Delicious stir fry with some contents of our farm box from Full Circle this week! Chicken thighs, carrots, baby bok choy, and mushrooms. Used sesame oil, garlic, soy sauce, garlic chili sauce, rice vinegar, and a bit of Splenda for a spicy/sweet flavor!

A lot of my casseroles look the same - baked cheesiness on the top, can’t really tell what’s underneath! :D
Well, this one is a Keto Chili Cheese Dog Casserole (http://ketosizeme.com/keto-chili-cheese-dog-casserole/)
Super easy, really delicious - I omitted the onion in this one because I think my husband will eat it without onions. I also added a large container of mushrooms (because yum). 
With my adjustments, the nutrition looks to be: 12 servings (instead of 10) 316 cals, 23g fat, 3g carbs, 1g fiber (2 net carbs), 24g protein!

YAY!! PIZZA!! If you haven’t had surgery (or have, but don’t follow your nutritionists guidelines), you don’t know how AMAZING it is to be able to have pizza!! Here’s the deal - ThinSlim has breads, cookies, pizza crusts, and all sorts of things that have super low NET carbs. Their pizza crust is about the size of your head, and 1/4 of it is one serving. I pre-cut mine into 4 and just use 1/4 at a time so I can have different types of pizza whenever. The picture is of the 1 serving - I put turkey pepperoni, low carb tomato sauce, spinach, garlic, feta, and a bit of mozzarella cheese. I highly recommend checking out ThinSlim, I’ve had a bunch of their products and am also in love with their bread and bagels (I can only eat half a bagel at a time and one piece of bread at a time). The fiber in these products is crazy high, so be prepared for that :D

I’ve been signed up and have been receiving Keto Crates for about 4 months now and I’ve been happy with about 80% of the things they send. Made brownies from a mix - LC Foods Double Chocolate Brownies! 
I followed instructions, but then added 1/3 cup of Lily’s Chocolate Chips (sugar free) for a bit more chocolate flavoring. I also sprinkled a bit of coarse salt and cinnamon on the tops before baking. Each of these 12 brownie “cupcakes” should be divided in half for one serving. With my change, one serving (1/2 cupcake) has 3 net carbs.
The brownie texture is quite good on these. The conclusions I’ve come to though are that the next batch should have some added sweetener drops or Stevia to make the brownie sweeter. Possibly adding a pump of some sugar free coffee syrup for a stronger flavor. Finally, I think it might be worth the time to make a sugar-free frosting. LC Foods sells a low carb icing mix, but you could also make some sort of cream cheese frosting.

Made this tonight, for St. Patrick’s Day this week! Link to recipe below, but here’s what I used in mine.
Reuben Casserole
Meat 16 oz Corned beef, Cooked
Produce 1/3 red onion, diced
Canned Goods 8 oz. sauerkraut 4 tbsp. chopped dill pickles
Condiments 1/2 cup Mayo (full fat) 1/2 cup sugar-free ketchup 4 oz. cream cheese (full fat)
Baking & Spices 1 tsp. caraway seeds
Dairy 2 cups Swiss cheese

During Lent, these are super quick, delicious, and healthy options for meals! I’ve never been a huge fan of salmon, but I am loving these!
Serving size is 7 pieces (which is plenty): 180 calories 12g fat 2 carbs (0 sugars) 16g protein

Made these strawberry cheesecakes in a cheesecake tin. They are filling, so half of one is enough for me. I cut them all in half and stuck them in the freezer. Next time I would change the base a bit, as this one was a bit bland (and too thick), and I would make made double the strawberry, there just wasn’t enough!

Made cauliflower fried rice a couple weeks ago.. and it was so good! I hand-grated the cauliflower, which was a huge mess - next time I’ll be sure to buy the pre-riced cauliflower! I added shrimp and ham to the recipe below for a bigger kick of protein. Totally delicious <3

Another meal for the week: Pizza Casserole
Shredded chicken thigh meat 1 cubed zucchini Ricotta Italian seasonings Pepperoni Mozzarella cheese
Mix everything but mozzarella cheese in a bowl, put in a baking dish and bake at 350 for 25 minutes. Top with the mozzarella and a bit of the pepperoni and broil for a couple minutes. 
You could put any pizza toppings in your mixture!
One 9x13 casserole dish gave me 8 bariatric-friendly servings!

Tried these from the snack box my office gets from SnackNation. If you remember those puff cereal things, they are like that with sugary tasting stuff! I love these so much! You could definitely put some milk on these and eat like cereal.
