Cheesecake Ice Cream
Since it��s hot up here on the 3rd floor, we’ve stopped baking quite so much when my late buddy’s kiddo comes over for dinner and treats.  I found this recipe on the web, but something didn’t quite taste right when I made it the first time, so I thought a little while and tweaked a few things just a bit, and it came out damn near perfect.
And no, no churning, no rock salt, none of that: all you need is your freezer.  A KitchenAid stand mixer helps, as do metal mixing bowls you can put in the freezer to get frosty before you start this.
So, to start off, you’ll want to do a couple of prep things: 
First, you want to set two 8oz bricks of cream cheese out to come up to room temp.  You need it soft enough to blend with the liquid ingredients.  I usually take the cream cheese out the night before, and make the ice cream in the morning.
Second, put a large and a medium metal mixing bowl (or both your large and small KitchenAid stand mixer bowls), along with mixer “wire whip” beater, and the regular paddle beater, or your electric mixer’s beaters, in the freezer for at least four hours before you start. You also want to put a couple of quart sized plastic containers with lids in the freezer at this time as well, to put your finished ice cream in to harden.  The point is you want EVERYTHING to be close to freezing cold when you start this.  
About 15 minutes before you are ready to start mixing, put a ONE QUART container of HEAVY WHIPPING CREAM in the freezer with the rest of your tools.
Take the smaller bowl and the paddle attachment out of the freezer, and set the mixer up.  In the bowl, put your room-temp cream cheese, and take a silicone spatula and get every bit of ONE CAN of Sweetened Condensed Milk into the bowl with the cream cheese. 
Now:  Into the same bowl, put FOUR TEASPOONS of VANILLA EXTRACT, and TWO TABLESPOONS OF RASPBERRY BRANDY (or even vodka...it’s about texture...you don’t really even taste it, it acts as an emulsifier, if you will:  it actually makes the ice cream strangely even creamier. )
Now, Mix that on the slowest speed until it is a smooth-as-silk heavy liquid.
Now, take the large bowl and the wire whip out, and set up the mixer.
Pour THREE FULL CUPS of the HEAVY CREAM into the bowl, and begin whipping on slow speed.  As you begin to slowly increase the speed up to about half, pour in ONE CUP OF REGULAR GRANULATED SUGAR, IN 1/3-CUP BATCHES. until you are starting to get slight ‘thickness” to the cream. 
Increase mixer speed to FULL TILT BOOGIE and get that sweetened cream whipped up into some high, stiff peaks. (An aside:  Contrary to conventional wisdom, you do NOT need “cream of tartar” to make whipped cream at all...I’ve gotten whipped cream to an almost butter thick consistency just with the cream and the granulated sugar added in while it’s first whipping).
Now, take your first bowl with the cream cheese mixture and pour it into the fully-whipped cream, and then “FOLD” the two together until THOUROUGHLY AND COMPLETELY MIXED. 
GRAB your plastic quart containers and divide the silky goodness up evenly.  PUT A LAYER OF PLASTIC WRAP on top, before you put the container lids on.  You’ll probably end up with more than two quarts, so have another container handy to catch the last of the overflow and freeze it along with the rest.
PUT THEM IN THE FREEZER AND LEAVE THEM FOR AT LEAST EIGHT HOURS!  Leave ‘em overnight, if you can.
The next day, you will find you have real CHEESECAKE ICE CREAM that beats any store-bought product you ever had, and it rivals or surpasses any “hand dipped” product from a “marble slab” type store.

