Il suo motto è “pour amour, pour passion, pour folie”. Antonio Raffaele nasce in Calabria, la passione viene da lì. Ma l’amore per la cucina esplode quando si fa adottare dal Salento, la sua “seconda terra”.

Unisce i colori e i sapori del Mediterraneo a un debole per la Francia che ha il privilegio di frequentare durante gli stage da Pierre Hermé. Folle perché la sua cucina è una fusione fra la genialità di Gianfranco Vissani (ha fatto stage anche da lui) e la creatività analitica di Hermé.

Antonio Raffaele

Antonio è pasticcere diplomato e sommelier di terzo livello. Al “Folie”, il ristorante a Lecce che divide con il socio Giovanni Fedele, oltre alla proposta delle vivande da far girare la testa per la qualità e la varietà degli ingredienti, salta all’occhio la carta degli champagne. Una delle più ricche di grandi marchi e piccole cantine da scoprire.

In verità il locale si sarebbe dovuto chiamare Vanille. La vaniglia è il suo ingrediente “feticcio” per eccellenza e la dolcezza è sempre presente nelle sue preparazioni: coglie la dolcezza nell’acidità degli ingredienti. Un esempio? Macarons alla nocciola Igp Piemonte, finocchietto selvatico calabrese, tartufo bianco e chantilly al tartufo bianco.

Un’altra “fissa” sono i macarons. Dai salati ai dolci, dal foie gras alla ricotta, piatti rotondi e curati come un grande dessert. Colori tenui che scoppiettano una volta aperti. Folie ha solo 24 posti. Un ristorante raccolto e soffuso dove Antonio e Giovanni “cullano” i loro clienti nell’eleganza in attesa del momento più bello, quello del dolce.
