NatureCoaster.com celebrated ten years of publishing with a party, weathered three hurricanes, reached its highest viewership, and sent its fearless leader on a transatlantic cruise in 2024. The Aerosmith song, “Livin’ on the Edge” plays in my head while I write this "farewell to 2024" message. While many in our readership area have lost everything and are rebuilding from the ground up, we continue to do what we do best – connect Florida’s Nature Coast through a consistent voice of "we are stronger together, let's get involved, let's get out, and let's help protect our nature from loss of habitat." While I am the only full-time member of the NatureCoaster team, we are blessed with some wonderful contributors, including Pat Manfredo who donates our Photo of the Day every day, Sally White, author and photographer, Captain William Toney, 5th generation Homosassa fishing guide, and Debbie Selsavage, dementia expert and trainer. Recently we have begun carrying stories from Toby Benoit, area historian and outdoorsman. NatureCoaster Partners, Supporters and Advertisers We have some amazing partners. The tourism development agencies for Citrus, Hernando, and Pasco Counties trust NatureCoaster to bring their messages to our hundreds of thousands of readers – especially you. So does the Tampa Bay History Center, Southwest Florida Water Management District, and the Florida Wildlife Corridor Foundation. Our local business partners are just as important, and I hope you are familiar with them and take time to support their shops, attractions, activities, and restaurants. We have local partners like Bomhoff Law, Cattle Dog Coffee Roasters, Chop Block Grill, Heartwood Preserve, The Red Brick Place, and The White Heron Tea & Gifts who have advertised with us for over five years. Each of these businesses went through COVID, hurricanes, and the cleanup, innumerable economic challenges, and more with us; together we continue to get stronger. These are businesses we trust. Kate Beckett: pov Once in the hospital my friend Lanie who is a medical examiner continued CPR on me till another Dr took over for her the rest of the way to the trauma/operating room i was rushed into. My boyfriend at the time Josh who is a cardiac surgeon  happened to be on shift and started the emergency heart surgery. I had a collapsed lung that required a chest tube. In emergency cases like mine they do a thoracotomy. It's a massive sideways incision on your side from your back to chest.
Kirk sanders: pov Wow that sounds like a huge incision.  
Castle: pov oh it is. Kate continues on with her story they also use the rib spreaders for this surgery. Kirk says it sounds painful. He asks if it's to spread your ribs so they can have more space to work. Kate replies with yes.
Kate: pov The bullet hit/grazed my inferior pulmonary vein and left ventricle causing a cardiac tampon my surgeon Dr Kovaks who replaced Josh had to cut some of my pericardium to let the blood out and repair my ventricle, I then went into vfib and they had to use the internal paddles twice, they tried to do manual heart massages but i  went into cardiac arrest again and flatlined. They eventually got me back, I spent a week in the CICU unconscious. 
Sophia: pov Kirk says that is one hell of a story, I can't believe you survived that. Kate says I can't even believe I survived, since my trauma was so severe. She also brings up the fact that she has PTSD and a weakened immune system. Our food finally arrives, and it looks amazing. KIrk is curious about some of her  past cases. 
Castle: pov I ordered the BBQ wings with French fries and Mac and cheese. Kate ordered the wings plain which they grilled for her with french fries and a salad. Sophia and Kirk ordered the spicy wings and Buffalo ones with fried onion rings, fried pickles and French fries. Kate mentions that Sophia and Kirk can drink all they want because she is the designated driver because she can't drink.
Kirk sanders: pov what was a weird case you hand, Kate says let's see I have had a few. I was handcuffed together with Castle in a basement with a tiger. I had a cryogenic case where the guy was murdered by his wife because he had a brain tumor and his friend then stole his head. I had a guy who was dressed as Santa who was murdered and fell out of a helicopter. I had the witness who turned out to be the murderer, the guy who worked in the subway that was murdered because he stumbled onto a kidnapping. The dirty bomb case. Me standing on a bomb. The psychic who predicted her own murder, the weird thing about that case was her daughter told me that. At an important date,  Alexander would save my life. Strange thing is it's Castle birth name, Richard Alexander Roger's. 
Castle: pov Kate goes into more details about these cases and some of her other ones. Sophia Is updating Kate on her life. Me and Kirk are talking about video games. He is telling me something about the Hudson River, you know Kate almost drowned in the Hudson River. We were working a case with the CIA and her car went into the Hudson and her seat belt was stuck and I had to shoot at it to free her. I had to do mouth to mouth until she started breathing, she then proceeded to throw up everywhere once she was checked out by the medics and given some  heart meds, Kate convinced them to not take her to the hospital which they recommend because of her medical history. She was stubborn back then still is. 
Kate: pov it's getting late and I have a murder to solve. The 4 of us part ways with plans to hang out again. I’m so tired once home I change into some pj's and brush my teeth before getting into bed, plug my phone in before i fall asleep. Castle is in his office getting some writing done. 
Castle: pov i save my document on the computer then grab my crutches and head to bed Kate is already asleep. In the morning I wake up early and get ready for the day. I quickly shower and start on breakfast which is oatmeal with fruit. I can hear Kate in the shower, after she is dressed and has taken her medication she starts eating her breakfast. Mother is taking me to physical therapy today since she is free and Kate has to work since she got a murder yesterday. I kiss her goodbye and hand Kate her decaf coffee before she heads off to work. I also made one for Nick, the officer she is working with today. 
Esposito: pov Kate has a meeting with the guy from the drug unit before her and Nick from the gang unit meet with this other guy. I'm in charge until she gets back. I’m waiting for Lanie to get back to me about the autopsy 
Officer Nicholas (Nick) Stephen McSwarek: pov Kate is waiting for me with 2 take out coffee cups in her hand. She says Castle made it, and one Is for you. Which one is it? She points it out saying hers is decaf. 
Captain Ellison: pov thank you both for meeting with me. I wanted to go over some things before your meeting. My guy was under for awhile. He was injured some time yesterday. From the info I have I  think your killer might have injured him. I don't have a lot of details to go on. 
Kate: pov we go over some details of the case. The Captain from the drug unit says be prepared  you might have to go undercover. Our meeting isn't until later, we decided to head back to my office to get some work done, until then. I think we should pack some bags just in case we have to go undercover. To be continued.  ……….

