GIN E BBQ, BINOMIO VINCENTE CON IL CARDAMOMO VERDE
L’abbinata barbecue e gin non è il primo pensiero che viene agli amanti della griglia, eppure funziona, soprattutto se all’interno del gin spiccano profumi di limone e arancia con cui rifarsi la bocca dopo un bel pranzo a base di carne. A spiegare meglio come funziona questa accoppiata è il fondatore di BBQ King (bbqking.it) e Duroc Gin, Riccardo D’Amaro, ospite della prima edizione di BBQ Expo. «Duroc Gin nasce nel 2020 con l’obiettivo di creare l’unico London Dry Affumicato da abbinare al mondo del barbecue, un segmento in cui non c’era nessuno. Abbiamo creato un London Dry da 43° che creasse un collegamento tra questi due mondi, e per farlo ci siamo affidati a un ingrediente: il cardamomo verde che affumichiamo a legna. Ma anche la presenza di limone e arancia riesce a dare una parte agrumata che aiuta a pulire la bocca dal pulled pork». Niente birra, dunque, per un barbecue diverso dal solito, un’idea può essere quella di abbinare un gin un po’ secco, magari aromatizzato con rosmarino e salvia, accompagnato con una costina glassata o con un’aletta di pollo croccante. Per rendere il tutto ancora più gustoso, non serve solo scegliere un buon gin, ma bisogna scegliere la giusta rub, quel mix di spezie e aromi utilizzato soprattutto nella cucina americana per insaporire la carne prima della cottura. «Noi abbiamo due grandi famiglie di rub» spiega Andrea Centanni, titolare di Grigliare Duro (grigliareduro.com). «Le prime sono quelle all’americana, caratterizzate da un’alta percentuale zuccherina, fondamentale per le cotture lunghe e affumicate, dove lo zucchero caramellato crea la crosticina esterna dando sapore e profumo. Un’alternativa più mediterranea è composta da diversi tipi di spezie come l’alloro, il rosmarino, la maggiorana o il timo, in alcune è presente anche la scorza di limone o pomodorini secchi tritati, per un mix perfetta tra cottura in stile americano ma con i nostri sapori italiani».
