Hi I can't tell if I'm misremembering but there was one episode where Jackal became an avatar of Anubis and just like, wiped out a sizeable chunk of the population of what I can only assume is Cairo. And after the episode I have no idea if it ever gets brought up again. Did any of his damage get reversed? Are all those people still dead? What happened there??? This has been weighing on me
You are exactly correct. While "Grief" is in my opinion, one of the best and most emotionally salient episodes of The World Tour arc, it definitely leaves us with some urgent and pressing questions.

"In Giza, Coyote 3.0 prepares a dais inside the temple of the ancient Sphinx's head."
"With no one left to confront him, the Avatar Jackal begins his purge. The Avatar Jackal's powers emit from the Sphinx's eyes, bringing death and destruction to a nearby town. Vehicles, plant life, animals . . . all fall victim to the Jackal Avatar's untethered whims."
Oh. Nearby town to the Pyramids of Giza, you say?

Yeah, that's 100% Cairo, the capital of Egypt, with an at-the-time estimated population of ~9,533,000 people.
From what we know in the episode, we are presented with a few options:
Option 1 (Good Ending): Emir-Anubis is able to restore the "stolen energies" to the people presumably affected in Cairo like he is able to with our main characters, heroes and otherwise.
Option 2 (Bad Ending): What Jackal-Anubis did to the people living in the affected area is considered a form of death and is therefore non-reversible ( "What is dead cannot be restored..." ) and is therefore permanently an unfathomable act of violence.
We don't see what happens to the people within the city limits, but we see what happens to the plants and the animals and even the vehicles and the result is more or less (for lack of a better reference point off-the-top of my head) like the Thanos snap in Avengers: Infinity War.
Did Jackal-Anubis annihilate the people like he did everything else? As stated, we only see Emir-Anubis restore the mains. So very unfortunately - likely either due to limited time, budget, or oversight - the fate of the people in the affected areas of Cairo is left ambiguous.
This is a world where famous tv reporters wake up after multiple nights of apparent amnesia, in concordance with millions of other people, and ask, "What happened?" and presumably don't get satisfying answers. People's loved ones go missing after this. Or the entire borough of Manhattan falls asleep on 7/9/1996, and presumably don't get satisfying answers.
These are all things which happen textually, for which the consequences are never really dug into. The narrative bandwidth of a 22-minute cartoon can only be so deep and so wide, but man. I wish we had at least an inkling of what the effect of these events have on the world of Gargoyles (because clearly, we think about them).
By the way, your ask made me curious if someone else had asked Greg about this topic on Station8 and found the following:
Make of the answer what we will. I think the answer is leaning towards "They died forever," but this would in a real-world context have far-reaching impacts on things like health, economy, global and sociopolitical events, and more.

You still weren’t sure how or why you grew to love the cybernetic man who accidentally bound you to him. You’ve saved his life multiple times, and though you weren’t as powerful as Anubis, you occasionally lent your powers over life and death to Jackal.
Unfortunately, that led to him making a name for himself as an avatar of death with your help. Something that led to the Manhattan Clan becoming an even bigger problem for the both of you.
Their leader and the three younger gargoyles were currently fighting Jackal, and they seemed to have a new trick up their sleeve. Their leader brandished a sword, which was odd considering his obvious preference to fight with his hands, but you could tell the sword crackled with some kind of mystical energy.
They probably thought it might give them an edge over Jackal’s new power.
You were afraid they might be right.
With the three younger gargoyles acting as a distraction, the leader was able to get in close with the sword, bringing it down towards Jackal.
You didn’t think, you only acted, stepping between Jackal and the gargoyle to shield him from the sword. You weren’t technically living, mortal weapons couldn’t hurt you.
You forgot about the mystical energy radiating from the weapon.
With a shout of pain, you collapsed at Jackal’s feet, your hand clutching at your shoulder, unused to pain. There was no blood due to your nature, but you felt something bleeding from the gaping wound, making you weak, and you feared what might happen to you should too much escape.
Jackal shouted your name before letting out a feral shout of rage. You looked up in time to see him strike out at the gargoyle leader, leaving him with nasty gashes from his metal claws, before turning around with a frantic look in his eyes.
“Y/N, come on, stay with me,” he said, gathering you up in his arms, deftly dodging and deflecting the blows from the gargoyles. The slash from Jackal had effectively taken the leader out of the fight for the moment, and the other three were too distracted and frantic to be effective.
The movement of Jackal picking you up sent another wave of pain through you and you hissed, shutting your eyes tightly against the pain. When you opened them again, Jackal was running with you in his arms.
“Not going to stay and finish the fight?” you asked. Everything you knew about your cybernetic man said he wouldn’t leave a fight unfinished. Especially as enraged as he seemed when you fell.
“Need to get you to safety first,” Jackal replied. He looked over his shoulder, some of the tension leaving his shoulders when he realized the gargoyles weren’t pursuing. He still didn’t slow down, however, continuing to run while carrying you.
“Aww, you do care,” you teased Jackal with his own words.