When it comes to backyard BBQ games, let’s face it: you’ve got to have horseshoes and cornhole. Consider creating a customized cornhole board and/or beanbags.
Let kids pan for “gold” by setting up a kiddie pool filled with sand. Bury coins in the sand, add water and provide metal pans for kids to search for their loot.
Set up a checkerboard station. You can use black and red painted stones and a flat stump painted with a checkerboard pattern or create an oversized checkerboard table using painted mason jar lids as checkers.

Make sure to prepare as much food in advance as you can. Marinate meats and vegetables, cut and refrigerate meats, fruits and vegetables, and chill beverages. Make sure to also offer vegan options like grilled or Buffalo cauliflower wings, vegetable skewers, mushroom BBQ ribs, Portobello mushroom fajitas, mushroom burgers, etc.
Create menu item signs with fun names that go with the BBQ theme. Some possibilities include “Grazing Board” (charcuterie), “Cowboy Caviar,” “Cheesy Ranch Potatoes.”
Make a “Watering Hole” beverage station and a “Soda Float Bar” for fun refreshment. (For less work during the party, ice cream can be pre-scooped into cupcake liners and kept frozen until ready to serve.) You could also create an old-fashioned lemonade stand with optional spiked varieties.

Happy belated birthday to me 👊🏻 • Reverse seared a 3+ lbs Snake River Farms Waygu Tomahawk Ribeye • Light sprayed with Duck Fat Spray then seasoned with Reload Rub Magnum Steak & Chop Blend, then inserted my Meater Plus Wireless Smart Meat Thermometer in the thickest part of the steak to precisely monitor the internal temperature. Super Smoked at 225° using Traeger Meat Church Pellet Blend on my Dolly, Traeger Ironwood 885, until IT reached 110°. Meanwhile had Lucille, my Traeger Pro 575, cranked up to 500° with my cast iron griddle inserted to heat up simultaneously. I had such a nice time with my family yesterday...
Well it started off a little rocky at first. We spontaneously decided to go take a drive to the river, until I heard a loud chirping coming from under the hood of my truck. Turns out there was a squirrel under my wiper fluid reservoir. It wasn't stuck in there, it just did not want to leave. I tried turning on the truck in hope that the noise would scare it, scoot it out with a broom, lure it out with an apple. Nothing. It refused to budge. We either had to call animal control or just hope it leaves, both required waiting for an undetermined amount of time, putting a damper on our outting.

Then my mom comes around the corner with a hose. Our eyes locked with an unspoken aknowledgment of what was about to unfold. Here was a woman who was not going to let something like this ruin her day. I stepped aside as she aimmed the hose directly at the squirrel's rear end. With it's bottom unceremoniously bidet'd, it shot out into the bushes and our day finally got started. Our first destination being the older part of the village made of fallen old barns, a gas station stuck in the 70s, and some homes that were being overtaken by nature for the past few decades. I've been here many times before, sometimes just to get out of the house for a bit.

