Rye and spices: week of 3/15/21
Rye stars this week where I finally used up the bag that I bought from Walmart last year and started using the organic rye flour that I bought from Whole Foods that will expire in July.
Sourdough shiroan and anko potica
Grade: B+
Another conversion for #extraordinarybread, another bad proofing. I used a combination of shiroan and anko paste as the filling, and sesame seeds sprinkled above. The bread didnā€™t taste bad, but it was gummy inside and a bit heavy.
I opted not to enter this bread. I feel like it would be going against the spirit of the contest. But the potica shape was fun to do and Iā€™d do it agian, hopefully with better proofing and shaping.

Sweet potato black sesame peanut tang yuan
Grade: A
Used up the sweet potato and black sesame peanut fillings. Itā€™s pretty good actually. I think my ratio of glutinous rice flour and sweet potato was a bit off because it was too dry using the recipeā€™s proportions, so I would use less glutinous rice flour next time or add it as I mix.

Modifications:Ā Silk instead of canned coconut milk; maple syrup (in reduced amount) instead of brown sugar for broth; no salt or screwpine leaves
Variation:Ā leftover dough used to make shiroan buns
Pork floss furikake cookies
Grade: A+
Nutrition: 100 calories
Is this my first A+? Just so good. Think would be better with a less strong tasting animal fat. But it was so good especially warm from the oven, salty and sweet and delicious.

Sweet potato yeasted fa gao
Grade: B
Nutrition: 185 calories
Did not blossom - not enough yeast I think or not enough proofing, as my second batch came closer to blossoming. I think I also had less sweet potato left because i used extra for tang yuan, so maybe the consistency of the batter was off. Not the best looking buns, but quite yummy.

Modification:Ā less sweet potato because I ran out (150g instead of 250g); less coconut sugar (75g instead of 150g); less yeast and 60g of Puffy for a half-recipe.
Warabimochi with tapioca flour and kinako
Grade: B+
A bit denser but still delicious. Glad to find a quick way to use up tapioca starch.

Modification:Ā Silk coconut milk instead of water; maple syrup instead of brown sugar syrup; microwave instead of stovetop
Sourdough applesauce choco stick cookies
Grade: B
Too healthy tasting because of the applesauce, although the choco sticks exceeded my expectations as mix-ins since I was worried they wouldnā€™t be chocolatey enough.

Modification:Ā applesauce for butter; reduced sugar and increased nutmeg; choco stick pieces for chocolate chips at reduced amount

Rye gingerbread pudding frosting birthday cake
Grade: A-
Still a messy cake, although the Saran wrap and freezing helped to keep the cake together until I could transport it to my friend who had the birthday. The crushed choco sticks also helped to add flavor and texture. She cut herself seconds and thirds so I think it was a successful cake overall.
The rye gingerbread cake base was something I wanted to try for a while because of the usage of the rye. The flavor of the rye didnā€™t really come through but it was a nice robust gingerbread taste.

Spiced rye ginger cookies
Grade: A-
Hard to go wrong with gingerbread cookies. They blossomed nicely and I wish I didnā€™t drop one on the floor in front of others as I couldnā€™t rescue it.

