part ix: tarte tatin
[ a twist of lemon / bakery au tag ]
[ << backbone / chapter list ]
[ ao3 / ff.net ]
Piping hot fruit and crème fraîche.
Seiji always has apples on hand, seasonal or not. At the bakery, yes, but especially at home. As long as its bite is crisp and it is of the cooking sort. It is the only way to serve the great unifier of their household.
Is it the most healthy? For love to be served on a warm plate when words are not enough?
Seiji doesn’t think he ever knew any other way.
—
Whittling animals out of apples, Shuuichi is always deft with a paring knife. It slows them down to a crawl but gives them room to breathe and be.
But always first, the peels. Pectin be damned.
‘It’ll be less pretty!’
‘You want to say that again?’
‘I don’t mean it like that!’
But Seiji never minds. It is easy to relax in this liminal space. Of a dim kitchen and the scent of spice. Of the sound of the thin sliver of apple skin making its slow descent from Shuuichi’s sure fingers.
He picks up a discarded piece. It meets his teeth with a tart snap. Brings the rest up to Shuuichi’s lips.
—
Like a box of animal crackers: At first, it is standard fare of cats and dogs and rabbits, and then—
A giraffe with a shiny appleseed eye, a dapper top-hat (separate), and a walking stick (also separate).
He flicks the seed away before dropping the giraffe, its hat, and its cane into the measuring cup. An affronted gasp.
“Some cyanide with your dessert, Shuuichi? I am more than happy to arrange it.”
Shuuichi carves a penguin next. It is on skis and it has a scarf. Naturally.
—
“They are going to be stewed, Shuuichi.”
“I know. They are going to be delicious.” With boyish anticipation.

Various Facts And Health Benefits Of Kei Apple
Kei apple has become a household name in Japan since the late 1970s. It’s also known as kiwi apple or Japanese Kiwifruit (Kiwiana). This fruit was initially called Japanese Kiwi due to its similarity to the kiwis found in New Zealand. These days, however, it is commonly used interchangeably.
Today, Kei apples are grown in several countries around the globe, from Spain (where they are also called Pimpinela) to Chile. The United States produces about 75% of the total global production.
Kei Apples” is used in cooking in various ways. For example, they can be eaten fresh or added to juices and smoothies. They can also be fermented into alcohol. Another way to enjoy them is to add their flavor to ice cream. Some food producers even freeze them and serve them as dessert bars.
Regarding nutrition, Kei apples have less sugar than regular apples but more vitamin C than regular oranges. They are also exceptionally rich in fiber. That means that these fruits will not cause you to gain weight quickly. Kei apples contain higher levels of antioxidants than any other fruit on earth. They may help prevent cancerous cells from growing and even protect your skin against sunburn.
There are two types of Kei apples: Red-skinned and Green-skinned. Both styles come in different shapes and sizes, depending on where they were grown. Generally speaking, green-skinned varieties tend to be smaller, while red-skinned ones tend to be larger.
Health Benefits Of Kei Apple (Dovyalis caffra)
Are you looking out for ways to plant Kei Apple? Then Hire a gardener for a day because Plant Judo will help you with seeds and planting methods.
1. Antioxidant-Rich: A recent study revealed that critical apples contain antioxidants such as polyphenol compounds that fight our body’s free radicals. Free radicals are highly reactive oxygen molecules that destroy healthy tissue. This makes critical apples perfect for preventing diseases like cancer and heart disease.
2. Anti-Inflammatory: Due to their high anti-inflammatory properties, kei apples are suitable for people suffering from inflammation-related disorders. It helps reduce swelling and pain caused by arthritis, sore muscles, wounds, and injuries.
3. Anti-Cancer: The presence of lycopene and beta-carotene helps fight off harmful substances that cause cancer. Lycopene is an organic compound in many plants, including tomatoes, watermelons, guavas, and papayas. Beta carotene is a fat-soluble plant pigment found mainly in carrots. Both chemicals help slow cell division so that cells cannot mutate into abnormal forms.
4. Good source of Vitamin C: Like all citrus fruits, Kei apples are loaded with vitamin C. However, apples provide most of their vitamin C content during ripening, unlike other fruit. During storage, vitamin C begins to degrade and become oxidized. So, it’s important to consume fresh apples whenever possible.
