Last September, the Egyptian fast-casual chain Zooba opened a branch in Lower Manhattan. Among Egyptian classics like taameya and hawawshi, one of the most popular dishes on the menu from the start has been koshari — a centuries-old grain bowl that’s suddenly found itself an unlikely global “it” food. Manhattan’s Zooba is just the latest in a series of hot spots in cities like Cairo, Berlin, London, and New York that are serving the ancient staple to an entirely new and very eager customer base.
The appeal of koshari is easy to understand. It’s both filling and delicious — a mess of complex carbs and protein muddled with a range of acidic notes. A base of rice, lentils, chickpeas, and macaroni is shot through with sauces that meld tomato, hot pepper, vinegar, and garlic, and the whole thing is topped with crispy fried onions. But while it’s a fast-casual trend around the world, in Egypt, koshari is better known as a historic national dish, one that gracefully straddles the divide between street food and home cooking.
It’s also the perfect food for pantry cooking in an age of stay-at-home orders and two-hour supermarket queues. With a long history as a hardy, adaptable, filling meal of choice among traders and travelers, it’s designed to provide maximum nutrition and flavor from cheap, accessible ingredients and local trimmings. If you have an assortment of starches, pulses, and alliums on hand, plus some vinegar and tomato sauce or tomato paste, then koshari’s delights are within your reach.

But how did it get to Egypt?
Most popular accounts cite Britain’s occupation of Egypt, which began in 1882 and was accomplished with the help of Indian troops. While it’s perfectly plausible, even likely, that Indian soldiers brought khichidi with them to Egypt, they probably weren’t the first or the only such link in koshari’s history: Centuries of earlier, sometimes indirect, connections between Egypt and India likely also form part of the dish’s evolution. As the powerhouse rice-and-lentils combo traveled along the pilgrimage and trade routes that have connected South Asia to Arabia to Egypt via the Red Sea for centuries, it absorbed new ingredients and flavors along the way.
Today, traces of rice-and-lentil dishes dot the ports and coastal regions that long tied Egypt and India together. The crews of dhows — short-range sailing vessels of the Red Sea and Indian Ocean — once ate a dish made with rice, lentils, ghee, and hot peppers, according to one traveler’s account from the 1930s. Food scholar Sami Zubaida recalls a weekly meal of rice, lentils, tomato paste, and garlic during his childhood in Baghdad, adding that the dish was also well-known in Iraq’s port city of Basra. It was Zubaida who pointed me in the direction of several 19th-century British accounts that placed koshari — or something very like it — along the east coast of the Arabian peninsula as well as in Suez, an Egyptian port at the northernmost end of the Red Sea. An East India Company official stationed there in the 1840s described the locals eating a mixture of lentils and rice cooked with ghee and flavored with “pickled lime or stewed onions.”

In 1941, Egypt’s most famous cookbook, known as Kitab Abla Nazira, included two koshari recipes, one with yellow lentils and one with brown lentils. But before its canonization in a cookbook written for middle-class housewives, koshari was likely best known as a local street food. British public health authorities granted a license to a street vendor peddling “rice and macaroni” in 1936. It’s a vague archival detail, but I like to think it may have referred to Cairo’s first recorded koshari cart.
The addition of pasta and tomato sauce to koshari was a testament to the considerable influence of the Italian communities in Cairo and Alexandria at the time, which infused everything from the local diet to its dialect. (Modern Egyptian Arabic is peppered with Italian loanwords for everything from a Primus stove — “wabur,” from “vapore” — to the check at a restaurant, “fattura.”) Pasta and tomato sauce offered cheap ways to stretch koshari’s portions even further.
Contemporary koshari is commonly served with as many as three different dressings: a tomato sauce, a local hot sauce called shatta, and a garlicky, vinegar-based dressing called da’ah (pronounced with a glottal stop in the middle, like “uh-oh”).
Even today, koshari is never just one thing. Within Egypt, variations abound: Yellow lentils are associated with Alexandrian koshari, while Cairene koshari typically features brown lentils. Many home cooks told me how they’d tweak their mother’s or grandmother’s recipes, swapping in whichever pulses or pasta shapes they prefer or adding more spice. Sometimes elements of the dressings are combined, like hot pepper added to the tomato sauce, for example. There are variants topped with an egg or a smattering of chicken livers. Cairo Kitchen, another fast-casual Egyptian restaurant specializing in homestyle meals, introduced brown rice and gluten-free variations of koshari. And further afield, Koshary Lux in Berlin serves up koshari with jasmine rice, beluga lentils, and caramelized rather than fried onions.
For now, the signature neon lights of Zooba’s Nolita dining room are switched off, just like the lights on the Nile party boats in Egypt they’re meant to resemble. Until they light up again (it recently opened for takeout and delivery!), the world’s original flexitarian grain bowl is easy enough to make yourself.

