make a pinterest board of what their garden may look like! flowers, herbs, vegetables, fruit, perhaps?
maybe you can start a little garden yourself! maybe a small flower to put in your window sill, or maybe green onions to keep in your kitchen?
if they grow fruit, maybe you could learn how to make pies or jams!
if they grow flowers, maybe find a list of flowers they would grow. perhaps after a while they pick them and put them into a bouquet for you?
make flower jewelry! there's flower patterned friendship bracelets, flower shaped beads and charms, things like that! you could do that with fruit, too!
draw them covered in dirt from gardening! or, you could draw them with a basket of the goodies they grew!
if they grow vegetables, find some recipes you'd like to try with what they grew! maybe you could learn how to make them?

Tofu and vegetable gyoza / 豆腐餃子
Japanese gyoza are similar to Chinese potstickers, but they are usually smaller, with a thinner wrapper. These gyoza consist of a tender wrapper and a juicy, umami vegetable and tofu filling, pan-fried and steamed to produce a crisp bottom and served with a tangy, slightly spicy dipping sauce. I like to make a big batch of these and freeze some to add to a quick meal throughout the next few weeks.

Makes about 45.
INGREDIENTS:
For the wrappers:
2 cups (240g) all-purpose flour
½ tsp salt
3 tbsp vegetable oil
About ½ cup (120mL) water
For the filling:
3/4 cup (75g) green cabbage, minced
1 medium carrot (50g), minced
1 small stalk celery (30g), minced
5 shiitake mushrooms, minced
2 stalks green onion, thinly sliced
7oz (1/2 package) firm or extra firm tofu
1 clove garlic, minced or grated
1/2-inch chunk (5g) ginger, minced or grated
2 Tbsp cornstarch
2 Tbsp soy sauce
1 Tbsp red miso paste
2 tsp toasted sesame oil
1 tsp salt
1/4 tsp white peppercorns, toasted and ground
Also try other vegetables and herbs such as daikon (Japanese radish), chives, &c.
For the dipping sauce:
1 Tbsp rice vinegar
1 Tbsp soy sauce
1 tsp sesame oil
1/4 tsp chili oil (optional)
INSTRUCTIONS:
For the wrappers:
1. If measuring by volume, measure flour by spooning into a dry cup measure and levelling off. Combine flour and salt in a large bowl. Add vegetable oil and stir.
2. Add water slowly until a soft, non-sticky dough forms. You may need more or less than 1/2 cup. Add more water, 1 Tbsp at a time, if dry flour remains in the bottom of the bowl. Cover and allow to rest for 10 minutes.
3. Knead dough on a lightly floured surface for about 10 minutes until very smooth. Cover with a damp kitchen towel and allow to rest for half an hour to make rolling out easier.
4. Divide dough in half, leaving the half you're not using covered (this makes it easier to achieve a thinner wrapper). Roll out each dough half on a lightly floured surface into a large rectangle of about 1.5mm thickness. Allow to rest, covered with a kitchen towel, for another 30 minutes.
5. Use a 3" (7 1/2 cm) cookie cutter or cup to cut out circular gyoza wrappers. Lightly dust each wrapper with cornstarch and set them aside on a covered plate. Allow scraps to rest in plastic or under a damp kitchen towel before rolling them out again.
For the filling:
1. Drain tofu. Press by wrapping in a clean kitchen towel and placing on a clean surface or cutting board, then placing a plate or other flat surface over the tofu and weighing it down with a heavy object. Press for about an hour to remove excess water.
2. Meanwhile, shred cabbage by slicing in half lengthwise (through the root) and cutting out the stem, then placing cut-side down and slicing thinly lengthwise to achieve thin strips. Finally, cut strips into a fine mince.
3. Peel carrot and mince; mince celery and mushrooms. Alternately, prepare all vegetables in a food processor.
4. Cover vegetables with about 1/2 inch table salt and allow to sit for 5-10 minutes to release moisture. Rinse briefly to remove excess salt and then squeeze firmly over a colander to get rid of moisture. A too-wet filling means a decrease in flavor and a higher likelihood of soggy gyoza!
5. Dice tofu. Mix tofu with mushrooms, cabbage, carrot, celery, green onions, garlic, and ginger in a large bowl.
6. Whisk soy sauce, miso paste, sesame oil, salt, white pepper, and cornstarch in a small bowl until well combined. Add to vegetable mixture and stir to combine.
To assemble:
Assembling gyoza the way shown in the recipe photo takes a little bit of practice. You want to make 10-12 tiny, even folds along one edge of the gyoza--these can be facing the same direction for the length of the gyoza, or they can all face outwards from the center. These tiny folds help the dipping sauce to cling onto the gyoza (as well as looking quite nice), but if you don't want to do something so involved, you can simply fold the wrappers in half around the filling and press to seal, then fry the gyoza lying on one side. They'll still turn out delicious!
1. Take one wrapper in the palm of your non-dominant hand and place a spoonful of filling in the center. (Use less filling to give yourself more wrapper to work with if you're not experienced with shaping dumplings.) Use a finger dipped in some water to wet the edges of the wrapper--this will help to seal it closed around the filling.