5. Nutrient Rich: Like all other fruits, the nutrients found in Kei apples are vital for human health. Among the vitamins, minerals, and essential amino acids, there are several notable ones.
For example, potassium aids normal muscle contraction and relaxation. Magnesium is known to prevent bone loss following menopause. And iron helps us produce blood. I do not forget that fiber plays an integral role in digestion and absorption.
6. Blood Pressure Lowering: Another benefit of consuming Kei apples is their ability to lower blood pressure. High blood pressure has been linked to chronic ailments like coronary artery disease, stroke, and kidney failure.
7. Diuretic: Consuming apples can also aid in reducing fluid retention in your body. Because they contain citric acid, these products stimulate your kidneys to excrete excess fluids out of your body. To reap maximum benefits, make sure you drink plenty of water on top of eating Kei apples regularly.
8. Digestive Aid: Apples contain pectin, a natural substance that acts as a digestive aid. Pectin promotes peristalsis, the movement of food through the intestines. When combined with fiber, it helps pass stool quickly and easily.
9. Treats constipation: You may cause constipation due to a low magnesium intake level. One way to remedy this is to eat Kei apples since they have more than double the amount of magnesium compared to regular apples.

Gelatin Market: Growth Analysis, and Segmentation Analysis by Type, Application, and Region Forecasted from 2024 to 2031
Gelatin was recorded at USD 3,023.8 million in 2023, which is estimated to be at USD 3,185.1 million in 2024 and projected to reach USD 4,820.5 million by 2031, growing at a CAGR of 6.10% from 2024 to 2031.
One of the primary drivers of the gelatin market is the expanding food and beverage industry. Gelatin is widely used as a food additive, particularly in the production of confectioneries, dairy products, and meat products. Its gelling properties make it a preferred ingredient in products like gummy candies, marshmallows, and jellies. Additionally, it is used as a stabilizer in yogurts, creams, and ice creams, enhancing the texture and mouthfeel of these products. The growing demand for convenience foods, along with the increasing preference for clean-label ingredients, has further boosted the demand for gelatin in the food and beverage sector.
Key Companies in Gelatin Market
Darling Ingredients, India Gelatine & Chemicals Ltd., Lapi Gelatine S.p.a, Nitta Gelatin India Limited, , Roxlor, Tessenderlo Group, Trobas Gelatine B.V, Weishardt Holding SA, EWALD-GELATINE GmbH, GELITA AG

In addition to its widespread use in food and beverages, gelatin plays a crucial role in the pharmaceutical industry. Gelatin capsules, both soft and hard, are one of the most common dosage forms used in the pharmaceutical sector. Gelatin's ability to dissolve quickly in the stomach makes it an ideal material for encapsulating drugs. Moreover, gelatin is used in the production of plasma expanders and wound dressings due to its biocompatibility and biodegradability. The rising demand for nutraceuticals and dietary supplements, which often use gelatin-based capsules, has further contributed to the growth of the gelatin market.
However, the gelatin market faces several challenges. One of the primary concerns is the source of gelatin, which is typically derived from animal by-products, such as bones, skin, and connective tissues of cows, pigs, and fish. This has raised ethical and religious concerns among certain consumer groups, particularly those following vegetarian, vegan, or specific religious dietary practices. In response to this, manufacturers are exploring alternative sources of gelatin, such as plant-based gelatin substitutes like agar-agar and pectin. These alternatives, however, do not possess the same functional properties as animal-derived gelatin, which poses a challenge for the market.
Another challenge facing the gelatin market is the fluctuation in raw material prices. The cost of gelatin is largely influenced by the availability and price of animal by-products, which can vary depending on factors such as disease outbreaks, changes in the livestock industry, and environmental regulations. This volatility in raw material prices can affect the profitability of gelatin manufacturers and may lead to price fluctuations in gelatin-based products.
Geographically, the gelatin market is witnessing strong growth across several regions. Europe is currently the largest market for gelatin, driven by the strong demand from the food and pharmaceutical industries. The region's well-established food industry, coupled with the high consumption of gelatin-based products such as gummies, jellies, and desserts, has contributed to the market's dominance. Additionally, the presence of major pharmaceutical companies in countries like Germany and France has further boosted the demand for gelatin in the region.