Build-Your-Own
The robust grain-and-pulse genre provides a handy template for building a grain bowl from whatever’s on hand. For some good jumping-off points, try Meera Sodha’s twist on kitchari; Maureen Abood’s take on koshari’s Levantine country cousin, mujadara; or novelist Ahdaf Soueif’s koshari recipe. But koshari doesn’t so much require a hard-and-fast recipe as it does a list of stuff to put in a bowl, and a mixture of contrasting textures and tastes is more important than any one ingredient. Here, then, is a basic guide to building your own koshari-inspired pantry grain bowl.
Step 1: Form a base
The foundation of the dish should include at least one grain (rice, pasta, or in a pinch, bulgar, freekeh, or even couscous) and one pulse (lentils, chickpeas). Then you need something with a little more garlic and acid. Whip up a quick dressing with some crushed fresh garlic and cumin steeped in white vinegar (traditional) or lime juice (nouveau). You can also start with a basic citrus vinaigrette and experiment with layering other dressings on top, like a drizzle of pomegranate molasses or a balsamic glaze. A squeeze of fresh citrus never hurts.
Classic koshari is topped with crispy fried onions, which you can replicate with whatever alliums you have on hand, some oil, and a microwave, one of my favorite hacks. Reserve the oil and toss it with the pulses and grains, and add a dollop of butter or ghee for even more richness. For a crunch that doesn’t involve frying things in hot oil but still feels Egyptian, try dukkah, an Egyptian seed and spice mix.

From there, you can pepper in some caramelized onions or add your favorite pickles, fresh herbs, greens, or a soft-boiled egg. Follow the lead of dhow sailors with some hot chiles or pickled citrus.

Slow Cooker vs Pressure Cooker vs Dutch Oven: What Should You Buy?
Slow cooker vs pressure cooker: Which should you buy? Here’s how to decide on whether a slow cooker, pressure cooker (multi-cooker) or Dutch oven is right for you.
I received a question from a wonderful reader. He asked:
“Will you write a blog post on how to choose how to choose between Instant Pot, slow cooker and pressure cooker? My pressure cooker is out, and I’m asking myself if I should by an instant pot instead. I wonder if it’s not the same to slowly cook in my Staub as in cooking in an instant pot? [sic] Thanks a lot for your help or any advice.”
I would be more than happy to tackle this question! I actually get this question a lot, so consider this a primer to help guide you if you are considering a slow cooker, multi cooker or Dutch oven purchase!
Let’s get started.
SLOW COOKER
Slow cookers have been around for years, and I think we should start our guide with this nifty appliance. I will never forget the first time I got my slow cooker (I have this one) – it was like the gift of time had been presented to me on a plate. A slow cooker allows you to cook at low heat over a long period of time, which means you can make something overnight as you sleep, or prep a meal in the morning before work, let the slow cooker work its magic during the day and come home to a fully cooked meal.

