BDG is wrong (pressing a French Dip completely destroys the very identity of the sandwich) BUT it did convince me to panini press a PB&J and it was very good.

I've come up with something I've begun to call "The Inbred Monte Cristo Sandwich". You take a PB&J, add a teaspoon of brown sugar (optional but recommended), and then turn it into a double decker sandwich with the next layer being lunch meat, cheese, and mayonnaise (or a mayonnaise substitute if eggs aren't your style for whatever reason).
I used to make these all the time without brown sugar in middle school (~6-8 years ago) and the updated recipe with brown sugar only makes them better. The combination of the mayonnaise, jelly, and lunch meat is surprisingly good when they're all put together instead of only having 2 of the 3 parts.

I'll take this time to show off my favourite sandwich. It's cucumber and pepperoni on oat bread then squashed to shit in a panini press

yay okay! and no worries, i know this time of year is super hecticcccc—my mom went grocery shopping earlier and walmart was beyond crowded. we still didn’t do our christmas shopping either, i know we are so behind.
what do you think the pogues’ favorite foods would be? for jj, picture his being both chicken wings and pizza—both saturated with fats and oils. junk food just how he likes it.

i think john b prefers meat over fish, so i’m gonna say he loves a good burger every once in a while. i can see him inviting himself over for dinner at kie’s house on the nights her parents make pulled pork or some kind of beef. i think he enjoys bbq. i can also see jb enjoying bananas as a snack, or when he’s out like at the movies or something, a soft pretzel with cheese!

jj lovess junk food. for breakfast, i think he loves poptarts. he reminds me of drake parker from drake & josh. cheese balls, snack cakes, chips, ice cream, candy, fast food, jj loves it all. he did say something in s1 about craving shrimp & grits so we can assume he loves that too! lives for a bowl of movie theater popcorn every now and then too, as well as nachos with a lottt of cheese.
pope.
i don’t see pope as a picky eater. maybe when he was a kid, but he grew out of it. i think pope likes healthier foods because he knows the effects of eating unhealthy. i see pope as a sandwich guy and idk why. sub sandwiches with a pickle spear on the side, even a meatball sub is fine with him. i don’t think he minds a pb&j either. i think pope loves a good hot dog too! probably with all the works; ketchup, mustard, relish, and sauerkraut. i think this stems from going to baseball & other sports games with his dad growing up!

i think kiara loves açaí bowls or bagels in the morning! she likes boba, smoothies, and sometimess sweetened iced tea. she’ll drink some warm tea with lemon when she’s sick too! she likes salads for lunch and will 100% shake her salad vigorously until everything is mixed how she likes it. kie loves pasta too!! i think she likes shrimp fettuccine alfredo. i also think she likes sushi!

lovess french toast for breakfast, preferably with fruit on top! for lunch i think sarah lovess kraft mac & cheese. i think sarah loves chicken, preferably grilled, and will eat it with almost anything. lives for a grilled chicken caesar salad! i also think she likes grilled cheese sandwiches a lot (or just sandwiches period), maybe with some tomato soup on the side. i could totally see her getting super excited if someone bought her a panini press lol

“now that im working from home i can have interesting things for lunch” no. i eat sandwiches. i have had more deli ham in the last 6 months than the rest of my entire life. sandwiches. sometimes i grill them in the panini press because my life is a disaster and a toasted sandwich can be the highlight of my day. sometimes i make pb&j like i am literally five. doesn’t matter. sandwiches

Homemade chia jam, roasted peanut butter, fresh baked bread (I used gluten-free) 🤩😋

😋 Chia Jam:
• 2 cups fresh strawberries or fruit of choice
• 1-2 tablespoons natural liquid sweetner of choice (agave, maple syrup etc) if needed
• 2 tablespoons chia seeds
Place strawberries and sweetener (or omit) in a saucepan over medium high heat. Cook until strawberries are soft and use fork or potato masher to mash. Reduce heat and let simmer about 5 minutes. Remove from heat and stir in chia seeds. Let sit and cool until thickened.
Peanut Butter:
2 cups blanched, dry roasted peanuts
1-2 tablespoons sweetener if desired
Salt to taste
I like to roast my peanuts for 5-8 minutes at 400F, shaking halfway through to give them an extra toasty flavor. Feel free to just use them as they come though! If you like chunky peanut butter, blend 1 1/2 cups of the peanuts in food processor or high powered blender according to machine instructions until smooth (I did mine in the vitamix only takes about a minute). Add back in remaining 1/2 cup of peanuts and pulse until desired texture is reached or just blend together all peanuts if you like it creamy!
Assemble pb&j and then grill in a saucepan or panini press. Butter outside of bread (I used plant-based butter) or use non-stick pan. Press down bread gently with spatula or utensil as it cooks to make sure its evenly toasted. Enjoy!!

