which kitchen appliances have you been the most satisfied with?
[I rent, so I’m not interested in bigger appliances such as fridge/freezer/stovetop/oven. Will have a look at what’s best on the market when I buy a house, not now]
Strictly in terms of appliances, I’m very happy with the pasta machine I bought (Marcato Atlas 150) – it’s super easy to use. I can’t find fresh pasta in Norway so this is really great (if I was still in Italy, I don’t think I would have bought this). I also got many different attachments, the most important one (besides the one for tagliatelle) being the ravioli one (because again because I live in Norway and all ravioli options are horrible and cost a lot; considering I got the machine used, I can basically repay the cost by making 6 batches of ravioli).
Rice cooker and microwave are also super useful, but I got mine because of the ridiculous price (less than 5€) and not because I wanted a very specific model or brand. They work fine, I paid close to nothing, so overall I’m happy.
Cookware is where I have been so so glad about everything I’ve purchased. Specifically: this 20cm non-stick pan with a diamond-based coating that is non-toxic (such convenient size), the fig-coloured dutch oven from le Creuset (my go-to for broths & tomato sauce), THIS SKILLET FROM DEMEYERE (amazing for cooking and so easy to clean). I’m also super happy about the Le Creuset minicocottes I have, which I use sometimes in the oven (e.g. garlic confit) and very often for holding sauces when serving [though I do want to switch one colour for another].
Also not technically an appliance, but I got around a month ago a baking sheet with a rack on top from NordicWare & it’s 10/10. Rack has several uses (dry during, resting steaks, etc.) and it does help baking things more evenly. And again, stainless steel is so so easy to clean and super durable.

Demeyere Atlantis Proline cookware. Omfg.
Yes: it is expensive. The largest of the three frying pans (12.6") has slightly more cooking area than a large Lodge cast iron frying pan and holds roughly 90% as much heat as a 4 mm-thick cast iron skillet of equal size (and spreads heat much more evenly than cast iron). The Proline is 4.8 mm thick, of which 3.7 mm is aluminum.
The Proline pans weigh less but hold nearby equal heat capacity. While aluminum isn’t dense, it holds twice as much heat as cast iron, pound for pound. (Some people mistakenly believe that aluminum doesn’t hold heat well, but that’s probably due to bad experiences with thin aluminum. Sufficiently thick aluminum can hold and evenly distribute a very large amount of heat.)
This line of cookware is so ridiculously thermally conductive that i can't force it to have a hot spot or heat unevenly. It beats out most copper cookware.

-Cookware
The 8-inch Sauté Skillet by USA Pan (~$80) (It's a frying pan that's deeper than usual) *(edit)
So far I love this thing. I'm not sure they're still making it but it's still available, so I wanted to share. It's everything I want a small pan to be. It's short and wide enough to be an effective frying pan, but deep enough to work as a small saucepan (1.9qt capacity), and the rounded sides are both great for tossing and allow it to function as a saucier. It's plenty thick, the aluminum core being about 2mm (the same as my Demeyere 5-ply). It has a flared rim for clean pouring, the rivets are relatively flat and easily to clean, and the handle is a bit meh.
Found this awhile ago but only got it recently. I was looking for a 2qt 8 inch saucier, mainly so I could use the same lid. Like, frying pans come in common sizes, in the US it's 8", 10", and 12". But saucepans are different diameters entirely, for instance the 2qt saucepan I have is 7 1/4". And I'm pretty sure they're not consistent, but I can't tell because they're sold by volume instead. You can almost just use an 8 inch frying pan for this sort of stuff, but the walls are too short. So like, heating up a can of soup, you have to be real careful not to slosh it in a fry pan.
But yeah, they used to make larger sized and those have disappeared. So it might be going away soon, I'd recommend jumping on it now if it's something you'd like.
- Aside, I'm feeling insecure about things disappearing. For instance, the 'OXO 3.5qt Covered Saucepan'. (It's the one Kenji has.) It has a great shape that's very uncommon, and it's (mostly) not available anymore. I mean, it's not just that it's a big saucier, it also has flared sides that make accessing the stuff inside easier. Like, I don't just want a saucier, I want the bastard child of a saucepan and a wok. Glen from 'Glen and Friends Cooking' has something similar, made by Calphalon. That also has been discontinued.
And I'm not sure why I should care, and the criteria thereof. I could just boil all my food in a stainless yukihira pot and be done with it. What's the point of convenience, or flavor? Like, today I made some spicy oil. We had a bunch of jalapeños that were getting old, and I had a tub of grease I was frying with the other day, so yeah. But why? It seemed a nice thing at the time. Now it seems pointless.
I'm still really not okay I guess. Is the meaning of life simply to ponder the cube? Does the guy who's convinced himself that water tastes better when it's boiled in a vintage cast iron Grisnerware water-boiler-pan really have it all figured out? But then why am I not happy with the cube I have? It's a good cube. Many others do not have a cube as nice as mine.
*It's too fucking big for standard lids. Also the handle has proven to be kind of awful but I was gonna let that slide. But the fucking diameter is 8 3/16". It's *juuuust* too big for standard 8 inch lids. And that throws the whole "combo frying pan-sauce pan concept in the garbage.

i made you a checklist (based on my own needs, but it can be useful inspiration)
if you're starting from scratch, i'd thrift a stock pot and a casserole, plus buy a non-stick pan (non toxic and good quality! look in diamondware). i'd then add a cutting board (i love wood, but if you are on a budget for now, i have this one from ikea and it works well), some other basic tools you can easily thrift (dish towels, non-stick safe spoon/spatula). add a sharpening tool and this set of knives and you're good to go!
from there you can see what you'd benefit the most from and slowly build up your collection. personally, i started with a good quality non-stick pan that isn't toxic (aka NOT TEFLON), as this was the cheapest and most versatile among the pans i wanted, and the dutch oven from le creuset (in FIG!!), for which i got a good deal. beyond the price, equally important was the fact that i didn't have any pan that would have served that purpose. i then got a great all clad skillet from demeyere. and from there onwards (though i have not yet bought everything under cookware)
if i have something that does work, i don't see a point in upgrading it just yet. if it starts bothering me because it doesn't do its job, then i will bump up its priority and when there's a discount or i see it in the thrift shop, i'll consider getting it. i'm all for waiting. play the long game and you'll get great things you're happy with for fair prices.
what's most important is to know what you need: what item and what specific characteristics you're looking for.
some retailers do great discounts - the key is knowing what's good and only sticking to what's on your list. thrift shops are amazing (and often carry lots of kitchen equipment, though in varying quality). and sign up for alerts on announcement boards/marketplaces!