When purchasing a slow cooker, I highly recommend buying one that allows you to cook with the insert on a stove as well. This allows you to brown meat for braising, if you wish, before the slow cooking process. I also recommend buying a slow cooker with a large capacity, so that you can fit whole chickens, and feed a crowd.
Slow Cooker Recipes
ELECTRIC PRESSURE COOKER/MULTI-COOKER (such as Instant Pot)
Ah, the current “it” gadget — so much so that the term “Instant Pot” has been used as an umbrella term for all pressure cooker recipes. But did you know that there are other pressure cookers/multi-cookers out there? For example, I personally own the Fagor Lux Multicooker and absolutely love it. But I have had the chance to borrow my friend’s Instant Pot to compare.
So, what is it? An electric pressure cooker or multi-cooker uses high-pressure cooking (you may remember your mom’s stovetop pressure cooker) to reduce cooking time. Under pressure, inexpensive cuts of meat transform into tender morsels in a fraction of the time you either slow cook or braise in the oven. With many different functions, you can sautĂ© onions before pressure cooking, steam, or even make things like yogurt!
I often get asked, can a pressure cooker such as the Instant Pot replace the slow cooker? Well, my answer would be no. I understand that there is a “Slow Cook” button on the multicookers like the Instant Pot, but when you consider the cover of a multi-cooker, the gasket that seals the lid for pressurizing isn’t ideal for slow cooking. Since the liquid isn’t permitted to escape, you are left with a very soupy result, instead of a nice thick sauce on braised recipes. Also, the cooking temperatures often do not match that of a typical slow cooker.
That said, there are workarounds, and you can still use a multi-cooker for slow cooking. For example, if you want after slow cooking, I will allow the multi-cooker to simmer with the lid off to allow liquid to evaporate and let a sauce thicken.

Something to consider is that it takes time for a pressure cooker to come to pressure — one reason I love my pressure cooker by Fagor is that it comes to pressure faster than the Instant Pot. Regardless, the time you are saving must allow for this pressurization — so is it worth it for things like taco filling? I honestly don’t think so. I can get this done in twenty minutes on the stove.
Pressure Cooker Recipes
DUTCH OVEN
If you’re wondering why I’m including a Dutch Oven, well, this is the analog version of slow cooking, and if I’m going to be honest, if time is on my side, it is still my preferred method of cooking. Why? For one, nothing can compare to the heat I can obtain for the perfect sear that is critical with my braising recipes. Between you and me, I will use my Dutch oven to sear meat before putting it in my electric pressure cooker/multicooker, because the “Brown” function is weak in comparison to the real deal. Also, it isn’t prone to breaking and can be used for all kinds of cooking

Which One Should I Buy? A Slow Cooker, Multi-Cooker (Pressure Cooker) or Dutch Oven?
Well, in a perfect world, and money no object, I would say, you would buy one of each. They serve very different purposes, in my mind. Here’s how I use them.
Let’s say the kids have rehearsals and practices and I will be basically playing mommy taxi driver all afternoon. In this case, I will reach for my slow cooker. I can start the dish in the morning, or before the afternoon activities begin, it works its magic while we hustle from activity to activity, and we come home to a meal ready to eat.
The other scenario is this — I am home in the afternoon or early evening and available to cook. But I realize that I should have started cooking earlier in the day and only have about 30-40 minutes to get dinner on the table – and ideally, the dish I am preparing should have at least a few hours of slow cooking or a lengthy simmer (like braised short ribs, homemade soup stock, or pork ribs). In this case, I would reach for my multi-cooker/pressure cooker (Instant Pot perhaps, in your case).
Lastly, I have the indulgence of time on my side and I am entertaining. In this case, I would reach for my Dutch oven. There are certain things that just don’t compare when it comes to achieving the perfect sear, the reduction of liquid to achieve the right sauce, the fond to flavor the sauce — when I want it done right, I would go old school.

