This line of argument was never going to convince All Might. Even when All Might was a quirkless teenager, he still moved forward towards goals he logically knew were out of his reach. At this point, All Might believed he had nothing to live for but his role as the Symbol of Peace. Nighteye didn't offer him a new role, just a way he believed All Might could preserve his reputation. And All Might didn't care about preserving his own reputation other than for the sake of being society's pillar.
All Might values himself by how he serves others. He is like Izuku in this way. Sir Nighteye didn't give All Might a vision of how he could help others outside of his role as the symbol. Inko succeeded in motivating All Might to live where Sir Nighteye failed because she gave him a role to fulfill outside of martyrdom: raise Izuku.
"Find someone just like you...and pass it on." In a way, All Might did just that. It's just that the person All Might chose didn't have the traits that Sir Nighteye admired in All Might.
