willing to experiment w eggplant after a lifetime of trying mediocre eggplant dishes
#I think eggplant is in the same category as summer squash for me where#Like if it's done bad it's just this awful fibrous-mushy texture and slightly slimy feeling#But I've had good summer squash in the past few years#and I've seen some eggplant prepared w/ similar philosophies as said summer squash dishes#So I might try those ones first#Or in the opposite direction where it goes past the fiber-mush threshold#To full sauce/mash/paste territory