This is the Apple Pie Burger at @lunadagardenbistro in cayucos (the artist formerly known as Hoppe's). Yes those are stewed apples and golden raisins dripping out of it. Honestly I expected a little more sweet-savory juxtaposition, but the apple pie filling was not crazily sweetened or pie-spiced. While a very good burger, in today's world of rampant 'fried chicken & waffles' and 'pork belly & syrup' it kinda fell short of my ooey-gooey expectations. I've eaten at lunada 3 times now since the transition, it has always surpassed my expectations, a very solid spot in #Cayucos, really the only game in town for LUXE lunch. Great service as usual, a nice cozy warm sunny dining room, and a wine list with PLENTY of choices even for a snob like me. As far as kitchen appliances go, the Instant Pot isn’t exactly sexy. It lacks the luxe status of a Vitamix, retro kitsch of a Smeg toaster, or the tricked out tech features of a Samsung fridge. It’s essentially an updated slow cooker, and there are fewer things less sexy than something your grandma uses to make chili.
Yet somehow, the extremely humble IP has become the Meghan Markle of the cooking world: Everyone’s talking about her, everyone wants to be her friend, everyone wants to know her secrets. There are literally hundreds of cookbooks solely devoted to the Instant Pot, with titles like The Instant Pot Bible and Instant Pot Obsession. Hop on Facebook and you can swap recipe ideas with the 1.5 million “potheads” in the Instant Pot Community Group. Or lurk in Alexandria Ocasio-Cortes’ Twitter feed to find hundreds of Instant Pot recipes shared by her fans.
And this isn’t just a niche thing. While Instant Pot’s parent company, Double Insight, keeps its exact sales numbers close to the vest, a company spokesperson told the New York Times in 2017 that sales have more than doubled every year since its launch in 2011. Meaning that lots and lots of people are rapidly jumping on the Instant Pot train.
Of course, there are actually a lot of other pressure cookers on the market—Breville, Cuisnart, and even Crock-Pot have their own models. But just like how people refer to all tissues as Kleenex or all sodas as Coke, the Instant Pot has very quickly dominated the genre in just seven years.
But how exactly did we get so obsessed?
“The target person is anybody.”
If you’re not one of the millions with an Instant Pot in your kitchen and aren’t sure exactly what it even is, here’s a run-down: Basically, it’s an electric pressure cooker, slow cooker, steamer, rice cooker, and yogurt maker, all in one. IP enthusiasts use it to do everything from boil eggs, cook meat, and even make cheesecake.
Yes, it’s a multi-purpose dream, but that’s not its main selling point. “The main reason why people love Instant Pots so much is because it cooks food fast,” says Kara Nielsen, the vice president of trends and marketing at CCD Innovation. Thanks to the technology of pressure cooking—which uses pressurized steam heat to cook food really quickly without drying it out—you can make pretty much everything that you could in a slow cooker (pot roast, pulled pork, lentil stew) in a fraction of the time.
And while it has many similar functionalities to a traditional slow cooker, the Instant Pot is designed for a very different generation. In the ’70s, the Crock-Pot gave a new class of working women a way to feed their families a home-cooked meal while still being in the office for a full day, according to the Washington Post (because heaven forbid a man should have to touch a dish). That’s similar in some ways to how we live now, where everyone still works (according to the US Department of Labor, 62 percent of families with children have two working parents) and yet still wants something homemade. But the big difference is that no one has time (or the desire) to prep food in the morning to eat after work several hours later.

That’s where the Instant Pot’s speed comes in play. For example, making chili from start to finish takes about an hour total in the Instant Pot, depending on your recipe. In a slow cooker, however, you’re looking at over six hours of cooking time for most recipes. It’s hard to argue with that math, especially in an increasingly stressed, strapped-for-time society.
“After years of slow cookers and rice cookers, that lifestyle of the home cook that puts a chicken or a pork stew on in the morning, and then goes to work all day and comes home to a dinner, is a different lifestyle,” says Nielsen. “People don’t live that way now

And that’s the exact need Instant Pot is hoping to serve. “The target person is anybody who has a busy lifestyle—young professionals, professionals, busy moms, busy parents, busy dads, or college students.” says Anna Di Megilio, Instant Pot’s marketing manager.
Consider it a healthy life-hack that’s actually worth a damn
The Instant Pot also rose to dominance at the same time that people started to get more interested in healthy eating. Sales of organic food in the U.S. totaled nearly $50 million in 2017, alternative eating plans like Paleo, keto, and vegan diets are quickly becoming more mainstream, and millennials in particular are even willing to pay more for foods they think are healthy (like gluten-free or sustainably-sourced). While people in the past may have been more willing to microwave a TV dinner or order takeout when the post-work hunger pangs struck, customers now are more conscious of what’s in their food, and cooking things yourself gives you total control over ingredients, portion size, and nutrition.
But honestly, it’s exhausting to DIY healthy foods. Do you know how long it takes to strip kale, chop it, and massage it before you can even eat it? Have you ever tried to peel a butternut squash by yourself? And the whole meal-prepping thing can be a major time-suck.
Which leads into the other key to Instant Pot’s success: FOMO. “We also live in this time of viral craziness and ‘life hack’ culture,” Nielsen says. “People always want to know the latest hack.”

