Soooooooo happy to see the number of people in the tags of this poll that completely disregard Word of God and go: "Screw the rule about only Boss Monsters having last names, Starlo's last name is Sunnyside" because I 100% agree!
There could be some interesting lore behind only Boss Monster having last names, perhaps showing connections from before the War, but 1.) If the devs intended that then they didn't really do much with it, and 2.) Monsters have been sealed underground for generations at this point; there's no way that monsters wouldn't adopt last names! Surnames came about to distinguish people with the same name from each other and to also show familial connections. There's no way that monster society would tolerate dealing with "Stripes the umpteenth" for however many centuries they've existed underground.*
Anyways, here's my headcanons for some of the characters' last names:
Dalv's last name is Alucard. I chose Alucard because his name is "Vlad" backwards (as in Vlad Dracula) and also because the devs said that he's based on fictional vampires like Alucard from Castlevania, especially with his lightning attacks.
Martlet's last name is Everflyer, a reference to how martlets are fictional birds that are said to fly from the moment they are birthed to their death. It's also a bit of a point of irony because she's not always flying in the game. Then again, martlets represent continuous effort yet before Clover got to know her in canon, she was a bit of a lazy bird.
Starlo (and Orion and Solomon and Crestina)'s last name(s) are all Sunnyside. For obvious reasons.
Ceroba's last name before she got married was Akagitsune (赤狐) which translates to Red Fox, since she wears a lot of red and she's a fox. I know, perhaps a bit lame but eh. She left behind her birth family ages ago and doesn't want anything to do with them nowadays. It's kinda hard to think of a fitting name for them when they're so uninvolved with Ceroba's life. (Minor aside, I feel like Chujin's last name doesn't exactly fit him with the '-kane' (鐘) part in Ketsukane. I know that Chujin has his bell in his staff, but Ceroba wore bells in her hair even before she met Chujin. I associate bells with her WAY MORE than I do with Chujin. It should have been her last name! But I get what the devs were going for.... :/)
Axis isn't a monster nor does he have a last name but he is an honorary Ketsukane. Chujin may not see things that way but Kanako told me herself.
*I hc it's not necessary for monsters to have a last name in order to exist in the Underground and there are plenty of monsters that just... forgo a last name/a name entirely, whether it's because they don't want to associate themselves with their family for some reason or because they're a monster like a Dunebud or Moldsmal that are (no offense) not very intelligent and don't care about distinguishing themselves into different families/individuals. While a monster that has forgone their last name could probably get by by putting "LNU" (Last Name Unknown) onto legal documents, IDK how anyone would handle legal stuff with a Dunebud. Ha ha, I wish monster lawyers the best of luck dealing with that mess!!!