2. With your non-dominant hand, hold the gyoza so that it's roughly folded in half. To make gyoza with folds all facing the same direction: Using your dominant hand, pinch just the half of the dough closest to you into a small fold, then press it down against the half of wrapper furthest from you to seal. Continue making small folds in this manner, each one slightly overlapping the last, until the gyoza is completely sealed.
I like to make gyoza with folds facing outward from the center; to do this, first pinch the gyoza to seal it at the halfway point widthwise, then make folds as described above (pinching just the half of the dough closest to you into a small fold, then pressing it down against the half of wrapper furthest from you to seal) from the center to one edge of the semicircle Then, repeat the process from the center to the other edge, folding in the opposite direction this time.

3. Place the gyoza on a plate and cover with a kitchen towel to keep it from drying out. Continue in this way until you have formed all of the gyoza.
For the dipping sauce: 1. Combine all ingredients in a small bowl.
To cook:
1. Heat 2 tsp of a neutral oil on medium in a large skillet. Add gyoza in a single layer and allow to fry until their bottoms are lightly golden-brown.
2. Pour 2-3 Tbsp of water in the center of the pan (not over the gyoza). Immediately cover the pan to allow the gyoza to steam until slightly translucent, about 3 minutes.
3. Uncover the pan and cook until the water has completely evaporated out.
4. Drizzle toasted sesame oil over the gyoza to re-crisp the bottoms and add flavor. Cook until the bottoms of the gyoza are deeply golden brown.
Serve hot with dipping sauce.
Gyoza may be frozen and fried later. Form them and store them immediately (without frying or steaming them) with sheets of parchment paper between each layer; fry and steam them directly from frozen without thawing.

Josef Frank Inspired Menorah

Chanukah is most often a blue and white affair, sometimes with a little silver thrown in, sometimes a little gold. But in ruminating on the holiday, we couldn’t help but ask ourselves: “Why does it need to be?”
Now, we know that the bold, floral prints of Josef Frank are, perhaps, not the most likely of Chanukah inspirations, but that’s exactly the point. We turned to a pattern we love entitled, “Vegetable Tree” as inspiration for this vibrant menorah – the perfect pop of color as we move into the darker winter months! We chose colored papers and floral shapes influenced by the motifs and palettes found in the print and are thrilled to share this how-to with you!

We opted to make our menorah base. But, it would be equally as charming to use a classic menorah you already own and wrap the wire stems around it. Or, pick up an affordable one and paint it! (Thank you to Just Scandinavian for loaning us this great Josef Frank fabric!) ––David Stark
SUPPLIES
1” x 4” wood board (cut to 20”)
Coping saw (or other hand saw) and clamps
Two 1” dowel rods (either 36” or 48” long)
Drill with 1”, 3/8”, and 1/16” drill bits
Ruler and pencil
Acrylic paint and paint brushes
Red and white gel pens
Scissors and craft knife
Permanent glue stick or hot glue gun
Wire cutters
Bone folder
20-gauge straight wire (any color)
Various colors floral tape (we used: red, green, blue)
Various colors cover-weight paper (we used: red, hot pink, yellow, orange, blue)
Chanukah candles or LED candles
Craft cutter machine (optional)

INSTRUCTIONS

Download the PDF template.
Using your ruler, find the center of the wood board and measure nine 2” intervals along that center line. Using your drill with the 1” drill bit, drill approximately ¼” deep holes at each mark. Use clamps to secure the board in place if needed.

Using your ruler, measure eight 7” and one 9.5” lengths of dowel. Use your saw to cut each piece, being sure to cut as straight as possible. Use clamps to secure the dowels in place if needed.