My mom got me a Kitchenaid stand mixer a couple of years ago, and I decided I didn't have counter space for it, so it mostly has sat in a box since then, with only a couple of uses.  When I’d think about using it I thought about getting it out of the heavy box, then putting it back, and rarely wanted to do that.  Its home has been my dining room table, which has been housing a lot of misc. stuff since the floors were redone, and those things have slowly been sorted through. Nearly done now.
For Christmas, my brother, SIL, my 3 nephews and 1 niece all drove down to my parents house, which is a 1 hour trip for me and about a 9 hour trip for them.  My SIL’s parents also flew in, and my parents and aunt (mom’s sister) were there as well.  
Lots of words about family and my house and stuff below.
My mom has had the same stand mixer for, not exaggerating here, 51 years, and it was a year or two old when she took it from her grandmother.  My dad has kept it in working condition the whole time.
This past week, one day while I was at work, my mom was trying to make something and the mixer sparked and smoked.  It looked bad for it to keep working.  So my SIL had the amazing idea to give my mom a new Kitchenaid mixer for Christmas.  She and my brother had a beautiful light blue, 5 quart Professional Plus mixer overnighted to the house.  I didn’t know it was coming, and Christmas Eve night a couple of hours after I got there, my dad walked outside and was like “There’s a package on the front porch, what is this?”  My mom walked outside and just started crying.  It was just the most perfect family moment.  My mom deserves the world, and getting this beautiful new stand mixer was the absolute perfect present.  We brought it inside and she sat on the floor and took it out of the box and marveled over it and cried.  It was beautiful.
My dad did manage to bring the old mixer back from the brink of death, and the old mixer still has one advantage over the new one -- size.  My parents are mostly full-time RVers.  They have the house as a home-base but they’re usually there 3 - 4 months out of the year and mostly live out of their RV.  The new mixer is much too big for the RV. Mom and I talked about trading mixers, mine is a few inches shorter than hers since hers is the crank-lift kind and mine is tilt-head, but she said she loves her new mixer too much to trade.  So for now, it’s for use at-home only, though she may need to change her mind eventually depending on if dad can keep the old mixer going.
So we baked even more than we planned to this last week so we could use the new mixer.  I was making baked French Toast Christmas morning (using the mixer to beat the eggs, worked great), and showed mom the list of accessories for the mixer, waiting for her to express interest in one of them.  She went “OOH!” at the Ice Cream maker.  In my family we generally just spoil the kids and the adults get each other white-elephant level gifts.  I got the guys knitted winter caps with an LED on the forehead and the ladies thick fleece socks, plus got my mom a glass nail file.  But mom chipped in a lot of money for my floors, so I thought, I wanted to get her something nicer.  So yesterday, the Ice Cream Maker arrived on her doorstep.  Still can’t use it on their next trip, but it’ll be nice for other times in the year.
So all of that inspired me to appreciate the KitchenAid mixer I have.  I mean, I literally wanted one for like most of my adult life, and would gaze at them at the store, had it on my amazon wishlist for years, and several times almost pulled the trigger but never... quite did.  It was always too expensive, I didn’t know if I’d use it enough, etc.  And I was so excited when I did get one, I think it was in 2015.  And yeah.. like I said... rarely used it.  
My kitchen is a galley, and it’s TINY and not well laid out.  I sincerely hate my kitchen and it is the main reason I daydream about buying a different house someday.  I have a square about 3 feet wide and long, if that, which is really usable counter space that isn’t taken up by the microwave, and the toaster and crockpot were on the wall-part there.  The crockpot found a new home in another cabinet (it’s easy to get out when I’ll need it) and the mixer took it’s place.
I’ve had a red velvet cake mix in my pantry for awhile.  Today, I make cake for the office to eat tomorrow.  Next Thursday, I’m going to make these orange creamsicle cookies, the recipe for which I had reblogged several years ago, and I came across it when I was doing my blog cleanup a few months ago, and have just had it open in a tab for literally like 3+ months. My friends are planning a weekend of gaming next weekend so hopefully I can have these ready as a treat to bring. :)
The other challenge I’ve had in baking is that my oven is very old, and very bad.  It’s one of those things I’ve been wanting to replace since I bought this house in 2003 and the very last appliance, including heater, AC, hot water heater, and even the sinks and toilets, that I have yet to actually replace.  I even got a new dishwasher this year... so the oven will have to wait.  In 2016, though, I got a microwave / convection oven for Christmas.  And honestly, since the day I set that on my counter, I have not turned on the oven.  I’ve used the stovetop plenty, but not the oven itself.  It was always impossible to get a consistent bake in there, no matter what I was cooking, meat or sweets.  Everything was always over or underdone.  Everything turns out great in the convection oven, and though you can’t make anything BIG in it, for cooking for one or two people it’s perfect.
So I hadn’t really baked in the convection oven, though I’d cooked in it plenty.  I realized I didn’t have small-sized baking pans, so I bought a set, and now I’m making two small-sized cakes.  Though I think it’s time to dig out my cake tins... they’ve gotta be in here somewhere.
And I’m also making icing instead of using storebought.  Storebought always had a chemically undertaste I hated.  Hopefully this turns out awesome and I’ll have something nice for my co-workers tomorrow, and can make delicious cookies for my friends next weekend.