North America is another significant market for gelatin, with the United States being a major consumer. The growing demand for dietary supplements and functional foods in the region has led to an increase in gelatin consumption. Moreover, the rising trend of health and wellness, along with the growing popularity of natural and organic products, has further fueled the demand for gelatin in the food and pharmaceutical sectors.
The Global Gelatin Market is Segmented as:
By Source
Porcine
Bovine
Marine
Others
By Application
Dietary Supplements
Food and Beverage
Pharmaceutical Products
Cosmetic & Personal Care
Others

Guava Gin Jam- A Fusion of Tropical Sweetness and Botanical Elegance
Introducing Guava Gin Jam, where tropical bliss meets the bold, aromatic charm of gin. This delightful creation blends the natural sweetness of ripe guavas with the crisp, botanical notes of gin to give you a unique, artisanal jam. Whether you’re spreading it over warm toast, stirring it into cocktails, or using it as a glaze for meats and desserts, this jam promises to transform everyday foods into a gourmet experience.
A Tropical Treat Reimagined
Guava is a beloved tropical fruit, known for its juicy, fragrant pulp and a perfect balance between sweetness and tang. This jam captures the essence of guava’s distinct aroma and combines it with the vibrant character of gin, offering a harmonious blend of flavors. By using premium gin, which boasts a bouquet of botanicals such as juniper, coriander, and citrus, this jam delivers a depth that elevates the palate beyond typical fruit spreads.
The Process: Crafting Excellence in Every Jar
Creating the perfect Guava Gin Jam is both an art and a science. Ripe guavas are carefully selected, ensuring they are at their peak sweetness. The fruit is simmered slowly, releasing its natural pectin to create a smooth yet slightly textured jam. A measured splash of gin is added towards the end of the process to retain its fresh botanical notes without overwhelming the fruit’s flavor. The result? A jam with layers of complexity—bright guava at the forefront, followed by subtle hints of herbs, spices, and juniper from the gin.
Versatility in Every Spoonful
Guava Gin Jam is not your typical breakfast spread—it’s a multi-purpose delight that can elevate both sweet and savory dishes. Try spreading it over buttery croissants or rustic sourdough bread for a luxurious morning treat. It also pairs beautifully with creamy cheeses like brie or mascarpone, making it the perfect addition to your charcuterie boards. For the adventurous home chef, this jam doubles as a sophisticated glaze for roast chicken or pork, adding a sweet-savory twist with a hint of herbal intrigue.
And let’s not forget cocktails! Swirl a spoonful into gin-based drinks like a gin and tonic or martini to enhance the drink’s fruity profile. You can also mix it with sparkling water and lime for a refreshing mocktail.
Elevate Everyday Moments with a Touch of Luxury
What makes Guava Gin Jam special isn’t just its taste—it’s the experience it offers. This small-batch, handmade creation brings a sense of indulgence to simple pleasures. It invites you to slow down, savor each bite, and appreciate the fusion of flavors. Whether you’re hosting a brunch with friends or enjoying a quiet breakfast at home, this jam adds a touch of elegance to any moment.
Handmade with Care
Each jar of Guava Gin Jam is crafted by hand, ensuring the finest quality and attention to detail. We believe in using only natural ingredients—no artificial preservatives or flavor enhancers. The gin’s alcohol content is cooked off, leaving behind its aromatic essence, making the jam family-friendly while retaining its gourmet appeal.
Conclusion: A Perfect Gift or Pantry Essential
Guava Gin Jam is not just a treat—it’s an experience in a jar. Whether you’re gifting it to someone special or keeping it for yourself, this unique jam is a must-have for anyone who enjoys bold, unexpected flavors. It captures the heart of tropical guava, the spirit of botanical gin, and the care of handmade craftsmanship, making it the perfect addition to any kitchen or gift basket.
Enjoy Guava Gin Jam and savor a little luxury in every spoonful!

Lemons: A Citrus Superfood Packed with Health Benefits
Lemons (Citrus limon) are often overlooked in the realm of superfoods, yet these tangy citrus fruits boast an impressive array of health benefits that make them a worthy addition to any diet. As members of the Rutaceae family, lemons are small evergreen trees known for their bright yellow fruit, which is not only a staple in cooking and beverages but also a source of numerous nutrients.