Instant Pot has played on that love of insider-y hacks from the beginning. According to the New York Times, the Canadian company initially sent 200 devices to key food influencers (chefs and food bloggers alike) in order to jumpstart their American sales. Reviews started coming out online, people began posting recipes, and boom—a star was born.
Healthy eaters really took to the Instant Pot from the get-go, particularly vegetarians and Paleo dieters—likely because pressure cooking makes preparing staples like large cuts of meat, beans, or legumes much faster than with traditional cooking methods. And people are largely still using their Instant Pot for those two types of foods, says New York Times food writer and Dinner In An Instant author Melissa Clark.  Following a healthier eating plan, no matter how niche, is suddenly a lot more accessible when you have something that makes preparing your everyday staples much faster.
“It’s got all of these things going for it: being a hack, being tech, having gone viral in the sense that there’s this urgency around when to get it on Amazon Prime Day and other big deal days,” says Nielsen. “People hear about it and are like, ‘What’s this Instant Pot thing that I’m missing out on?’”
What is it good for? Almost everything
Unlike detox teas (which, don’t do those), that Instant Pot FOMO isn’t just hype. Just read any of the 23,000 5-star reviews for the Instant Pot Duo (the best-selling model on Amazon) and you’ll see that people legitimately love this thing. “How did I live without this before???” raved one reviewer. “This thing is a real game changer!” wrote another. It’s also consistently given top marks by the Good Housekeeping Institute, Consumer Reports, and Wirecutter for its performance and affordability compared to other pressure cookers on the market.
Of course, it’s not perfect. Even the biggest fans are quick to acknowledge that the device comes with a steep learning curve to sort out the different buttons and settings. The “cook time” in recipes doesn’t always factor in the extra time it can take to bring the Instant Pot up to temperature and to depressurize it when you’re done cooking, which means you might be spending an unexpected extra half hour or so in the kitchen. And while the IP is innovative, certain foods are just not meant to be cooked in a steam environment (like fried tofu or anything that you want to be well-seared or crispy).

But even the Instant Pot’s downsides can be advantages if you know what you’re doing, says The Fresh and Healthy Instant Pot Cookbook author Megan Gilmore. “It has a tendency to overcook vegetables,” she says, which she used to think was a bad thing
until she learned about the “zero minute” cooking cycle (which steams the vegetable while the device is coming up to temperature and then is immediately removed). “People see that in my book and think it must be a typo, but that’s an actual setting on the Instant Pot.” Translation: you can spend even less time cooking veggies if you know how to do it right.
While people may be excited to buy specific IP cookbooks for their eating habits right now, Clark predicts there will be less of these in the future as the device becomes as standard in the kitchen as a food processor or stand mixer. “I remember when my parents got the first Cuisinart when I was a little girl and it came with a cookbook because people didn’t know how to use it,” she says. “Now, it’s a regular kitchen tool.”
Meanwhile, Instant Pot is constantly continuing to evolve the product to keep customers happy—and to keep people talking. “We have new models coming out every 18 months,” Di Meglilio says. Hey, if there’s one (ahem) hack everyone knows, it’s that you have to feed the beast.