Pizza was requested.
The air conditioning just barely kept up with the heat outside, but that only made for an easier proofing.  I carefully measured the yeast, sugar, salt, and oil, and made sure the water was at the exact right temperature (110 F) before mixing the ingredients together.  There is a very particular process in working in the flour, first by whisk, then handing things over to the Kitchenaid mixer.  You want to wake up the yeast, feed it, give it flour to work with, and work the flour to produce the gluten to hold everything together.  The mixer takes a whisk first, and as things built up, the dough hook.  Two cups of all-purpose flour, followed by equal parts all-purpose and wheat flour. All-purpose gives you gluten and structure; wheat gives you density and flavor.  When the Kitchenaid starts to struggle, that’s time to knead by hand. 
From then on, the work is totally by feel, flouring (all purpose) hands and workspace and testing by feel.  The dough should not be sticky.  It should spring back, at least halfway, when poked deeply.  It should feel heavy and dense. 
To be clear, you can do all of the above by hand, no problem.  It’s a lot of work, but totally doable, as I’ve done it.  As you have to clean much less stuff after the fact, you’re probably better off making a pizza dough by hand than with a mixer for small portion sizes.
With the dough kneaded, you should prepare a proofing bowl.  I recommend an 8-quart bowl but you do you. Slather that bowl with vegetable oil, drop the dough ball in, turn once, and cover with plastic wrap, with the wrap touching the dough ball.  The entire point is to ensure the dough ball is not exposed to air so it won’t dry out and form a nasty crust.  Put the bowl of dough in the oven, which you’ve put to the lowest temperature possible, and then turned off entirely.  If you can put your hand in the oven and it’s uncomfortably hot but not painfully hot, it’s good to go.  Put the bowl of dough in there, you’re now proofing.  When doubled in size, all you have to do is punch it down, cut into portions, and either bag and freeze or roll out into pizza crusts. Dust with all-purpose flour, but when the rounds are about ready to go, switch to cornmeal, as that gives a good bite to the dough and keeps it from sticking to the cooking surface.  Add sauce and toppings and bake at 425 F for 20-30 minutes.
I explain this to @starzki and her parents as we cook for them, to impress on them the extent to which we have home cooking on lock.  They are in the living room, paying little attention.  Star and I are in the kitchen, separated by a very thin wall.  She is the most beautiful person in the world.
“Proofing? You mean rising, right?” she chirps helpfully.
I am very close to her, and I pull her into a kiss.  It’s light, careful, the sort of kiss you share when your in-laws are ten feet away and watching TV and suddenly you’re in high school again and having a ten-second make-out session.  My hands slide down her shoulders, grip her hips.  My lips move down her jaw, soft kisses toward her ear.  I whisper with commanding force, through my teeth.
“Don’t contradict me.”
I think she laughs harder than I’ve ever made her laugh in the past year.  And I’m so relieved, because even as the words leave my mouth I realize it’s a pretty risky joke to make when we have guests who would easily hear her reaction. I think her parents assumed it was some silly in-joke they’d never understand, as we stumbled through the kitchen, giggling at each other madly for the next five minutes, and on and off for the rest of the night.
I do well with the pizza, mostly.  The dough is as good as I’ve ever made.  @starzki delivers her amazing sauce and she and her parents do well in preparing toppings. Our garden provides a plethora of spices.  Our dinner is, in general, simple and rustic.  
I’m about to turn in, and next to me is the most perfect woman in the world.   That’s pretty goddamn neato.