One of the standout features of lemons is their remarkable vitamin C content. Just one lemon contains about 31 milligrams of vitamin C, which is essential for collagen production, immune function, and the absorption of iron from plant-based foods. This vital nutrient is known for its antioxidant properties, helping to neutralize free radicals and protect the body from oxidative stress, which can lead to chronic diseases.
In addition to vitamin C, lemons are a good source of dietary fiber, particularly pectin. This soluble fiber has been linked to various health benefits, including improved digestive health and reduced cholesterol levels. A diet rich in fiber can promote feelings of fullness, helping to manage weight and reduce the risk of obesity-related diseases.
Lemons also contain potent plant compounds such as flavonoids and citric acid, which have been studied for their potential health benefits. These compounds may help reduce inflammation, lower blood pressure, and improve heart health. The consumption of lemons has been associated with a lower risk of heart disease, primarily due to their ability to improve cholesterol profiles and promote better blood circulation.
Moreover, lemons may play a significant role in preventing kidney stones. The citric acid in lemons can help increase the acidity of urine, which may reduce the risk of stone formation. Drinking lemon-infused water is a simple and enjoyable way to support kidney health and hydration.
Adding lemons to your diet is easy and versatile. They can be used in a variety of ways, such as in dressings, marinades, or desserts, and they pair wonderfully with both sweet and savory dishes. The refreshing flavor of lemons can elevate any meal, making them not just a nutritional powerhouse but also a delicious addition to your culinary repertoire.
In summary, lemons are a citrus superfood that offers a multitude of health benefits. From boosting immunity with vitamin C to supporting heart and kidney health, these vibrant fruits deserve a place in your daily diet. Embrace the power of lemons and enjoy the myriad of ways they can enhance your health and wellness.

This simple 3-ingredient blueberry jam is a delightful and easy-to-make spread that captures the natural sweetness of fresh blueberries. It's perfect for your morning toast or as a sweet topping for various dishes.
Ingredients: 2 cups fresh blueberries. 1 cup granulated sugar. 1 tablespoon lemon juice.
Instructions: Wash and rinse the fresh blueberries thoroughly. In a large saucepan, combine the blueberries, granulated sugar, and lemon juice. Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly. Once it boils, reduce the heat to low and simmer for about 20-25 minutes, or until the jam thickens. Stir occasionally to prevent sticking. To check the jam's consistency, place a small amount on a chilled plate and tilt it. If it wrinkles and holds its shape, it's ready. If not, continue simmering for a few more minutes. Once the jam reaches the desired consistency, remove it from the heat and let it cool for a few minutes. Transfer the blueberry jam into sterilized glass jars, leaving about 1/4 inch of space at the top. Seal the jars tightly. Allow the jam to cool completely at room temperature before storing it in the refrigerator. Your homemade 3-ingredient blueberry jam without pectin is ready to enjoy! Use it on toast, pancakes, or as a topping for yogurt and desserts.

Enjoy The Healthiest Fruit Jams (Made In India)
Fruit jams have long been a beloved staple in households around the world. They provide a delicious way to enjoy the flavors of fresh fruits year-round. In India, the market for fruit jams is diverse, offering a wide range of options that cater to different tastes and preferences. However, not all jams are created equal. In this article, we will discuss how you can choose the healthiest fruit jams in India. So, keep reading this article till the end.
What Makes a Fruit Jam Healthy?
A healthy fruit jam is characterized by its ingredients and nutritional profile. Here are key factors that make a fruit jam healthy:
High Fruit Content
The primary ingredient in a healthy fruit jam should be real fruit. High fruit content ensures that the jam retains the natural flavors, nutrients, and benefits of the fruit.
Jams that list fruit as the first ingredient, rather than sugar or other additives, are typically healthier and more flavorful.
Low Sugar Content
Traditional jams are often loaded with sugar, which can diminish the health benefits of the fruit and contribute to various health issues like obesity and diabetes. Healthy jams use natural sweeteners or significantly reduced amounts of sugar to retain the fruit's natural sweetness without compromising health.
Some healthy alternatives even use fruit juice concentrates or natural sweeteners like honey or agave syrup.
No Artificial Additives
Avoiding artificial colors, flavors, and preservatives is crucial for a healthy fruit jam. These additives can have adverse health effects and detract from the natural taste and quality of the jam. Healthy jams rely on the natural color and flavor of the fruit and use natural preservatives like lemon juice or pectin, which is naturally found in fruits.
