It’s been a minute, so *warning* this is about to be a long one.
The girls came over on Valentines Day! We ordered Vital Roots from Uber Eats and watched How to Be Single #basic. Robyn is gluten-free and Tara is pretty much paleo, so it’s been fun trying new vegan/healthy/raw-type places with them. Vital Roots was bomb. I got the pad thai with tofu and the sauce that it came with gave it an extra boom of flavor. This was my first time having a meal with tofu...it wasn’t horrible.
On Wednesday I got the idea to spray paint my coffee table a rustic metallic gold, and on Thursday is was complete! Lesson learned: do not spray paint anything on your balcony (esp. if it leads into a contained courtyard). Shit will stink up everything and people probs won’t like that. Anywho, I don’t have an after picture yet because I’m too lazy to take one now, but here is the before.
I went for a run later and decided to try out a new park - City Park. I definitely ran the wrong loop. The laps were short, so there were more walkers than runners. I ended up doing maybe 5 laps? Not as fun or entertaining as 2 big ones, but the view was pretty. As far as parks go, this one ranks below Sloan Lake and Wash Park.
I was making dinner Thursday night when Tara and Robyn called me and said WE ARE GOING OUT. I guess the guy that Tara was supposed to go on a date with ghosted her the day of, so we had some drinking to do. Thursday night in Denver is pretty much ladies drink free night - who knew? Not me. We got a drink (and paid for it) then walked to a bar that allowed us to drink for free the rest of the night!
Sara and Sarah called me Friday afternoon saying there was some sort of mix-up and whatever they got me for my birthday was delivered to my leasing office that day instead of Tuesday (my birthday). I went to the leasing office ASAP and found DONUTS!!! Excuse my language, but donuts make me so fucking happy. I brought them back to my apartment and walked over to King Soopers to buy myself a treat, Kraft Mac N’ Cheese Deluxe. I saw it on my friend’s Snapchat and it looked all things creamy and amazing. As a mac n’ cheese fanatic, I knew I had to try it out for myself. Once the donuts showed up, it was a game changer. I was about to have a lovely night in by myself with my mac n’ cheese and donuts.
During this time, I got a text from Robyn saying we got a last minute invite to Aspen. I was dead from traveling the past few weekends and Aspen is quite the trek for one night. Our alternate idea was to go to Boulder on Saturday. We did a v baby hike and got lunch on Pearl St. at Shine, another healthy restaurant I had never tried before. We both got the Coconut Curry and absolutely loved it. It had sprouted quinoa, veggies, and house cultured sweet carrots..whatever that means. Robyn insisted we stop at Plato’s Closet before heading home. Apparently the Boulder location is amazing and I guess it makes sense since everyone that lives there is rich AF. Robyn wasn’t lying..name brand everything, including a solid amount of lululemon which I know everyone dies for.
We didn’t go out that night, so i decided I would go to church the next morning. I researched, found two popular options, and settled for the closer one. It was a little more traditional than I like and the singer was ...bad.... Maybe next time it’ll be better?
It was a gorgeous day so I went to Sloan Lake to run and literally ran into Tara. I don’t run with people, but she insisted we do one lap together before she continued on with her (casual) 13 miles. I’m not kidding, maybe 10 seconds into the run she asked if I had seen the shirtless red head. I looked around and proceeded to sprain my ankle. I’ve rolled my ankle plentyyyy of times and nothing came of it, so I was expecting to hop back up and keep going. Nope, I was just sitting on the ground in pain. I forced her to leave and continue on. Because I’m OCD and love to stick to a plan, I finished my remaining 3.5 miles for the day. I did them VERY slowly, but I could barely walk at the end. I practiced the RICE method (thanks, MC) then went to my Uncle’s house for dinner.
We had these plans for awhile, so I definitely couldn’t (and didn’t want to) bail. My Uncle’s wife, Mary, had a birthday activity planned for me. She bought 6 red wine glasses and we all sat around the table and decorated them with paint. It was super thoughtful of her to think of me and it was a fun activity to do with everyone :) I had ahi tuna for dinner - another first for me - and I think that was my favorite fish entree of all time.
Monday was beauuutifu, but I was depressed that I couldn’t run. Plan B? I had a little solo picnic at Sloan Lake. I brought some hummus, carrots, and my book and just relaxed.
Tuesday was my 27th birthday! I received a lot of love from friends and family, but the real kicker was... THE DONUTS WERE DELIVERED AGAIN. I freaked out for a minute and then started taking bites from the donuts that weren’t in the last batch - kill me, but I had to try them all?! Robyn, Tara, and I got sushi and sake bombs that night. They had the best spicy tuna I’ve ever tasted. It was actually spicy! The next night was Robyn’s birthday and we went to Work & Class for dinner. It definitely exceeded my expectations. They do family style portions and I literally liked everything we got, not to mention our waiter comped free shots. After that we went to Front Porch because they have an awesome Wednesday night deal.
Each bartender has a coin. You order your drink, they make your drink, they spin the coin, you call it, and if you get it right then your drink is 100% free. BUT not everyone knows that the bartender’s coin is heavier and favors one side. You have to pay attention to what people around you guess and base yourrr guess on that. Bartenders will secretly switch their coins because they know some people know the trick. Long story short, we played the game WELL.
We ended our birthday celebrations with brunch at Public School 303 on Saturday. I liked the restaurant’s atmosphere and they had giant Jenga and Connect 4. Kerry and I shared the edamame hummus toast and the fire roasted veggie hash & eggs. The hash’s veggies were still hard and not cooked down, but we demolished our toast. We bopped over to Wynkoop Brewery then Beer Hall for a quick sec. I feel like we always have to end our night at Beer Hall?
What a catch up. Oh, I’m still looking for a new role at work. That’s all I’ll say about that because I’m beyond annoyed with the whole situ.
