Day 678 : Questionnaire from Hajime Campaign : What's your favorite ramen ?
Hokuto : I've been eating a lot of dishes with tonkotsu lately . I also like salt and miso flavor without a doubt .
Subaru : The ramen Trickstar made all together was delicious~. We added an egg at the end , it was the best ☆
Makoto : Lately I've been loving miso flavor. I've also added corn and butter...it's high-calorie so I feel a little guilty , but in the end it's so delicious ♪
Mao : Getting ramen in restaurants is delicious but so are the cup noodles made at home. Ramen is my favorite food, so I could talk about it forever ♪
Mika : It might be salt flavor ? The ramen I had the other day had shrimps and duck meat as topping , it was super duper delicious ♪
Ritsu : It's soy sauce flavor, I think. If you wait , the noodles will soften. Well~ I find slightly soogy noodle delicious so I don't mind.

Ramen Night 2023 (Spicy Miso Edition)
Miso Tare
(about 7 or 8 servings)
250ml Sake
250g red miso (shinshu)
250g white miso (shinshu)
50g Saikyo miso
50g Hatcho miso
25g light brown sugar
15g iri-goma sesame seeds
Directions: https://www.youtube.com/watch?v=fynu0NHY6dE&t=2s Used combo red and white miso instead of separate.
Dashi Stock
2 sheets of kombu
1 pack of bonito (about 5-6 grams)
1 quart of water
Assembly
For sapparo style put aroma oil (see ramen night 2023) in wok then stir fry with fresh garlic, sliced thin carrot and sliced thin onions until softened. Note 4-6 servings can be done in a wok at once.
Add in paitan stock (see ramen night 2023) with dashi stock. Ratio 1 part dashi stock to 4 parts paitan stock
Once soup is heated up add miso tare - 1 heap tbsp per cup
Dissolve in pan as you stir and add more tare as needed.
Add in a 1/4 teaspoon torgashi per cup of broth used and a pinch of msg if desired.
Add in a tablespoon of butter per bowl of soup
Add toubanjan/ pixen bean paste, 1/2 teaspoon per cup of soup
Soup is done. Just keep hot.
Make noodles.
Put in bowl and pour hot soup on top.
Add any other desired toppings. Source way of ramen
Things not used but noted in recipe: After stir frying vegetables add and cook ground pork 30g per cup of soup. In lieu of aroma oil the recipe calls out for lard thats been cooked off.
Notes:
Needs lots of butter added. I did about 4 tablespoons for the 4 bowls because I didn’t have lard.
Cook the corn in butter, some tamari, and a splash of mirin
Splash of rayu per bowl
Rayu Recipe:
4 tablespoons canola oil
1 bay leaf
2 teaspoons ichimi togarashi (Japanese chili powder) (or Korean or Thai chili powder)
2 tablespoons toasted sesame oil
1 teaspoon paprika powder
Process:
Place canola oil and a bay leaf in a small pan and add low heat.
Cook until small bubbles are coming up, and the bay leaf is just about changing colour. Then turn off the heat.
Use a spoon, and sprinkle some chili powder over the heated oil. Check that it’s not burning the powder. If it’s burning (turning a brownish colour), wait for a little bit before adding the rest of the chili powder. Use a spoon and combine the mix. Make sure the spoon is clean and is not wet.
Allow the mix to cool down. It takes about ten minutes. Once its cooled down, combine with sesame oil and paprika powder.

My favorite go-to’s. I just toss stuff and it tastes good, so these don’t have exact recipes, just pour with your heart?
FISH AND RICE
Frozen Fillets (Tilapia or Cod taste the best for cheap, and tend to absorb flavor rather than have their own. In my opinion.)
Rice (I use white, you can use any. The fish is extremely flavorful, so rice is used to help fill the stomach and balance the flavor of what you’re eating.)
Soy sauce, Butter, Ginger (opt.)
Start cooking the rice. Usually rice has instructions, but I like mine softer so i use more water and cook slightly longer. You don’t have to. I don’t measure but you probably should unless you’re used to cooking specific proportions- though leftover rice is nice, too. Let that cook while you get the fish ready, but rice is usually fine left alone. Don’t forget to rinse first!
Take your frozen fish. No thawing needed! The ice in the fish helps not dry it out when cooking. Rinse if needed, but usually it’ll be just fine if its a packaged fillet. Slap some butter on the pan and turn the stove to medium. No need to wait for the pan to heat. Place the fillet on the butter. Pour soy sauce on top. Add butter and soy sauce as the fish cooks. Dont let it stick to the pan! Keep moving the fish around as the “sauce” cooks off, and keep adding more. Flip the fish every so often, there isnt any specific time you should, just make sure both sides are being cooked. When its done, the flesh will flake off with a fork easily. The “sauce” will start thickening as you cook longer, and thats a good thing. Add ginger when its not quite done but starts getting like this. Keep cooking till the fish is done, and there is little “sauce” in the pan, and looks vaguely caramelized. Overall, tilapia will cook very quickly, as fillets are fairly thin.
Lay your rice into a bed. A plate or bowl work just fine. Plop your fish on top. You shouldny habe much sauce left, but if you do, feel free to scoop it onto the top of the fish- just dont put too much! The flavor is super strong/salty at this point.