Momā€™s Baked Coconut Walnut Sweet Rice Cake is very easy to make and not too sweet. Itā€™s the perfect treat to make for Chinese New Year. Sticky rice is traditionally eaten for Chinese New Year, so each year, I make some type of sticky rice cake (made with sweet rice). This particular recipe came from my momā€™s collection of sticky rice recipes and takes just minutes to mix together.
Chinese New Year starts on January 28th this year and itā€™s the year of the Rooster. Although Chinese New Year isnā€™t celebrated for more than a day or two here in the United States, itā€™s a really big deal in China. In fact, some factories shut down forĀ almost a month for this big holiday.
There are many traditions observedĀ for Chinese New YearĀ to ensure a ā€œluckyā€ New Year, and many traditional foods that have symbolic meaning that are eaten during the Chinese New Year.Ā Chinese dumplings, for example, symbolize wealth because they are in the shape of old gold ingots. Oranges symbolize fullness and wealth, not only due to their round and ā€œgoldenā€ color, but also because the Chinese word for orangesĀ sounds like success. The Year of the Rooster
The Chinese zodiac calendar works on a twelve year cycle. So, if you are born in 2017, or were born inĀ 1933, 1945, 1957, 1969, 1981, 1993, or 2005, you are a Rooster. Roosters are very observant, hardworking, resourceful, courageous, Ā talented, very confident in themselves. Nian Gao, or Chinese sweet rice cake (also called sticky rice cake or glutinous rice cake)Ā is often eaten for Chinese New Year because of its symbolism for higher income or position.NiĆ”ngāo, as sticky rice cake is called in Chinese, sounds like ā€œgetting higher year after year.ā€ So, eating sticky rice cake might mean a rise in business success, better grades, or promotions.Ā It is also symbolic of family togetherness (the ā€œstickyā€ factorā€).
Traditional sweet rice cake is steamed and is made with sweet rice flour, brown sugar and water. Sometimes additional flavorings are added. You can buy these at local Asian markets during Chinese New Year, or make them yourself. The store bought ones Iā€™ve tried donā€™t have much flavor, so I prefer making baked sticky rice cake with coconut milk.
The past several years, Iā€™ve tried a new sticky rice cake recipe. My aunt Florence gave me her recipe for Baked Coconut Sticky Rice Cake for Chinese New YearĀ three years ago.
The following year, I made one of my momā€™s Coconut Sticky Rice Cake recipes which uses whole sweet rice thatā€™s cooked in a rice cooker first, then is finished in the oven with a coconut glaze.
Last year, I tried my momā€™s Baked Coconut Sticky Rice Red Bean Paste CakeĀ  which features a red bean paste filling.
A few weeks ago, I pulled out my binder that has a collection of my momā€™s favorite recipes to pick out another sticky rice cake recipe to try. I actually have an entire section in this binder dedicated to all theĀ sticky rice cake recipesĀ my mom collected over the years.Ā My Mom loves sticky rice cake!
Momā€™s Baked Coconut Walnut Sweet Rice Cake
I found a recipe for baked coconut walnut sweet rice cake that sounded similar to the other baked coconut sticky rice cake recipes Iā€™ve tried except it includes eggs and is topped with walnuts.
You can find sweet rice flour or glutinous rice flour at Asian grocery stores. This particular brand, Mochiko, comes highly recommended from my Aunt Florence.
The recipe calls for coconut milk. Be sure to use canned coconut milk, not the kind that comes in a carton.
My Mom uses a food processor to combine all the ingredients. I think the food processor was one of the best inventions ever.
The texture of this sticky rice cake is slightly puffier around the edgesĀ than my Aunt Florenceā€™s baked coconut sticky rice cake, and I loved the toasted walnuts on top.
I made two pans of this baked coconut walnut sweet rice cake and sent some to my momĀ and my aunt, and gaveĀ some to a few friends to help them celebrate Chinese New Year.
This baked coconut sweet rice walnut cake is not that sweet, like most Chinese desserts. I had to give most of it away ā€“ otherwise, I would have eaten the whole pan ;).
Mom's Baked Coconut Walnut Sweet Rice Cake
Sticky rice cake is often enjoyed during Chinese New Year celebrations. My Mom loves sweet rice (sticky rice) cake. This is just one of her recipes collected over the years.Ā 
1 pound sweet rice flour
1 cup organic sugar
1/2 cup oil
3 large eggs (lightly beaten)
1 teaspoon baking soda
1 can coconut milk
1 cup organic low fat milk
1/2 cup walnuts (chopped)
Preheat oven to 375 degrees.
Place all ingredients except walnuts in food processor. Process until smooth, scraping down sides. Pour into oiled 9ā€³x11ā€³ baking pan. Sprinkle with walnuts.
Bake for 45 minutes.