My mom never urbexed but was curious, I explained it's appeal, it's importance in historical preservation, and therapeutic qualities for me. Also did a rundown on rules and safety. She did very well for her first time and followed the unspoken rule of only leaving with pictures. The old signs and glass soda bottles tempted her though. Lol I know the feeling, but leaving things as is preserves the vibe of the place for future explorers.
We headed toward the river, saw a few horses cooling off and thought it would be a good idea to do the same. We collected some wood for our bbq that night and headed to the general store to pick up some last minute food and a treat of cactus pear preserve empanadas. There was a jar of purple flavored butter there, but I put it back and regreted it, since it would've been great on top of the halo halo. My bro picked up some grass jelly and my mom found her favorite watermelon milk and cinnamon cheetos. They didn't have my favorite pear soda, but that was okay, I found out I had Cheerwine back home in the pantry.
For dinner we had grilled chicken yakisoba, grilled tilapia fish tacos with fresh salsa, hotdogs and for dessert, fruit salad halo halo topped with homemade flan, my mom's favorite. I opted for homemade since the store bought ones are more of a pudding than a dense custard and would melt too quickly. I used date syrup instead of complex syrup. We ate our fill and then kept the fire going til 11pm then it started getting windy. We headed inside to watch some movies and my mom knocked out. I could tell she had a great mother's day, a little drama, a bit of adventure, and a lot of good food.

"Let's have a barbecue!"
It all started with Iwafune's words.
"What are you saying suddenly, Iwa-san?"
Yukari asked, who has been doing a skin care treatment. Iwafune takes a sip of beer, wiping away the foam at the end of his mouth.
“Well, is it almost time for that? On the river bank, drink beer while grilling meat in the sun. Oh, I can't help but think!”
"Well, do you want to do that now? Is it going to move around a lot from now on?”
Sukuna says stunned, while playing tanmatsu, Iwafune looked at Sukuna and shook his head.
“I am just saying this now because it is going to move a lot. If you sell a fight to the blue boys, we're fine. After that, the barbecue will not be possible for a while.”
"But is it necessary to have a barbecue now?"
"Yes, because now is summer!"
Looking at Iwafune's emphasis on his fist, Sukuna looked at him and said, "How stupid."
While looking at the monitor, with a fishing game,
"Sure. Sometimes it's good to remember the old days and have a barbecue!”
"Eh?!"
"Did you do it in the past?"
At Yukari's question, Nagare answers.
"Yes. Before challenging the "Golden King" and being chased, he barbecued every year."
"When it comes to barbecue, it feels weird..."
Despite Sukuna's comment, Iwafune does a guts pose,
"Good! We must do that, let's get ready to go out!”
"Please wait, Iwa-san. There is a point in what Sukuna says. Unnecessary behaviors should be avoided just before big actions. Then we can't go out.”
Iwafune opened her mouth. He asks in a tone that he cannot believe.
"Hey, rarely you, you're not going to barbecue here, are you? In a space so underground that the sun cannot enter!”
"In part yes. I agree with the fact that barbecue in the basement is not fun. So, while staying underground, I discovered a way to feel better.”
Nagare's eyes sparkle. Looking at him, Iwafune was caught in a bad feeling.

In front of Iwafune, a refreshing landscape stretched alongside the river.
The blue sky, the bright sun and the crystal clear water surface. The grass under his feet stretches out and you can hear kids playing baseball from a distance. The breeze of early summer incense caresses his cheeks, and the fragrant smell of meat grease falls on the charcoal fire, tickling his nose.
Faced with such wonderful barbecue weather, Iwafune wailed loudly.
"Nagare! After all, this is different!”
"Why, Iwa-san? Is something wrong with your device?”
"It is not a bad thing! In a way, this is different!”
Nagare removed the virtual reality device that covers his eyes.
As the refreshing early summer landscape rose, there was a picturesque underground sanctuary. Stone pillars in a forest. Inorganic concrete floor. In addition to that, a barbecue is placed on the table, they also have a virtual reality device.
The scenery is virtual, but the members, the barbecue tables, the grilled meat and the beer are real. To give a more realistic feel, the blower output and the influence of the wind on the video are linked.
"Uuuuuuuh..."
Iwafune looked at the blower. He knows that the nature of the pleasant wind is created by a machine, but he is saddened by that.
Then, he takes the roast meat on a plate and brings it to Nagare.
"Nagare-chan, I baked stir-fried meat. Do you want to add lemon?”
"Please."
"So it's a yes, huh."
"Yes."
Nagare continues explaining while eating the roast meat.
"Vision represents 80% of the information received by humans. Although it is not completely real, it should have been reproduced with considerable precision.”
"Iwa-san, here are the roast ribs too. You do not eat?"
Sukuna says that using a virtual reality device, while gripping the meat with the tweezers. After thinking for a moment, Iwafune put on his own virtual reality device and screamed a bit.
"I will eat. Eat. I should just eat!”
"What? I'm not saying you force yourself to eat.”
"Cheers! I am sorry! After all, the barbecue goes with a beer!”
Overall, Iwafune screamed just to get rid of himself and ate the roast ribs with beer.