BURGERS
Frozen Burger Patties
Buns
Extras (Whatever you like on your burger. My go-to is lettuce mustard, and tomato. If you feel like babysitting a stove one day, caramelize a big batch of onions. They freeze great and taste amazing on burgers. All this is optional.)
Worcestershire sauce, Salt, Onion powder, Garlic powder, Lemon pepper (opt.), Ginger (opt.)
Burgers are fairly easy. Stick em im a pan, pour worcestershire over the patties and into the pan, and sprinkle with the spices. The flavors are important, and you’ll never go back to your old fast food place after learning how to make a good tasting burger. Leave it sizzling on that side for a bit, but dont forget to move em around so they dont stick to the pan.
Flip them after a bit. Pour worcestershire on that side and into the pan, add seasonings to that side too. Let cook for a bit, then keep flipping. After that first flip, you dont need to add more seasonings. Cook to your desired rarity, or till your bored of flipping.
While you cook and flip the burgers, get your vegetables and extras ready! Slice tomatoes, wash lettuce, set the mustard out. Whatever extras you have, get them ready.
Lettuce always goes on the bottom! These burgers get greasy, and it saves the bottom bun from getting soaked. Cheese goes on the burgers before you take them out of the pan, but not while cooking them. Let it get melty! Prep anything else. Then stack.

whew well. some recipes are easy to adapt to be low sodium and tasty. some rely mostly on salt. this is one that relies mostly on salt and which like ... perfectly edible, just doesn't have the depth of flavor and savoriness that a non-loso miso and the ability to add more salt / soy sauce / tsuyu would bring.
i was kind of hoping i would blow my own mind lol and also unlock all kinds of noodle soups with this — i've got one other soy milk ramen bookmarked to try but mm this just may not be the soup noodle that i can make from home. a bit of a shame as this is mostly pantry ingredients for me (toppings aside i guess).
made the first batch of noodle with jade pearl rice ramen, i also have black rice and brown rice & millet.
butter was good. ramen egg was good. corn was good. bok choy was a little weird and bean sprouts are always kind of meh for me.
adjustments:
made 1.5 recipe to make 3 servings to trial various rice ramens
used 0.5 instead of 0.4lb ground pork bc thats what the store gave me
low sodium miso obviously
added 1/2t kosher salt at the end and it seemed to do basically nothing lol

OJT EATS | Ramenya Tenkin
Another day in Japan, another bowl of ramen. And in Hokkaido, it's also another town and another specialty type of ramen. To be specific, we were in a town called Asahikawa for a snow festival but while Sapporo is all about the miso ramen, Asahikawa is known for it's soy sauce based or shoyu ramen. We went to Ramenya Tenkin to give it a go.
Once we got in, we had a look at the menu and was pleasantly surprised by not only the different types of ramen but also the different types of sizes. We'd been snacking all day long so weren't super hungry and the options of half portions of both the gyoza and ramen were welcome.
The walls were plastered with autographs of what we could only assume were happy customers. We had no idea who they were but it was pretty impressive none the less. There were a few cute little cartoons so they were a nice way to pass the time until the food arrived.
First up was this half portion of gyoza. It came on this tiny little plate that still had enough room for a little section for soy sauce. The gyoza themselves were really well cooked with a satisfying crunch with a juicy meaty filling.
This was the miso ramen with corn and butter on the side. You might notice that the bowl has a little Doraemon on the side. That's actually because we went for the children's meal as it turned out that was the best way of getting a small version of the corn butter ramen. The broth was a miso broth and the butter melting in made it that little bit richer; super warming and full of flavour.
This was the full size shoyu ramen. The broth isn't as rich as the miso broth and was slightly saltier as well. You still had a good depth of flavour from the soy but just personal preference, I think I would still go for miso over this. The chashu was a little disappointing, especially after some other stellar examples we'd had in Japan but overall, this was still an excellent bowl of ramen and perfect for the cold weather.
While shoyu ramen might not be my favourite type of ramen (I think tonkotsu or tsukemen are still my top 2 - in no particular order), this was a really nice little meal. A hot bowl of ramen on a cold day just works and this place is definitely worth a visit if you ever find yourself in Asahikawa.

