The most frustrating part about Katara not fighting in LOK is that it could have been explained by 30 seconds of dialogue

Katara: I wish I could fight but my back just hasn't been the same since that epic fight when I was 54 so it's better if I stick to healing and help people that way

Literally any other character: oh yes, your famous epic fight against enemy number 38, the one where you almost died, everyone knows about that fight

Katara: anyway back to the plot

It was literally that simple