Luang Prabang, Laos - Part 1
Day 161 – Chiang Mai, Thailand to Luang Prabang, Laos
In the afternoon, I packed up my bag and hailed a Red Songthaew to Chiang Mai’s airport, boarding a small, propeller plane that would take me to Luang Prabang, Laos. The flight was short, about an hour and a half east, over the mountainous green highlands. The air outside was thick and hazy, caused by smoke from burning farmer’s fields. I learned that between February-April, this was fairly common for northern Thailand and Laos, as farmers burn their fields before reseeding the soil.
Arriving at the small, red roofed airport in Luang Prabang, I quickly passed through customs, paying for my visa on arrival with US dollars. It was an interesting visa experience for me, as the visa application fee varied depending on the home country of the traveller – with Canadians paying the highest amount of any listed country. After doing some research after the fact, it appears that this is based on the reciprocal cost a Laotian would need to pay to visit Canada. Furthermore, the visa costs are also apparently related to the amount of international aid provided to Laos, where citizens of countries which have provided a higher level of aid pay lower visa costs as a result. I had not given much thought to the reciprocity of international visas before my arrival in Laos, and this was an eye-opening, educational experience for me.
As I was negotiating for a ride into town in the arrivals hall, I had the very good fortune of meeting a fellow traveller from San Francisco, Tonya, who was also travelling by herself. We quickly found out that we were also staying at the same guesthouse, and became immediate friends! Sharing a ride into town on a multi-coloured tuk-tuk, we also realized that we had a very similar itinerary planned around Asia for the coming few months! After settling into our hostel for the evening, we headed out into the town as the sun was setting.

Luang Prabang
The small city of Luang Prabang is built on a peninsula at the confluence of the Mekong and Nam Khan Rivers, surrounded by lush green mountains. Now a UNESCO World Heritage site, Luang Prabang was once the capital of the historic Lane Xang Kingdom from the 14th to 16th centuries (also known as the “Kingdom of a Million Elephants”). Luang Prabang was also a historic trade centre in Southeast Asia, given its proximity to the meandering Mekong Rivier, which runs for almost 5,000 km through China, Myanmar, Laos, Thailand, Cambodia, and Vietnam.
Luang Prabang is also known for being the centre for Buddhism in Laos, and has many active temples, or “Vats” scattered throughout the town centre. The town was part of a French protectorate between 1893 and 1954, and the colonial influences of this era can still be seen in the architecture throughout the urban centre. Modern day Luang Prabang showcases traditional and French colonial styles throughout the town. Given the current UNESCO protections, the historic town centre was also remarkably free of the overdevelopment that can come with tourism. It was evident to me that the town had taken great care to protect their cultural heritage and architecture, with conservation and sustainability in mind.

Luang Prabang Night Market
As evening fell, Tonya and I wandered over a short distance to Sisavangvong Road, the main street through the peninsula, which was bustling with a vibrant night market.  The street had been closed off to vehicles and scooters, and there were hundreds of red and blue covered stalls and bamboo mats lining the street, selling countless beautiful and unique wares. There was an incredible collection of handicrafts, ceramics, silks, clothing, antiques and other souvenirs for sale. Many of the items sold were handmade by ethnic groups in the nearby hills, although some stalls also sold cheap, imported trinkets. Overall, the market had a relaxed atmosphere, with the vendors typically waiting for the visitor to inquire about the items rather than making sales pitches. One stall in particular caught my eye – where the trader was selling jewellery and cutlery which were apparently made by recycling fragments of bombs which had been dropped on Laos by the United States during the Vietnam War.
I had no previous knowledge of the bombing campaign in Laos during the war, and was stunned to learn that there were close to 600,000 bombing campaigns in Laos between 1964-1973, with the goal to cut off supply lines along the Ho Chi Minh Trail running into Vietnam. To this day, there are estimated to be almost 80 million unexploded bombs throughout the country, which continue to kill innocent men, women and children who happen to come upon them – near half a century later. It sickened me to think about all of the bombs lying dormant in fields and forests throughout this picturesque, welcoming country.
Tonya and I briefly stopped by a money exchange to switch out our US dollars to Laotian Kip. The local denominations were huge - with banknote amounts ranging between K500 to K100,000. For the remainder of my time in Laos, this made it quite challenging to monitor just how much money I had, as the many “zeros” on the banknotes automatically tricked my brain into thinking I had more money than I actually did!