Thursday, September 14th: Between shit ton and infinity
Today's journal heading was brought to you by a StarComm female executive when discussing media planning over a million dollar budget. I will never get used to the way New Yorkers/New Jersey-ers swear on work calls.
Reading: The Rachel Incident (very Irish, very gay, very fun so far)
Writing: Wrote a POV chapter from that book that's been bouncing around my head.
Cooking: Brace yourselves. I'm so amazing. glazed pork belly & ramen noodles with corn, soft-boiled eggs and miso-butter Sauce. I HAND-PICKLED a Persian cucumber with mirin. This may be the best thing I've ever made. Truly a thing of beauty while I listened to an hour and a half of true crime William Thoreson III and the Bogeyman of 19th century London.
Political Awareness:

Sen. Mitt Romeny (R-UT) has announced he will retire at the end of his term in 2024. He called for a “new generation of leaders.”
Loving Relationships: Called Mom after her rotator cuff surgery, she's getting alll the pain meds thank god.
Cardio/Getting Outside: Ran 21 minutes of intervals and then 10 minute cool down today. I feel so much better after a two day rest period and that deep tissue massage.
Dressing Well: Out was a green floral midi dress with a slit up the thigh, large belt secured at the waist. On my run, I rocked my new "Gay for Soccer" Hat. I'm neither gay nor in to soccer, but I support the rights of people who are. Also sick of getting hit on during my runs by all the wrong people.
Cleaning: In a "uneven bangs that you just keep cutting" situation, Makenna and I tried to deep clean a stain out of a rug while maybe just making it bigger and fainter.
Meditation: Focused on deep belly breathing during my run, sat under the pier, enjoyed the view of the waves crashing in, and listened to a guided meditation on the richness of alone time. Self-connection.

On that note I made food tonight, so here's a list of some of my favorite college food staples
before you continue, know that this is a long list:
-pasta with sauce
-caccio e Pepe but I used parmagean and garlic powder with milk and flour too
-buiscuits and gravy (the biscuits are from a can the gravy is homemade)
-ramen noodles with egg and maybe some green onionor seaweed and hot dog or ham
-ramen noodles with sirracha mayo and cheese sauce and maybe egg and hot dog
-eggs in a basket
-tamago gohan (japanese styled egg over just cooked rice, then you stir them together and the really hot rice cooks the egg for the most part while you stir)
-peanut butter and jelly (enough said)
-discontinued homemade dunkin donuts sandwich with pesto, cheese and fire roasted tomatoes (I owe this sandwich my life)
-guacamole and tortilla chips (this bad boy keeps you full forever)
-Onigiri with salmon and spicy mayo (a lot of work but only needs three ingredients if you don't count salt)
-pancakes (yay food!)
-tim hortans biscuit sandwich (sausage, egg, american cheese, ketchup)
-ham and cheese sandwich
-pan con frijoles (refried black bean paste and eat with sour cream or queso fresco, or grated parmesean if your desperate on top with whatever bread you have. It's also amazing on sandwiches or as a toast topping. preferribly cook with onions and garlic)
-hotdog and egg pizza (eggs mixed before you put them in the pan. cut hotdogs into small circles and place like you're putting pepperoni on a pizza. zigzag ketchup on top and eat with a fork and knife. add toasted tortilla that was cut into triangles for extra crunch.)
-grilled cheese and tomato soup
-miso soup with green onion and tofu and seaweed
-steamed pork buns

Ramen is a short typical noodle meal exceedingly popular in Japan. It is what is called more than just a quick meal. It was originated in China in 1800s and was brought to Japan. Ramen noodles come in usually flat, fat, thin, and ribbon-like sizes. They can also be straight or wrinkled with yellowish hue. They are always served in a hot broth flavored with miso or shoyo and toppings like beef, seafood, chicken, spring onions and seaweed.
This unique dish is so popular that different regions in Japan have themed their variations based on their geographic origin. Corn-butter Ramen in Sapporo and Tonkotsu Ramen in Kyushu are the two examples. There are four popular types of ramen, such as Miso Ramen, Shio Ramen, Shoyu Ramen and Tonkotsu Ramen.
In Japan, most of the Ramen shops have a vending machine. You can choose a dish from the picture menus exhibited inside the shop and buy a ticket on the machine.
Tokyo Station, one of the main points for the shinkansen to stop, is the hot spot of many people. Many people who visit here stop to eat in authentic restaurants like Ramen shops.
