A creamy and flavorful Instant Pot Broccoli & Cheese Soup, perfect for sharing at Dallas Socials. Comfort in a bowl!
Ingredients: 1 lb fresh broccoli, chopped. 1 onion, diced. 2 carrots, peeled and sliced. 3 cups chicken broth. 1 tsp garlic powder. 1/2 tsp dried thyme. 1/4 cup unsalted butter. 1/4 cup all-purpose flour. 2 cups milk. 2 cups shredded sharp cheddar cheese. Salt and pepper to taste.
Instructions: Combine broccoli, onion, carrots, chicken broth, garlic powder, and thyme in the Instant Pot. Set Instant Pot to Manual mode, high pressure, and cook for 5 minutes. Quick release pressure and open the Instant Pot. In a separate saucepan, melt butter over medium heat. Stir in flour to create a roux, cooking for 1-2 minutes. Gradually whisk in milk until smooth and thickened. Add the milk mixture to the Instant Pot and stir well. Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste. Serve hot and garnish with additional cheese if desired.