Apple MacBook Pro M1

This is the lowest price we’ve seen yet on Apple’s new MacBook Pro, which features the speedy new M1 chip. Only modestly heavier than the MacBook Air, the Pro gets better battery life, and has a brighter 13-inch screen.
Chromebooks are often underpowered, but not this 13-inch Lenovo, which packs an Intel Core i3 processor. It’d be nice if there was a little more RAM, but the i3 chip, combined with the 4 gigabytes of RAM, should be able to handle most of what the web throws at you.

The Swift 5 is a thin, light powerhouse of a laptop with long battery life. With 16 gigabytes of RAM, a 1-terabyte drive, and an Intel Core i7 processor, this machine won’t stumble editing video, and you still get plenty of ports for all your accessories, old and new. This is a great deal on one of our favorite laptops.
Samsung has come out with a newer version of the Galaxy Chromebook than this, but this is still one of the best we’ve used. The only problem is the battery life, which is pretty bad—you’ll rarely get more than 5.5 hours of juice before a trip to the wall.

The only downside to them might be that if you aren’t working out, they can be a little cumbersome to put on and take off, and their charging cradle is large. The Beats Flex have fluctuated between this price and $50, but if you want the functionality of more expensive Apple headphones but without spending over $100, these are your best bet. They made our list of the Best Cheap Headphones.

That’s because they’re affordable (especially on sale), offer up a comfy fit, are sweat-resistant so you can use them for your home workouts, and they manage to sound pretty great for the price. They hold six hours of battery life, but you can pop ’em in the case, which holds another 16 hours.
The 45H are our favorite headphones under $100 for good reason. They have 40 hours of battery life, a comfortable fit, and pretty decent sound. If you need a cheap pair to go with your new phone, check these out.

If you miss the boombox era but you’re in love with Spotify or Apple Music, this giant Bluetooth speaker from JBL might strike your fancy. The speaker made our list solely because it’s so unique. We’ve loved the basic Kindle for years, and now that it comes with a backlight, it’s the model we recommend in our Best Kindles guide. This is the best price we’ve seen in 2021, and it even comes with three months of Kindle Unlimited, which lets you read a huge number of ebooks for free. 
If you’re a bathtub or beach reader, the Kindle Paperwhite is worth the extra cash. It features an IPX8 rating, which means you can chuck it in 2 meters of water (not that you should). Otherwise, it’s very similar to the standard Kindle. Read the differences here. You can get the Paperwhite in 8 gigabytes or 32 for $15 more.
The latest Echo Buds (8/10, WIRED Recommends) are a great value at this Prime Day price. Sure, you don’t get the same noise-canceling quality as the most expensive buds from Sony and Apple, but these come with a battery case that wirelessly charges, Alexa onboard, solid sound, and a price less than half as high as those options. They’re a super deal, provided you don’t hate Amazon’s voice assistant.

Echo Show 10

The swiveling screen of the Echo Show 10 makes it awesome for those with kids who are constantly darting in and out of frame, but it does require a bit more counter space than the smaller Echo Shows. The size does have a benefit when it comes to sound, with the rounded base pumping out a pretty surprising soundstage.
The latest Echo Show looks just like its predecessor, but it features a much better camera and the ability to follow you as you wander around your kitchen or living room. We like this size more than the 5- or 10-inch options because it fits nearly anywhere, and the screen remains big enough that it’s easy to see on the countertop. Read our Echo guide to learn more.

