At Lighter, we aren’t just fans and friends of Rouxbe, we are also students of their incredible courses! Kayli, Lighter’s Director of Nutrition and Healthcare adores Culinary Rx. And Micah, Lighter’s Chief Nutrition Officer is sharpening her skills in the Plant-Based Pro Course. Here are a few of Kayli and Micah’s favorite kitchen tips from our friends at Rouxbe:
Sauteing without oil: Heat a fry pan over medium to medium-high heat. You’ll know when the pan has reached the perfect temperature when a splash of water forms a mercury-like ball on the surface of the pan (so cool!). When the pan is at the right temperature, add your veggies and stir continuously.
Storing fresh herbs: Extend the life of fresh herbs by only washing immediately before using, storing in cool water like a bouquet of flowers (be sure the water level is lower than the leaves), and loosely covering with a plastic bag in the refrigerator. If you store herbs correctly, they can last up to a couple weeks!
Specific knife techniques: Mincing, chopping, julienne, brunoise, and dicing are all professional level knife cuts and techniques that any at-home chef can use to elevate the appearance and flavor of delicious, home-cooked meals. They’re also a lot of fun to practice. You’ll learn how to properly grip a knife and rhythmically and efficiently cut ingredients. There’s no ego boost in the kitchen quite like professional-grade food prep!