Assemble the menorah base by placing four 7” dowels at each end and the 9.5” dowel in the center. You may need to twist the dowels to secure them in place. Next, using your drill with the 3/8” drill bit, drill approximately ¼” deep holes on the end of each dowel. (3/8” is the width of our Chanukah candles, check yours before you begin and drill the appropriate size holes.)

Paint your menorah! We painted a base color of dark green and added pale blue, turquoise, and grey dots. Allow the paint to dry fully.

Use the template provided to cut out multiples of each shape. Or, use the SVG file to cut using a craft cutter.

Using the red and white gel pens, add decorative details to the shapes and fold down the center or along each petal using a bone folder to press the crease.

Apply a heavy layer of glue stick (or a line of hot glue) to the tab portion of each shape and press the wire into the glue. Once dry, cover the connection and the remaining length of wire with floral tape, occasionally attaching the wire stems together. For the yellow flowers, bend the wire and attach to the back of the flowers with hot glue.

Using your drill with the 1/16” drill bit, drill holes into the menorah base and insert the wire stems into the holes. If you are using a menorah you already own, simply wrap the wires around it. We opted to keep our flowers low and pulled away from the candles. Be mindful of this when you are assembling. Dripped wax will not alight paper, but be cautious of the flames. We recommend if you are using this menorah with small children in the house, to use LED candles.

Day 23 - The Peruvian Amazon
We are being picked up at 9:00am for our tour. Breakfast is complementary at the hotel but I just need some oats. 
Our cold symptoms have pretty much cleared up but now I have a cough developing. Marco our guide for the next 5 days picks us up and we go via a pharmacy to get some cough syrup and lozenges. 
We head to the HQ to drop some of our stuff off and we start the 90min drive to the lodge. It’s fairly unusual that we can access our lodge by road as most lodges are accessible by boat only. Our lodge would take 5 hours to reach if we were travelling by boat. Once we arrive we just need to take a short boat ride to the other side of the river and we get an intro from Marco, meet the other guests properly - there are two couples from UK and one from US/Canada.  We then get shown to our rooms where we have a little downtime. The room is a bit basic but it’s exactly what I was expecting.

The site is big and they are building more lodges, the gardens are so well maintained with flowers and fruits growing - plenty of bananas on the trees. 
It takes us quite a while to walk from our lodge back to the lunchroom as there is so much wildlife to see - butterflies, two types of monkeys.

Lunch is served at 1:00pm and it’s really good considering we are in the middle of nowhere. Beetroot, potatoes and carrot salad as entree and vegetable curry for main followed by some watermelon. 
Eating together in the group at set meal times makes it feel a little like boarding school but the group are really nice and we are getting on well so it’s nice to sit together. 
More downtime before we go on a walk later. We need to get adjusted to island time - especially given the limited internet access!
We meet back up at 4:00pm to go on a short 10min walk to a lookout tower. 
The lookout tower is 38m high and is a little scary for me as it gets quite wobbly at the top but it’s easy to get distracted with wildlife spotting. Marco brings his huge telescope so we can zoom in on things - it really puts out Temu binoculars to shame. We see lots of birds - a few types of vultures (3 king vultures were perched in the top of a nearby tree which Marco said was very rare - they were absolutely massive!), a few types of toucans and the olive crested oropendola.

After spotting for a while, it starts getting dark but we stay at the top whilst Marco gives us some information about the area. The lodge is situated on 30 square hectares of private land and it borders Tambopata National Reserve which is 205,000 square hectares. The national reserve is protected land but there is plenty of other land in the Peruvian Amazon that isn’t protected where mining is allowed. He also says that during COVID gold miners started illegally mining in the park because it wasn’t able to be monitored effecting by rangers but this has since been cracked down on. We also find out a bit about native tribes that do not have contact with other humans (plus some that do). 
By the time we get to the bottom it’s really dark and we need our phone torches to get home. 
On the way back to the lodge we see spiders (incl. a deadly spider - I think it was the wandering spider but can’t remember 100% plus a tiny little spider that uses other dead insects to form a big fake spider in its web), a lizard, leaf cutter ants (so cool) and army ants (bad), some frogs plus a cane toad (we know all about this one!)

After the trek we get stuck into dinner - chicken with a creamy mushroom sauce, roasted potatoes and veg. So yummy! Also another older American couple have joined us. 
It’s an early night for us, we have to be ready for our excursion tomorrow at 4:45am! Also the electricity goes off at 10pm and I don’t fancy our chances walking along the uneven/non-handrailed boardwalk in the dark.
