Banh mi - if you press it you lose the light fluffyness of the bread and its crispy shell. Not better if pressed.

ice cream sandwiches (with actual bread) - compacting the bread means it can't absorb the ice cream as it melts. You don't have the textural difference between the ice cream and the fluffy bread, and melted ice cream will just get all over your hand. Worse eating experience, not better if pressed.

Fruit sandos?? - you lose a key part of the fruit sando experience which is the presentation and the cream would just spill out everywhere. Not better if pressed.

Open-faced sandwiches - again, presentation is a key part of eating an open-faced sandwich. Pressing it makes it look worse and not to mention needing to clean the pressing apparatus.
