I think for the C-monsters in particular, it's a lot of manipulation of biomass and masses of infected tissue that have predispositions to certain structures. I really do think Carla is just... sentient Ada tissue in a skinsuit with maybe some respiratory organs thrown in there somewhere and some sorta human stuff going on.

It would explain why she just... melts and is able to be a mass of liquified matter with sentience.