The Fire TV Stick 4K is one of the best streaming devices for your TV. It’s not as great as Roku or Android TV, but Fire TV is still a solid ecosystem, and for $25 this is a great way to upgrade from your TV’s built-in interface. Unsurprisingly, the main menu is geared heavily toward Prime Video content.
This is our favorite Amazon Fire tablet and the best budget tablet. Amazon added more RAM and a brighter screen to the Fire HD 10 earlier this year, making it a much more capable tablet than the 8-inch version. The Plus model with an extra gig of RAM is also on sale for $110 ($70 off), along with a new productivity bundle for $180 ($120 off). The above deal includes a keyboard, along with software tailored to working, making the Fire HD 10 a more capable device—so long as you don’t require Google Sheets or Docs, which don’t work on it.
The Fire HD 8 Kids Edition is our favorite tablet for kids under the age of 7. It’s compact enough for younger hands and well built enough that you won’t worry too much about drops. You also get a no-questions-asked two-year replacement plan, which is helpful for clumsy kiddos.
I (Parker Hall) have been using the Echo Dot with clock as an alarm clock for more than a year now, and it’s become indispensable. It’s the best Alexa speaker for the bedroom. I like that it tells you when you have an alarm set and counts down visually from timers, and it doubles as the best sleep sounds machine I’ve found. It sounds pretty good, too, with enough volume to fill most small rooms with your favorite tunes.
There aren’t a ton of home theater deals this Prime Day, but the ones that exist are pretty impressive, including an OLED TV and one of our favorite soundbars.

This is our favorite mouse with a dock. Razer makes some of the best gaming peripherals, and this wireless mouse offers great features for the price. It has a narrow-body form factor and a really good optical sensor, and you won’t have to deal with annoying cables cluttering up your desk. It even has a compartment to stow the dongle in the mouse itself, which makes it great for people on the go.
The Pulsefire Surge has been one of our favorite gaming mice for a while now. It’s straightforward, unassuming, does everything you need a wired gaming mouse to do, and doesn’t bog you down with too many buttons. Plus, it has lights.The Pulsefire Core is also a great option for $14 less.
This bundle isn’t a huge discount, but it does give you a free 128-GB MicroSD card, which is an essential accessory for Switch. The Nintendo Switch has a lot of great games, and the Switch Lite is a cheaper way to play. The only downside is that it’s only made for handheld play. It cannot broadcast to a TV and has no built-in Joy-Cons for motion control. You’ll have to buy them separately if motion control is needed for a game.

This is our top gaming headset under $50, and at $35 it’s a steal. It works on any system and is comfier and sounds better than many expensive headsets. It does have a more plastic build than higher-end Arctis models, but it’s still comfy and works great.
JBL’s Quantum 800s have some of the best spatial surround sound you’ll find, which makes them great for those who spend a lot of time playing first-person shooters or other massive online games, where hearing someone behind you can mean the difference between life and death. The Quantum 800 features active noise cancelling, but the Quantum 600 is also pretty affordable, and the Quantum 300 is a solid alternative if you’re looking for a wired headset.
It’s not the fanciest headset out there, but it sure is reliable. Logitech’s G935 is soft and cushiony, and thanks to its internal surround system, it does a great job of bringing in-game environments to life. 
Snappy Cherry MX switches and USB pass-through to charge your devices make the Corsair K95 a solid pick for gamers. It’s the exact opposite of a TKL, or 60 percent, keyboard like the one below. If you want all the media buttons and all the bells and whistles that you can get on a modern keyboard, this is it.

This cute little keyboard is our pick for the best mini keyboard. It fits on desks of all shapes and sizes, yet it absolutely crushes most off-the-shelf boards. It has backlit keys and double-braided cables, and it leaves plenty of real estate for an oversize mousepad.