We spent the remainder of the evening browsing the night market, sampling spicy Laotian dishes at the food stalls along the street, and enjoying passionfruit smoothies. It was a great first day in Laos, and I was lucky to have equally terrific company with Tonya!
Day 162 – Luang Prabang
After grabbing breakfast at our hostel and befriending a few other travellers, Tonya and I headed out to explore town, passing first through the morning farmer’s market just along the street outside. The vendors start setting up before sunrise, and it was already busy as we walked through around 8:30am. Local produce and the catch-of-the-day were set up for sale on mats on the ground. Ready-to-eat snacks were also for sale, such as charcoal-grilled honeycomb, baelfruit, mung-bean rice cakes, Mok Pa (a dish cooked with catfish caught in the Mekong), Lao Khao Soi, various meats cooked in banana leaf, Khao Jee Pate (a Laotian take on a Banh Mi Baguette sandwich) barbecued frog, water buffalo sausage, coconut milk pancakes, young coconuts, various noodle dishes, and even grilled rat – just to name a few snacks! We enjoyed stolling along the street, chatting with the friendly vendors, and taking in the vibrant colours, sights and smells of the market.
We continued onwards to the bank of the Mekong River, lined with palm and banana trees. Long, shallow river boats churned through the milky brown water below. Beyond the wide, lazy river, we could see lush green mountains in the distance. As we walked along the embankment, various tour operators approached us, trying to sell us tours in these slow riverboats. While we were certainly interested, Tonya and I had done our research on reputable tours, and planned to purchase our trip up the Mekong for the following day.

Turning inland, we began to meander along the quieter streets of town, lined with traditional Lao houses and guesthomes, many of which were constructed with bamboo materials during the colonial period. The UNESCO protections in the town continued to be evident, as there were no high-rise buildings or large tour buses anywhere in the town centre. Tuk-tuks and scooters were by far the most common means of transportation for locals and visitors. As we walked, we occasionally passed some active Buddhist monasteries, and while we could not enter, we could see the laundered orange robes of the monks hanging out to dry.

Wat Xieng Thong
We visited one of the best-known monasteries in the town centre, Wat Xieng Thong. Dating back to the 16th century, the temple complex housed a gilded ordination hall, with large, sweeping roofs, along with numerous stupas, chapels, a library, a drum tower, and a funeral carriage - historically used to carry the urns of Lao royalty. The architecture throughout Wat Xieng Thong was simply stunning, with every structure richly decorated with engravings, colourful mosaics, paintings, gilding and elaborate sculptures.

Ready for some shade and bite to eat, Tonya and I headed to the banks of the Nam Khan River, crossing a bamboo footbridge to the far bank. The bamboo bridges of Luang Prabang are built by local families on an annual basis, facilitating the journey to and from the old quarter of the city. Incredibly, though these bridges are solely built from bamboo and rope, they are very sturdy! As visitors to Luang Prabang, Tonya and I paid a small toll to cross the bridge, which contributes to the upkeep and annual bridge replacement.

On the far banks of the river, we arrived at Dyen Sabai  – a restaurant recommended by a friend of mine from Western, Brandon - who had briefly lived abroad in Laos, and had generously given me all sorts of local recommendations! He had highly recommended that I visit Dyen Sabai for their Lao Buffalo Fondue. The setting was peaceful – Tonya and I sat on low futons at a riverside table, surrounded by a beautiful bamboo garden. The buffalo fondue dish turned out to be cooked in a similar way to Chinese hot pot/Korean BBQ. The servers prepared a small charcoal fire in a metal container built into the table, before placing a specialized cover overtop. This set-up allowed Tonya and I to cook the meat ourselves on the grill and cook the vegetables in the broth. It was a delicious (and interactive!) meal, a recommendation well worth it.

Buffalo Fondue at Dyen Sabai
After lunch, we traversed back over the bridge, and walked along the banks of the Nam Khan river to Utopia, a outdoor bar and bucket-list destination for any backpacker to the area (I think I had about 10 different friends recommend I go!). Tonya and I spent several hours of the late afternoon enjoying several Beer Lao while sitting on the floor cushions, chatting with other travellers and taking in the incredible ambiance of this lively riverside bar.