Nutrient-Rich Ingredients
Adding ingredients like chia seeds, flaxseeds, or additional vitamins can enhance the nutritional profile of the jam.
These additions provide extra fiber, omega-3 fatty acids, and other beneficial nutrients, making the jam not just a tasty treat but also a nutritious one.
Organic and Non-GMO
Using organic and non-GMO fruits can ensure that the jam is free from pesticides and genetically modified organisms. Organic farming practices are better for the environment and result in fruits that are healthier and more nutritious.
Non-GMO fruits ensure that consumers are getting a product that is as close to its natural state as possible.
Top Benefits of Consuming Healthy Fruit Jams
Incorporating healthy fruit jams into your diet can offer several benefits. Here, I have mentioned some of those benefits:
Rich in Nutrients
Healthy fruit jams are packed with vitamins, minerals, and antioxidants from the fruits. These nutrients can boost your immune system and overall health.
For example, strawberries are rich in vitamin C, while mangoes are high in vitamin A, which is essential for good vision and a healthy immune system.
Natural Energy Source
The natural sugars in fruits provide a quick and sustained energy boost, making fruit jams an excellent addition to breakfast or a snack.
This is especially beneficial for children and athletes who need a quick source of energy that is also nutritious.
Weight Management
Low-sugar jams can be part of a balanced diet, helping in weight management by satisfying sweet cravings without excessive calorie intake.
When compared to sugary snacks and desserts, healthy fruit jams are a more nutritious option that can help control weight while still enjoying sweet flavors.
Digestive Health
Some healthy jams include fiber-rich ingredients, promoting good digestion and preventing constipation. Fruits like mangoes and strawberries naturally contain dietary fiber, which is essential for maintaining a healthy digestive system.
Additionally, some jams incorporate seeds or other high-fiber ingredients to boost their digestive benefits.
Versatile Usage
Fruit jams can be used in various dishes, from spreading on toast to enhancing the flavor of yogurt, smoothies, and desserts.
They can also be used as a glaze for meats, a filling for pastries, or a topping for pancakes and waffles. The versatility of fruit jams makes them a valuable addition to any kitchen.
These are some of the major benefits of consuming the healthiest fruit jams, they will keep you fit & fine.

Enjoy the delightful combination of fresh strawberries and kiwi in this homemade jam. Spread it on toast, use it as a topping for desserts, or give it as a thoughtful homemade gift.
Ingredients: 2 cups fresh strawberries, hulled and chopped. 1 cup kiwi, peeled and diced. 3 cups granulated sugar. 1/4 cup lemon juice. 1 packet fruit pectin. 1/4 teaspoon butter optional, to reduce foaming.
Zane DyerInstructions: Sterilize your canning jars and lids by boiling them in a large pot of water for 10 minutes. Remove and let them air dry. In a large, heavy-bottomed saucepan, combine the chopped strawberries, diced kiwi, and lemon juice. Mash the fruit mixture slightly with a potato masher or the back of a fork to release some juices. Sprinkle the fruit pectin over the fruit mixture and stir it in until well combined. Place the saucepan over medium-high heat and bring the fruit mixture to a boil, stirring constantly. Once it reaches a rolling boil, add the granulated sugar all at once, stirring vigorously to dissolve the sugar. If using, add the optional butter to reduce foaming. Return the mixture to a boil and cook for 1-2 minutes, or until the jam thickens and passes the gel test. To test for doneness, place a small amount of jam on a cold plate, and if it gels and wrinkles when you push it with your finger, it's ready. Remove the saucepan from the heat and skim off any foam that may have formed on the surface. Ladle the hot jam into the sterilized canning jars, leaving about 1/4-inch headspace at the top. Wipe the jar rims clean with a damp cloth to ensure a proper seal. Place the sterilized lids on the jars and screw on the metal bands until they are fingertip-tight. Process the filled jars in a boiling water bath for 10-15 minutes to seal them properly. Make sure the jars are fully submerged in boiling water during this process. Carefully remove the jars from the water bath and let them cool on a clean towel or cooling rack. You should hear the lids pop as they seal. Once the jars have cooled completely, check the seals by pressing down on the center of each lid. If it doesn't pop back, the jar is sealed. If it does, refrigerate that jar and use it within a few weeks. Label your sealed jars with the date and store them in a cool, dark place for up to a year.
