The Mediaeval Origins of Macaroni And Cheese
So, I haven't gone over something really important in my life: I am a Mediaeval Re-enactor, and I went into the hobby hoping to become a food historian. I have (technically) achieved that title at this point, but I've branched out into other forms of history such as costuming and coverage of a certain sub-period of the Middle Ages. As I've been pondering things to write about on this blog, I remembered something really interesting: Macaroni and Cheese, or simply the basics of Macaroni and Cheese, have Mediaeval origins. So I'm going to talk about that today.
One of the first recorded recipes for anything that resembled Macaroni and Cheese was in Liber De Cochina, an Italian cuisine cookbook written in the 14th century. The recipe called for pasta covered in parmesan. Although my immediate reaction to this would be "That's just Cacio E Pepe," the more familiar version, which was called makerouns, was found in the Forme of Curie, the cookbook written by King Richard II of England. Richard must've really liked the thought of cheese and pasta, since his recipe calls for hand-cut noodles that resembled lasagna, sandwiched between layers of melted cheddar cheese and butter. Richard II knew how to food, but it was unfortunate that he didn't know how to reign his kingdom as well (He was deposed by his cousin).
Here's the first English recipe for makerouns, I.e Macaroni Cheese Lasagna:
Take and make a thynne foyle of dowh. and kerve it on peces, and cast hem on boillyng water & seeþ it wele. take chese and grate it and butter cast bynethen and above as losyns. and serue forth.
For those who have yet to take a class in Chaucer, it says to make a dough and make pasta. Boil it, and then layer cheese and butter between the noodles before baking it. Delicious!
It wouldn't be until 1827 that the first recipes for Macaroni and Cheese as we know it would pop up in cookbooks, and the first Kraft Macaroni and Cheese dinner wouldn't be invented until 1937. But these are facts that'll wow your next dinner guests!

There was a time when Kengou was younger that he was lactose intolerant. Since he loved yogurt and macaroni and cheese, it wasn't a good time for him, often eating his favorites without care and paying the price afterwards. He did eventually grow out of it but because of it, he can't eat macaroni and chese or anything that's heavily cheesy without having to push back a slight gag reflex. Yogurt is still a daily staple for him.

Here, have a 14th-century recipe for mac and cheese from a medieval cookbook (Forme of Cury): Makerouns.
Take and make a thynne foyle of dowh, and kerue it on pieces, and cast hym on boiling water & seeþ it wele. Take chese and grate it, and butter imelte, cast bynethen and abouven as losyns; and serue forth.
Or, if you want a translation:
Take a piece of thin pastry dough and cut it in pieces, place in boiling water and cook. Take grated cheese, melted butter, and arrange in layers like lasagna (losyns); serve.
(This is not macaroni as we know it, but it was pasta in medieval England.)
Well I would give a medieval peasant some spaghetti.

Fillet wet for 2 hours in cold water, to mince meat, add bread, wetting in milked, pressed, shredding hard-boiled eggs, oil and  mix. Proteins 9.4 gr, fats 8.2 gr, carbohydrates 6.7 gr, energy value 130.0 gr, dish use for diets nr 1,2, 3, 4 b, 5, 11, 1 b.

As on middle in daily ration are 500 gr for proteins as meat, fish, curd  for rising valuable biologic a diet in her enters sea products are squads, as canned, natural kinds, snacks of not spicy cheses, salads, farragos, jellied non-fat fish, fat not beef, sausage doctor. Beverage - Apple Cider It’s a favorite year ‘round. But there’s nothin’ like the scent of apples, cinnamon, and cloves fillin’ your home in December. Or October and November, for that matter. Soup or Salad - Clyde’s Chili  The official name for it is “Hot Damn” chili. Take one bite and your sinuses are cleared for the rest of your life. Entrée - Ham The traditional Christmas ham.  Side Dish - Macaroni and Chese Mac and cheese. A life long favorite. Clyde’s in love with my recipe, but my Grandma Joyce made the absolute best macaroni and cheese. Dessert - Cheesecake, Fudge, Red Velvet Cupcakes Cheesecake, Fudge, and Turtles Oh, gosh. This is a tough one. I’m going to have to pick more than one. I’ll say three: cheesecake, Clyde’s fudge, and red velvet cupcakes. I say cupcakes because they’re not quite the same as the whole cake. I can’t put my finger on it. You know what, no--I take that back. Scratch the cupcakes. My Auntie Vi used to make homemade turtles--you know the chocolates with the pecans? She’s gone now, but I think about those things every year.

Beverage - Egg Nog It’s a classic. You just gotta have it. Soup or Salad - Sherri’s New England Clam Chowder Sherri’s clam chowder. She makes it New England style and it’s so good. She’s heavy on the clam and even throws in some bacon for me.  Entrée - Ham Ham. That’s one of the first things I go for. Nothin’ like a good ol’ slice of honey ham on a roll. My mouth’s waterin’ just thinkin’ about it.
Side Dish - Macaroni and Cheese Sherri’s mac and cheese. Hands down. I could eat it straight out the dish.  Dessert - (Sherri/Grandma ‘Dell’s) Sweet Potato Pie  Sweet Potato Pie. Sherri uses her grandmama’s recipe and it’s some kinda good.
