Healthy Crock Pot Jalapeno, Chicken and Sweet Corn Soup is a flavorful and satisfying keto-friendly dish that's perfect for busy weeknights. Tender chicken, sweet corn, and spicy jalapenos are slow-cooked with aromatic onions, garlic, and spices until tender and delicious. This soup is easy to make and packed with flavor, making it a family favorite!
Ingredients: 1 lb boneless, skinless chicken breasts. 4 cups chicken broth. 2 cups frozen sweet corn kernels. 2 jalapenos, seeded and diced. 1 onion, diced. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper, to taste. Fresh cilantro, for garnish optional.
Instructions: Place the chicken breasts in the crockpot. Add the chicken broth, sweet corn, diced jalapenos, diced onion, minced garlic, ground cumin, paprika, salt, and pepper to the crockpot. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and tender. Remove the chicken from the crockpot and shred using two forks. Return the shredded chicken to the crockpot and stir to combine. Taste and adjust seasoning, if necessary. Serve hot, garnished with fresh cilantro, if desired. Enjoy this delicious and healthy soup!