All About the PB&J
The first thing on my grocery list when I moved in this school year was peanut butter and jelly. Not only is this my favorite lunch during the summer time, but it is also one of my favorite snacks.
When I came across this Panini-ed PB&J on Cinnamon Raisin Swirl Bread (http://spoonuniversity.com/recipe/weekly-panineats-nostalgini), I was shook. I immediately tried it with regular cinnamon bread (I hate raisins) and it have forever changed how I look at a PB&J.
This would even work if you are strictly a PB-no-J type of person, this is still delicious. If you don’t own a panini press, just put it in a pan and press down on it with a spatula. The goal is to ultimately get the bread crunchy, and the peanut butter and the jelly nice and warm.

A long overdue niche has been filled in La Mesa with the arrival of Brew Coffee Spot. The urban-rustic coffeehouse affords caffeine enthusiasts a spacious place to sip, eat and relax, if not spread out with school or work projects on roomy tables made of wood and metal pipes.
Anchored within the Big Lots shopping center at 6101 Lake Murray Blvd., the business model was conceived in just over the time it takes to swig down a couple of frothy lattes.

“My wife and I had some friends over and we started talking on a whim about opening a coffee shop because of the need for one in this area. By the end of the night we had a name for it, came up logo ideas and even created a web page,” said Joe Paraiso, a graphics designer who runs the business with his wife, Heather, and their friend, Ralf Wilkowski.
The trio soon began looking for a location and eventually found two adjoining storefronts that previously housed a shoe store and Mail Boxes Etc.
After knocking down a wall to combine the spaces, they designed the 2,300-square-foot shop themselves. Their combined efforts resulted in stained concrete flooring, shiplap wood accents, an expansive brick wall, LED light pendants and live plants, which gracefully dissect the sleek, open space.
Café au lait with a foamy design
The shop’s pride and joy, however, is a high-end water filtration system installed specifically to spotlight the rich, natural flavor of the coffees — whether consumed hot or cold. Loose teas such as white rose, blood orange, peppermint, coconut-cacao and more are also made with the super-pure water.
“There’s no aftertaste to our coffee and tea drinks because of it.” Paraiso said. “The filtered water also extends the life of our La Marzocco espresso machine, which is the workhorse of the industry.”
Brew Coffee Spot uses organic coffee beans sourced from San Diego’s Café Virtuoso. The roaster provided guidance in equipment selection and barista training during the lead-up to the shop’s March opening.
“Going into this business can be very intimidating because there are a lot of people who are very particular about their coffee,” Paraiso added. “Café Virtuoso had everything we wanted from a roaster.”
Paraiso and his wife reside in nearby Fletcher Hills. She works for an online school, and both have maintained their established careers since launching the business.
Brie and butter ficelle sandwiches
Wilkowski previously owned a signage company in Pacific Beach. He now runs Brew’s kitchen, which offers a menu of hearty sandwiches and paninis using assorted breads from Bread & Cie.
The sandwich choices extend to turkey caprese with pesto; roast beef with provolone; ham with Swiss; a PB&J; and brie and butter on slim French-style ficelle baguettes.
Bread & Cie also supplies a variety of pastries although the shop’s cinnamon rolls are made by Paraiso’s sister and the baklava hails from Baklava King in Santee.
The coffee menu covers all bases, many of which were uncommon to this area of La Mesa until now. They include everything from pour-over Guatemalan coffee and café au lait to various lattes and a cold nitro brew that’s keg-aged for a few days.
There’s also a crafty selection of espressos such as affogato with vanilla bean ice cream and Viennese spiked with honey and cinnamon.

“We’re still in soft opening and some things will change soon,” Paraiso noted, referring a likely extension of operating hours and a couple of blank walls that will make way for art.
Brew Coffee Spot is currently open from 6 a.m. to 8:30 p.m., Monday through Thursday, and until 9:30 p.m. on Fridays and 2 p.m. on Sundays.
In addition, live jazz is held from 6 to 8 p.m. on Thursdays and Fridays and game night takes place from 5 to 9 p.m. on Saturdays.
