hatch chile time! got 4lbs big jim and 4lbs sandia. the big jim chiles actually arrived last week and have been roasted, peeled, de-seeded, chopped, and frozen. sandia arrived today, but I'm not willing to process them without gloves (they are hotter than most jalapeños and I don't want to risk jalapeño hands again). these will be used for pozole verde, salsa, tamales, corn bread, tacos, chayote soup, etc. I also use them instead of poblanos in a lot of dishes.
#hatch chiles#new mexican cuisine#human crap sack tire fire#my whole house smelled like roasting chiles all last weekend#this weekend it will be the same except spicier :)#my sister got jalapeno hands from the big jim chiles. weak.#food cw

Albuquerque and specifically the Jemez mountains (the hot springs, the soda springs, the cliff dwellings...that was a hella fun vacation) but also hatch chiles and blue corn
(I've been to Albuquerque exactly twice but it was a blast both times and I LOVE hatch chiles)
From the USA, now live in Australia
Reblog for a bigger sample size.
