So, there I was, stitting on my own, flicking the 80 pages of the wine list… I proptly decided to splash out and go for the Wine Lovers Experience. 😇
The Appetizers
Lobster, Milk, Juice from Fermented Carrots and Sea Buckthorn
Jerusalem Artichoke Leaves, Hazelnut Oil and Rye Vinegar
Next appetizer was the ingenious “Tomato Water, Ham Fat and Aromatic Herbs”:

“Razor Clam” with Minerals and Sour Cream
The Savory dishes First up was the “Dillstone” Trout, Horseradish and Frozen Juice from Pickled Dill:
Salted Hake, Parsley Stems and Finnish Caviar in Buttermilk
These first two savory dishes were accompanied by a 2014 Pouilly Fumé Tryptique by A. Cailbourdin, a citrusy fresh and clean Sauvignon Blanc from the Loire Valley in France.
The next dish was Scallop, Filippa Apple, Scallop Roe and Browned Butter which was paired with an amazing 2014 Trout Gulch Vineyard Chardonnay by Ceritas Wines sourced from grapes from the Santa Cruz Mountains in California.
An entire bread course(!) followed the scallops: “Crispy Grains, Bread with Old Grains and Gluten Free Bread with Seeds”. No wine pairing, but my leftover Chardonnay was not bad at all.
“Pickled Carrots, Smoked Pork Fat and Melted Vesterhavs Cheese” which was paired with a vibrant yet dry 2009 Silberlack Riesling “Erstes Gewächs” by Schloss Johannisberger, Rheingau, Germany
Lightly Salted Turbot, Celeriac and Pickled Pine
Walnuts, Cep Mushroom Soup and Black Truffle
The turbot and mushroom dishes were paired with a glass of exquisite NV Grande Cuvée Champagne from Krug, a special blend of more than 120 wines from 10 or more different years.
“Grilled Lamb, Ramson and Sheep Cream with Smoked Lumpfish Roe” 
The lamb dish which was paired with a 2009 Les Forts de Latour by Château Latour, Pauillac, France. Although this Les Forts de Latour is “only” the second label of this famous winery, this excellent 2009 vintage was incredibly powerful, but paired very well with the grilled lamb as well as the roe.
Intermezzo At the end of the savory part of the Spring Universe menu, Ruud invited me for a quick tour of the restaurant and the different sections of the kitchen. Explaining along the way the rigor and methodological approach in the kitchen: from getting the fresh produce via different stations for cleaning, prepping, storing, portioning, all the way to the open kitchen that needs to finish and assemble the dishes during service. His favorite was the drying room for the charcuterie that they make themselves at Geranium. The smell escaping when he opened the door was very special, a huge wall of umami. It was chockful of experiments with various stages of drying and jars of pickled ingredients. The wine cellars sections were pretty impressive; big wine list = big storage. After having a look in the test kitchen and the private dining area, we made our way back to the dining area. The actual Bocuse d’Or trophies were on display at the back of the restaurant!
The sweet dishes After the tour, it was time for desserts, which were all paired by an Hungarian sweet wine: a 2005 furmint-based Tokaji Aszú 6 Puttonyos by Oremus.
A Bite of Beetroot, Blackcurrant, Yoghurt and Tagetes
Ice Cream from Beeswax and Pollen, Dried Apple, Black Honey and Elderberries
Caramel with Roasted Grains, Chamomile and Pear
To finish this amazing night, I ordered an espresso which was prepared at the table.
It apparently started with a joke from Rasmus as he bought this ROK espresso maker on eBay and tasked the Italian waiter to get the hang of it. Italians should know how to make a proper espresso, right? After 3 weeks of experimentation with process and quantities (and therefore getting a serious workout), he indeed succeeded to crank out very nice espressos.
As the pièce de résistance there were sweets served with the espresso:
Front to back: Caramel, Dried plum juice and aromatic seeds Pumpkin tree and cake with pumpkin seed oil Marshmallow with rose hip Chocolate with oats and sea buckthorn Green egg with pine
About the dinner As to be expected, the delicious food was stunningly presented, inventive yet harmonious and ever so subtle in flavors and textures. The wines themselves were absolutely special and worth the hefty price. The service was impeccable: incredibly attentive, knowledgable, inquiring beyond mere courtesy and willing to answer to all my questions on the wines and food. It was a pleasure to sit back and just watch everybody serve the different tables as a well-oiled machine.
In conclusion: simply the best dinner I have ever had. I must have been sitting there with an idiot grin from ear to ear the entire evening.