As evening began to fall, we returned to the town centre to climb Mount Phousi for sunset. A small mountain located in the heart of the historic town centre, Phou-si literally translates to “sacred hill”, and stands approximately 100m tall. While it was a bit of a climb to the top, I was happy for the exercise! Along the trail as we ascended were many gilded statues of Buddha, with a small temple and golden stupa at the summit. Arriving just on time for sunset, we took in an incredible 360-degree view of Luang Prabang, the Mekong River shimmering in a deep shade of orange, reflecting the mesmerizing sky above. The distant mountains were blanketed in a smoky haze from the burning of brush and farmers fields.  While the hill was packed with tourists who had the same idea as us – it was still a wonderful way to end a day of exploring the city. Ready to tuck into some more of Laos’ famous street food, Tonya and I returned to the night market along Sisavangvong Road, taking in the brightly lit red and blue booths framed by tall palm trees and the opulent Royal Palace. After sharing and sampling countless delicious dishes, we headed back to our hostel, stopping at a booth on the main road to purchase tickets for our boat trip up the Mekong River the following day. I crashed almost immediately, as I was planning to wake up before dawn to view the morning Almsgiving ceremony, a daily tradition of local Buddhist monks.

My Top 17 Foods To Eat In Chengdu
Szechuan cold spicy noodles 四川涼面
These are hands down my favourite food to get in Chengdu. Sitting down in the heat outside with some cold spicy noodles (and a beer - of course) is the best way to spend a hot summers day here. It’s a great mixture of garlic, spring onions, ginger, and lots of chilli oil. I think I prefer cold noodles over hot noodles because it takes the heat down a level. Just writing about these noodles is making me want to go for a walk down to the noodle joint near our complex! An absolute staple of Szechuan cuisine - 10/10!

Steamed buns 包子
Steamed buns, or baozi, kept me alive when we first arrived in Chengdu and were running round trying to get all our documents sorted. They’re so convenient and you can really get them everywhere. I love the snacking culture here in China because it means you’re never very far away from some tasty street food. Steamed buns, sweet or savoury, never break the bank and you can pick one up normally for around 20p/30p. Steamed pork buns are my favourite bun but it’s always fun to try new ones - like the custard buns that you can poke with a chopstick and squeeze all the custard out… granted it can look a little disturbing but it’s still fun!

Dumplings in chilli sauce  红油抄手
Another classic here. I wasn’t a huge fan of these the first time I tried them but now I can’t get enough of them. I think I’ve really worked up my heat tolerance since moving here and now there’s nothing better to me than a big bowl of pork dumplings covered in spicy chilli sauce! It’s the intensely aromatic sauce they’re coated with, made with vinegar, garlic, and roasted chilli oil, that makes these dumplings so irresistible. You can also get dumplings in soup but I prefer the dry dumplings with chilli sauce.

There are lots of different types of dumplings in Sichuan and China as a whole, but Zhong dumplings are named for the family who first made these in Chengdu around 100 years ago - and now they’re recognised officially as one of Szechuan’s most famous street foods! They’re a simple dumpling with sweet soy sauce and chilli oil and they’re great for beginners. James and myself were actually lucky enough to get to go on a dumpling making course when we first arrived - it was really fun!

Roast pork 烤猪肉
This isn’t a Szechuan specialty but it’s still very much available here in Chengdu. My favourite way of eating pork here so far has been where the pork is served on a sizzling plate with a sweet sauce and peanuts. Normally the server will pour the hot sauce over the pork in front of you and it’s great to watch it sizzle. I love it when meals feel more interactive like that. It’s super sticky and sweet and is everything that roast pork should really be!

Hotpot 火锅
I think it would be a sin to come to Szechuan and not try hotpot at least once. Unfortunately, I’m not the biggest fan of hotpot with red oil but I do quite like the version of hotpot at a restaurant near us that uses what I think is some kind of chicken stock/soup to boil the ingredients. This restaurant is Hong Kong themed so it’s not typical Szechuan food. When the food is cooked you dip it in a sauce that you can put together yourself - this is chillis, garlic, soy sauce, and spring onions. There are a few different types of hotpot but some of the most popular here are chuan chuan 串串 (where you get your food on long sticks and place it in the pot) and huo guo 火锅 (where you place the food directly into the pot and scoop it out when it’s ready).

It’s a really fun way to eat though because at most restaurants you start by going around a fridge section of the restaurant with a basket and get to choose what you’d like to boil, then take it back to your table and cook it in the pot with your friends. Chinese style eating is quite different to the UK because typically you share food more instead of ordering just for yourself and I really prefer it like that - it just means you get to try more things and don’t have to worry about ordering something you won’t like! It’s a much more sociable way of dining and it’s just so much more fun.

