Recipes I've enjoyed recently.
For the benefit of @moderndaybard, myself, and anyone else who's interested. A lot of these are vegetarian or vegan even though I'm not, so I've marked those!
Open invitation for anyone who would like to add their own recipes! I'm always excited to try different dishes. 💜
1. Quick Pickle Onions [vegan]
I fully intend to keep these onions stocked in my fridge for the foreseeable future.
2. Coconut Crusted Tofu with Sweet Chili Sauce [vegan]
The pictured zucchini is not included in the recipe but I definitely recommend it! I sautéed mine in a pan using the marinade from the tofu.
3. General Tso's Tofu [vegan]
Following the recipe notes, I replaced the beer with water and left out the aji-no-moto (MSG).
4. Gua Bao (Taiwanese Pork Belly Bun)
Tried this at a restaurant and wanted to try making it myself! Very tender and tasty, but not something I'll make often between the time involved and the difficulty in finding pork belly at my normal grocery stores.
5. Vegetarian Ramen [vegetarian, easily vegan adaptable]
This broth is so rich! I love a good ramen broth so much! I wasn't able to grind my sesame seeds because I don't have a mortar and pestle, but that mostly just affected the texture not the taste. I also had to sub out a couple ingredients I didn't have (doubanjiang and sake) but I got pretty close to the intended result! I haven't tried the spicy bean sprouts yet (tho I want to) but the kimchi and corn really add a lot imo.
6. Korean Spicy Cucumber Salad [vegan]
I love this but fair warning I end up with a strong garlic aftertaste for a while!
7. Coconut Curry Noodle Soup
I increased the amount of curry paste to my own taste.
8. Vegan Curry Ramen Noodles [vegan]
I don't think I have anything to add to this one? Fresh jalapeños not being spicy threw me for a loop.
9. Portabella Burger [vegetarian]
I didn't use the hummus so I can't speak to that but the rest of this was very good! For my greens I got a bagged spring mix and used the extra for salads. I also believe I added mayonnaise.
10. Fish Tacos
I love the sauce on this one! I didn't bother buying a whole head of purple cabbage because I didn't have any other recipes to use the rest. Personally I just bought a bag salad and picked out the purple cabbage, that way there was no waste.
