So at some point I realized that Dipper and Mabel are/would be the same age in 2016 as the P5 cast generally are in 2016. So canon to the GF x Persona AU is the Mabel and Ann are internet friends/pen pals. They met on like some fashion blog or something (Mabel would have Tumblr do we think Ann would?) at some point and are close online friends.

At some point the P5 stuff happens. Dipper thinks the Phantom Thieves are using the Mindscape (as the GF!P cast knows it). Mabel thinks Akechi's pretty but is also on team Phantom Thieves. Ann accidentally says a bit too much at some point and Mabel is like "hey guys I think my pen pal is a Phantom Thief." She doesn't bring it up.
