As a possible couple or as a ship? As a couple I honestly don't think they would ever be a thing because even taking aside Rory as a significant friend towards Paris and as a former girlfriend of Jess's for whom he possibly still has love for, I just don't see them ever working out in the long-term. They're somewhat similar in how they behave in certain moments and the way that they deal with conflict doesn't work from both sides at all for them. Paris is someone who confronts everyone upfront and at times even lashes out in specific ways by trying to drive people further from her, even in her Yale years, whereas Jess mostly tried to avoid conflict when he was a teenager and I imagine he still doesn't like arguments as an adult, so he might not necessarily go away like he used to as a teenager, but he'd probably just respond to it in such a way that wouldn't mesh with Paris's approach at all. I think I noted on this before but the reason why both of them stick to Rory throughout their lives, even when they haven't seen her in a while, is because her approach serves as a buffer for both of their personalities. Rory has her own faults and bad moments but she tries to be a good friend and considerate towards both of them, and even in the revival, you see her trying to calm Paris down while she's having a breakdown in the bathroom and making sure she understands that she's wrong about considering herself a failure. It's why their dynamics with her work as well as they do, in spite of some popular opinions from viewers that either hate Rory or consider her boring. From my perspective you would have to have the kind of personality Rory has in order to handle characters like Jess or Paris, ones that are sometimes prone to going too far in their emotions or heads, and need someone to reel them back in.
As a ship I previously didn't consider anything about it or minded it, but as of now I've mostly grown unsure of anyone's intentions of shipping it mainly because I only ever see it as an "alternative" for Jess because people hate Rory now. In my opinion it's not only offensive towards Paris as a character to only consider her an option when the obvious person that Jess wants is someone that you hate (and for pretty banal reasons when the same people have no problem loving male characters that have killed innocent people with no hesitation....), but it's just misplaced energy that instead of them spending on how to evolve Jess and Paris as their own thing, they deliberately stick it next to Rory in order to further humiliate her as a character and use two characters that have such a long history with her in order to do that. And once they've succeeded in this, I don't see any further interest from other people in the ship anymore. So I feel like for a ship that is supposedly about Paris and Jess, it really becomes a dynamic they can use against Rory, because suddenly she deserves no understanding or support from either solely because she's pregnant out of a weblock.
