1. Masala Dosa
These are made from fermented rice and black gram batter and are found in many varieties. The thin and crispy dosas are accompanied by Sambar, a spicy soup that can be dipped, and chutneys (sauces), including coconut, tomato, and mints. Traditionally, masala dosas are filled with fried onion and potato.
2. Uttapam
The same type of batter is used for dosa and idli, but onion, tomato, and cilantro (coriander) are added. They tend to be thicker than dosas and resemble savory pancakes.
3. Idli
Steamed black lentils and rice are used to make idlis. In some cases, semolina is used in place of rice and lentils. Coconut chutney and sambar are usually served with it.
4. Vada
A savory donut from India. It is available in a variety of flavors, both sweet and savory. Ground legumes are mixed with cumin, onion, curry leaves, and chilies or spices to make vada, a dish made from soaked lentils. The mixture is given the shape of a donut and deep-fried, leaving them crispy on the outside and soft and fluffy on the inside.
5. Upma
This thick porridge is made with roasted semolina or coarse rice flour and served as breakfast and dinner. Many variations are made by adding vegetables, spices, curry leaves, and ground nuts.
6. Appam
In Kerala, these pancakes are made from fermented rice batter and are bowl-shaped. Coconut milk or korma (curry), a vegetarian and yogurt dish, is served with this dish.
7. Rasam
This light spicy soup contains vegetables and spices, including tomatoes, tamarind, and black pepper, and is a common home remedy for sore throats and colds.
8. Sambar
It is usually made from lentils, tamarind, vegetables, often okra, radish, or eggplant, in a lentil, tamarind, and vegetable broth. With dosas, idlis, and rice, this is served as a condiment.
9. Payasam
It is a south Indian dessert made on various festivals and special occasions like Onam, a creamy rice and milk pudding with cashews and raisins. Featuring nuts and milk, it is a simple and delicious recipe.
10. Chicken Chettinad
A fiery chicken dish with onions, tomatoes, cinnamon sticks, cloves, ginger, garlic, cumin, fennel, peppercorns, cumin and cumin marinated in ginger, garlic, cumin, fennel, and fennel seeds. Cooked rice or chapati can be served with this dish. Tamil Nadu's Chettinad region is famous for this dish.
11. Curd rice
South Indian curd rice is served with a thali or meal as part of a South Indian meal. When curd is mixed with cooked rice, herbs, curry leaves and mustard seeds, it is tempered with yogurt and salt before being served.
12. Chicken Curry
An Andhra curry made with ginger, garlic, curry leaves, cinnamon, chicken masala, and cashew and poppy seed paste. Chicken is stewed with pepper powder, coconut paste, cloves, and lemon to create a fragrant, flavorful dish.
13. Kerala Prawn Curry

1 cup Bajra Flour1/2 cup Rice Flour ((optional))1/2 cup Jaggary1/2 cup Coconut Grated1/4 cup Water2 tbsp Ghee First take a bowl and mix both bajra,rice flour.Make a jaggery syrup by adding water to jaggery.Now pour this syrup over the flour mixture and mix well to form batter.Atlast add grated coconut to this batter to enrich the taste.Now heat the tawa and spread the dosa batter over it.Sprinkle ghee over the dosa to make it more yummy.Finally Bajra Sweet Dosa is ready to taste. Kerala Palappam
Appam is a type of pancake, originating from the Indian subcontinent, made with fermented rice batter and coconut milk. The origin of Appam is disputed and potential sources of origin might be Sri Lanka[1] or the southern tip of India.[2][3] It is a common food in Sri Lanka and the Indian states of Kerala and Tamil Nadu where it is eaten most frequently for breakfast or dinner.(Wikipedia)K. T. Achaya(Food Historian) and states that the appam is mentioned in the Tamil Perumpanuru. K. T. Achaya in the last published book of his lifetime states that Appam was well established in ancient Tamil country.K. T. Achaya (October 6, 1923 – September 5, 2002) was an eminent oil chemist, food scientist, nutritionist and food historian. He is the author of Indian Food: A Historical Companion, The Food Industries of British India, and A Historical Dictionary of Indian Food.(All books are available at the collection kept at The Pimenta . Appam has some similarity to Injera, ənǧära እንጀራ [ɨndʒəra];[3] is a sourdough-risen flatbread with a slightly spongy texture, originating from the Eritrea, Ethiopia and Somalia.[2][1] Traditionally made out of teff flour,[4] it is the national dish of Ethiopia, Eritrea and Somalia . It is central to the dining process in those cultures as bread is the most fundamental component of any Ethiopian, Eritrean and Somali meal. Wikipaedia . This I came across when we had an Eritrean guest who had Appam at our homestay. So we cannot rule out that Appam can also be a jewish tradition given to Kerala . When we go through the Jewish history in India , it is clearly understood there were jewish settlements spread over India even before BC 300 , So learning to make Appam at The Pimenta will be a learning and being part of the culinary history . Since my lineage is Syrian Christian from both sides of  my parents helped to have palettes well developed for its fine taste.
Here is the recipe
 Kerala Appam (Palappam)
Step 1(Custard)
½ cup coarse rice flour ( some people substitute this with Semolina)
3 cups water
Combine and stir on a low heat until it thickens to a loose porridge like consistency, leave it to cool completely
Step 2(Preparing the yeast)
1/2 tsp yeast
1 tbsp Sugar
1/4 cup water (lukewarm)
Combine the above and cover and let it ferment and double in size
Put yeast into the mix once it has cooled and then add 500g fine rice flour(slightly roasted) and combine and knead vigorously for 5/7 minutes with hands (bacteria form hands is needed) along with the Custard made in Step 1
Leave overnight or 12 hours.
Then add ½ tsp salt and 1 tbsp sugar and mix well.
Then slowly add ¾ cup thick coconut milk (made from ¾  cup of cream and ½ cup water) until you get a pourable consistency like double cream.
Taste and add more sugar if it’s too yeasty tasting, may need up to 1 tbsp extra.
Heat cast iron hopper pan and lid separately.
Brush pan with sesame oil or ghee (not coconut as it will stick)
And when just about to smoke (smoking pan is too hot) pour a ladle full of batter into the middle of the pan quickly then move in one circle to so that batter coats the surface of the pan. Do not overlap the batter as you want to cook it all evenly.
Let that cook for a moment then put the lid on the pan and leave until the edges are browning and the surface of the pancake is cooked and fluffy looking
Using a very thin spatula gently lift around the edges of Appam until it all lifts away.
It should be brown and crisp on the edges and the top and middle soft and fluffy.
 Eat with Vegetable  stew if you are a vegan , and also  a coconut chutney you can use and this is from the Nair Community of Kerala, Other options are Egg Masala or Roast , Mutton stew or Chicken Stew.
Notes
If you can get freshly collected toddy from coconut tree then that is the best and  you do not have to add yeast . We can also make a fermented add from coconut water or  can use the dough  made here for next batch of appam like a sour dough bread.
The best taste of Appam comes from Cast Iron Pans or Clay pots heated on top of  sand . Appams are made in different ways and various combinations in all over Kerala, now easy methods like non-stick pans, and techniques of adding cooked rice and semolina  and Instant mixes are also available. But nothing can beat the taste and goodness of Palappam made in the traditional way.