Eating with friends
It’s always so much more fun to share your cooking with your friends - especially when you all come from different parts of the world. I really love the other teachers in my class and so I decided to cook them some ‘traditional British food’ because Tina, one of the teachers, really loves trying new food. It was also a bit of a thank you for how welcoming they’d been and how much easier the job is working in our team. Of course, being the welcoming people they always are, they came to the dinner with Szechuan food for us to try too! They made us kung pow chicken, fried chicken wings, and mapo dofu (silken tofu in a spicy sauce) and we shared with them a cottage pie, potato and broccoli soup, Hellmann’s egg mayonnaise sandwiches, biscuits with brie, and a steamed syrup pudding - the best of both worlds!

Dan dan mian 担担面
Dan dan mian (noodles) are so called because historically the walking street vendors who sold the dish would have a type of carrying pole (dan dan) that they carried over their shoulder with two baskets containing the noodles and sauce at either end. The name of these noodles is literally translated to noodles carried on a pole. They’re another Szechuan staple food and one of my favourite things to pick up when I’m walking around Chengdu. They're served hot with minced pork in a spicy sauce. They’re also served with preserved vegetables like zha cai 榨菜 (lower enlarged mustard stems) and ya cai 芽菜 (upper mustard stems). Living in Chengdu has meant that I’m a lot more into preserved vegetables than I was in the UK!

Xiaolongbao 小笼包
Now this is definitely not a Szechuan food but you can still get it in some places in Chengdu. It’s associated with Wuxi and Shanghai so I’m really excited to try some more when we move cities! It is a steamed dumpling with broth inside that's typically made from chicken or pork. You eat them using a soup spoon and a pair of chopsticks and bite into the dumpling on the spoon then suck out the soup. There’s a restaurant called ‘Modern China’ that we’ve been to a fair few times. It’s got a huge menu but recently I’ve been ordering just xiaolongbao and calling that my dinner. It’s been wonderful!

Roast Duck 北京烤鸭
Some of the best roast duck that we’ve had in China (so far!) was when we went to Hongyadong 洪崖洞 in Chongqing - which was once the site of the earliest and most developed pier in ancient China. It has since become a popular destination for visitors to experience Bayu culture and houses a large-scale stilt house complex built along the bank of the Jialing River. It was full of food vendors and we ended up going for a dinner roast duck which was skilfully carved in front of us. Again - I just love food where you get to see the chef or servers work with it! The restaurant we visited is called Quanjude and it’s a restaurant famous in China for its roast duck and longstanding culinary heritage since it was established in Beijing in 1864. There’s no way that we’re going to be able to live in Shanghai without at least one trip on the bullet train to Beijing now!

There’s also a restaurant called Bao Bao Ding just near our apartment and they sell really great roast pork and duck with rice. It’s not hard to find and I’ve never found it to be anything other than delicious! James also swears by the spicy duck neck snacks that you can get here but I think they’re still too spicy for me!

BBQ 烧烤
One of the first restaurants that James and I went to near our new apartment was a BBQ joint just across the street and I fell in love with this area! I’m a big kid and I just love getting involved in cooking the food myself so I really enjoy going for BBQ here. You’re supposed to dip the cooked meat in chopped peanuts and spices when you’ve cooked it on the grill and it’s so good. Unfortunately, I went to a different BBQ joint in the city and ended up getting food poisoning (I don’t think that I cooked the chicken enough) and so I’ve got off BBQ for the moment but I’m sure I’ll be able to get back on it!

Sweet water noodles 甜水面
I love these noodles so much - they’re always the star of the show. Most famously, you can get them from the Wenshu temple area where there are plenty of vendors selling this street-side snack. They’re quite different to the other noodles in this list because they’re made using a much thicker, square-cut noodle and are served in a sweet-and-spicy sauce. They're served cold and are very chewy with a rough surface to help them grab every bit of the sugary sauce that they're served in. I really love both the chunky look of these noodles and their mouthfeel and I think they’re always going to be something that distinctively reminds me of our wonderful times in Chengdu.

Pastries 蛋糕
Although I do miss a good Greggs sausage roll - Chinese pastries really are off the hook. We live by a bakery called Holiland which opened in the mid 90’s and became the biggest chain bakery in China. I think that’s fantastic news because we won’t have to go without our Holiland fix in Shanghai! Chinese pastries and breads are typically a lot sweeter and lighter than those in the UK and always seem to be much more creative in their presentation - maybe it’s just because they’re new to me but I really find them to be so beautiful. Some of my favourite pastries here are the hotdog pastries (literally just a hotdog in sweet bread) and the half baked cheese (which is sort of like a cheesecake with no base). It’s a very dangerous shop!

