legit tho vince is so sensitive about his cooking bc it's really just ??? all he has?

like, it was the one passion he pursued in life, the one way he could connect to people because c'mon (food bringing people together? getting to someone's heart through their stomach?), and in his younger days, he absolutely was able to cook with love

but as soon as he lost his ability to taste and he personally could no longer feel the same joy the people around him felt, that passion changed

it's something he's good at

he knows what flavors go well together he knows the techniques he knows the . . . science of it, for the most part

but all of the feelings that used to go with it are warped and bitter and make his dishes seem . . . well, lacking the soul they could otherwise have

and GOOD GRAVY he's sensitive about that because he wants his dishes to feel like that. he wants people to feel things from his cooking; he just doesn't know how to imbue that anymore now that so many sour feelings surround it, now that he's more or less just cooking bc . . . it's what he's good at.
