Blueberry Almond Breakfast Polenta (Vegan Adaption)
Ingredients
4 cups non dairy milk
3/4 cups organic polenta
1/2 cup almond meal
4 tablespoons Earth Balance
1/4 – 1/3 cup agave nectar/maple syrup (depending on how sweet you want it to be)
1 cup blueberries (fresh or frozen)
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
sliced or whole almonds
Directions
Bring milk to a boil in a medium saucepan over high heat
Reduce heat to low and add polenta, whisking constantly until smooth. Add almond meal and continue whisking until the polenta thickens to a creamy consistency. Add Earth Balance and whisk until it melts completely
Turn heat off and whisk in agave nectar or maple syrup, vanilla and cinnamon
Divide between 4 breakfast bowls and top with blueberries
Garnish with almonds

So last night I tried out a recipe for vegan gumbo. I had never had gumbo before, so it was a very interesting experience, indeed. I found out that okra is really, really slimey. The roux the recipe used was supposed to dial down the slime factor, but I felt that it was still a really slimey dish overall. I loved the flavors, however. The recipe I used didn't call for any hot spices, so I added sriracha and was very pleased with it. None of the comments on the recipe I used mentioned slime, so I'm wondering: did I mess up somehow? Are there any gumbo experts out there in tumblr land who can give me some advice?
