Openly: "It pleases me to have you as a part of the team. I'm a little eager to take you under my wing, my Little Sparrow, though I am not sure there is much else I could tell you that you don't already know. But I'll gladly walk you through the usual paths."
The Courier is too glad to have a new recruit that already knows her way around the trade. Compared to the other couriers at the Stormwind Office, there is an obvious favoritism that is being shown to Allie for her starry-eyed persona and determined nature. Not that the other couriers mind - they seem to like doing things their own way without being 'mother henned'.
For the Courier, it is important to invest in making sure Allie is comfortable and well supplied with what she needs to perform her job adequately. She nearly takes offense with how mistreated Allie was, for as hard of a worker she showed herself to be. She wishes Allie to thrive, and Lady Shadowsun has been quite open about making sure she is treated with a better respect than what most of the world likes to give a courier.
Also, she loves her title: the Little Sparrow. Safrona is so habit forming to the title she has issues in these beginning weeks remembering Allie's actual full name.

Secretly: "That's...sweet, lovely girl. Really now."
Safrona is on a surface level amused with the level of celebrity Allie hangs on her name and role as The Courier, but on a quieter note it unnerves her. At worst, Safrona dreads the potential idea of Allie becoming some ultimate fangirl and molding herself to everything from her look to her personal creed, or even take up the Dark Arts just to feel closer....and Safrona deep down does not want to fuel that sort of shallow inspiration. She hopes that her little Sparrow will just be motivated to be what she already is, a hard working courier with her own distinct identity.
As with most she associates with in the world, Safrona has a stubborn habit of keeping herself at a professional distance, and choosing what words she speaks carefully, though this professional veil may be rustled with her couriers the longer she comes to know them. She may insist on only ever meeting with Sparrow at the office, or at a camp on the field for the first few months of coming to know her. At the moment, she wonders if that perky, friendly manner in her little Sparrow will dwindle to concern or distrust the moment Safrona summons her demon to assist, but these are challenges among the workplace that Safrona feels fairly prepared for.
What Safrona will never really come out and state is that she almost gradually thinks of her couriers as family, and more than that - a legacy that represents her more than most things in the open world can. And she is very protective over her legacy, especially the couriers that have shared their lives with her. She is already quite protective of Allie as a new recruit, and has silently demanded that every one else in the office keep her in good health too.
