I know the Sonic manga is supposed to based on Classic Sonic’s world, but I’m just curious about if the rest of characters. What would eye colors would they have if they modern version of them selves? Because I know Amy and Sonic’s eyes are green.

If the manga characters were a part of the modern world, their eyes would most likely look something like this (Paulie having the sameish color eyes if Paulie was Sonic's father). I already made something like this months ago with a Modern Manga AU, but it was only with Nicky, Anita, and Little John with colored in modern designs. Here's LJ at the bottom here.
