"But we'll die" isn't a plea from Eurylochus. He already knows they are going to die ("Ody, we're never gonna get to make it home - you know it's true"). Killing the cow was him trying to provide a more comfortable death, a hope they at least survive the next crisis. (Unfortunately "the next crisis" is Zeus.)
Eurylochus isn't stupid. He is forcing Odysseus to say the quiet part out loud.