Bubble tea 珍珠奶茶
I really love just how readily available bubble tea is everywhere you go here. Every famous western fast food company that’s come over to China has their own bubble tea (McDonalds is the best one) and there are so many other chains (like HeyTeaGo and Fresh One More Time) which sell some really amazing teas. It’s really going to be one of the things I miss the most when we do eventually move back to the UK. One of the best teas you can get is a watermelon tea with a cheese foam topping. There’s a lot of cheese flavoured things here (like cheese flavoured yoghurt) which I’m really into. It’s not so much a hard cheddar cheese and is more like a cream cheese/mascarpone flavouring (if that). I’m really obsessed.

Vegetarian food at temples
I really like visiting temples. I think they’re such beautiful places that offer a calm that you don’t seem to find in many other places in the city. They also often have vegetarian restaurants nearby and the food is super tasty and affordable. When we went to visit the Leshan Buddha with my parents, we went to a restaurant near the temple there and had a lovely meal overlooking the square. I’m just really into these vegetarian restaurants and love what they’re about.

Cake at the kindergarten
We always bake a cake with the little ones whenever its one of their birthdays at the kindergarten. There’s a great mini kitchen downstairs and they’re so precious in the tiny chefs hats and aprons. The cake itself isn’t the most delicious cake I’ve ever had because we don’t put any sugar in it, so it’s more like a bread with fruit on top, but it’s so much fun to share it with so many excited four year olds. It’s great for them to get to bake the cake and then eat it together. I love birthdays at the kindergarten.

Street food 路边小吃
The best part of living in China is the abundance of street food. There have been so many new things I’ve had the opportunity to try from vendors in the road. It also keeps our cost of living down because they’re never that expensive and can be quite filling! I love just picking up some noodles when I’m out and about, or grabbing some Guo Kui 锅魁 (deep fried meat pie) which tastes a little bit like a sausage roll with lots of Szechuan spices.

Liang Gao (Glutinous Rice Curd) 凉糕
Liang gao is a sweet summer dessert which roughly means 'cold cake' (although it's more like cold tofu thing). It's served with sweet molasses and has a texture like jelly pudding but is just mildly sweet without the sauce. I first had it at the noodle shop near our first apartment and it was a great accompaniment to our noodle feast that we had!

Variety of crisps
China has some really out there crisp flavours. I’m not sure if they’re just novelty or if people really like them but I guess they wouldn’t sell if people weren’t buying them! The most interesting flavours I’ve seen have been lychee sparkling drink flavour and yoghurt drink flavour. Some of the flavours like spicy crab and hotpot flavour are really good but I think I’ll be avoiding the yoghurt for a while longer!

Sugar people 糖人
Sugar people is a form of traditional Chinese folk art using hot liquid sugar to create beautiful shapes and animals. This isn’t really something that is particularly delicious to eat - just because it’s made purely of hardened sugar but it really is beautiful. The reason I love it so much is because I think it’s such an amazing art form and it’s handmade and blown in front of you. I really enjoyed this pig candy because I got to blow it up myself (which a lot of help from the vendor). It’s kind of like glass blowing but you get to eat the finished product (highly recommend not doing this with actual glass).

The Tale of Two Cities according to Stephi and Heiko – Part 225
We continue with our little summer series and something people in the city like to do during summer time is just sitting by the river, having a beer and probably a barbeque.
Obviously, that’s not possible everywhere at the river.
As you can see in the first picture from Munich’s Isar, there is only a small insular in the front where you can have a BBQ and only when the river is on a lower level. Yet, you can still sit by the riverbank, enjoy the summer and have a beer. You can also cycle along the river as there are usually paths you can ride your bike one.
The second picture from Cologne’s Rhein shows another problem with having a BBQ by the river as during these hot summers we have been having for a couple of years now, the grass is super dry. You have to be very careful not to cause a fire that might cause an area fire by the riverbank. That’s why there are a lot of patrols as well as regulations. For example, you must have a BBQ grill that is at least 50 cm above the ground.
These are just two parts of the two rivers and there are other areas in which hanging our might be way more comfortable with more grassy areas as well as areas way better suited for a BBQ.
Praise to everyone who enjoys nature in the summer and afterwards tales care of their trash and puts it into the bin instead of just leaving it where you had a good time.