Anny Gaul Koshari is filling, flavorful, easy to make, and basically perfect Last September, the Egyptian fast-casual chain Zooba opened a branch in Lower Manhattan. Among Egyptian classics like taameya and hawawshi, one of the most popular dishes on the menu from the start has been koshari — a centuries-old grain bowl that’s suddenly found itself an unlikely global “it” food. Manhattan’s Zooba is just the latest in a series of hot spots in cities like Cairo, Berlin, London, and New York that are serving the ancient staple to an entirely new and very eager customer base. The appeal of koshari is easy to understand. It’s both filling and delicious — a mess of complex carbs and protein muddled with a range of acidic notes. A base of rice, lentils, chickpeas, and macaroni is shot through with sauces that meld tomato, hot pepper, vinegar, and garlic, and the whole thing is topped with crispy fried onions. But while it’s a fast-casual trend around the world, in Egypt, koshari is better known as a historic national dish, one that gracefully straddles the divide between street food and home cooking. It’s also the perfect food for pantry cooking in an age of stay-at-home orders and two-hour supermarket queues. With a long history as a hardy, adaptable, filling meal of choice among traders and travelers, it’s designed to provide maximum nutrition and flavor from cheap, accessible ingredients and local trimmings. If you have an assortment of starches, pulses, and alliums on hand, plus some vinegar and tomato sauce or tomato paste, then koshari’s delights are within your reach. “Egyptians have a long history of hodgepodge cooking, stuffing carbs with even more carbs — and we aren’t the only ones.” — Egyptian novelist Nael El Toukhy Koshari’s history has always been something of a mystery. One thing most Egyptians agree on is the dish’s connection to khichidi (sometimes spelled kitchari), an Indian dish that is also built on the winning combination of grains and pulses — a catchall term for the edible seeds of legumes like beans and lentils. But how did it get to Egypt? Most popular accounts cite Britain’s occupation of Egypt, which began in 1882 and was accomplished with the help of Indian troops. While it’s perfectly plausible, even likely, that Indian soldiers brought khichidi with them to Egypt, they probably weren’t the first or the only such link in koshari’s history: Centuries of earlier, sometimes indirect, connections between Egypt and India likely also form part of the dish’s evolution. As the powerhouse rice-and-lentils combo traveled along the pilgrimage and trade routes that have connected South Asia to Arabia to Egypt via the Red Sea for centuries, it absorbed new ingredients and flavors along the way. Today, traces of rice-and-lentil dishes dot the ports and coastal regions that long tied Egypt and India together. The crews of dhows — short-range sailing vessels of the Red Sea and Indian Ocean — once ate a dish made with rice, lentils, ghee, and hot peppers, according to one traveler’s account from the 1930s. Food scholar Sami Zubaida recalls a weekly meal of rice, lentils, tomato paste, and garlic during his childhood in Baghdad, adding that the dish was also well-known in Iraq’s port city of Basra. It was Zubaida who pointed me in the direction of several 19th-century British accounts that placed koshari — or something very like it — along the east coast of the Arabian peninsula as well as in Suez, an Egyptian port at the northernmost end of the Red Sea. An East India Company official stationed there in the 1840s described the locals eating a mixture of lentils and rice cooked with ghee and flavored with “pickled lime or stewed onions.” Zooba [Official] Two versions of the Koshari served at New York’s Zooba pre COVID-19, now available for takeout and delivery In 1941, Egypt’s most famous cookbook, known as Kitab Abla Nazira, included two koshari recipes, one with yellow lentils and one with brown lentils. But before its canonization in a cookbook written for middle-class housewives, koshari was likely best known as a local street food. British public health authorities granted a license to a street vendor peddling “rice and macaroni” in 1936. It’s a vague archival detail, but I like to think it may have referred to Cairo’s first recorded koshari cart. The addition of pasta and tomato sauce to koshari was a testament to the considerable influence of the Italian communities in Cairo and Alexandria at the time, which infused everything from the local diet to its dialect. (Modern Egyptian Arabic is peppered with Italian loanwords for everything from a Primus stove — “wabur,” from “vapore” — to the check at a restaurant, “fattura.”) Pasta and tomato sauce offered cheap ways to stretch koshari’s portions even further. Contemporary koshari is commonly served with as many as three different dressings: a tomato sauce, a local hot sauce called shatta, and a garlicky, vinegar-based dressing called da’ah (pronounced with a glottal stop in the middle, like “uh-oh”). Even today, koshari is never just one thing. Within Egypt, variations abound: Yellow lentils are associated with Alexandrian koshari, while Cairene koshari typically features brown lentils. Many home cooks told me how they’d tweak their mother’s or grandmother’s recipes, swapping in whichever pulses or pasta shapes they prefer or adding more spice. Sometimes elements of the dressings are combined, like hot pepper added to the tomato sauce, for example. There are variants topped with an egg or a smattering of chicken livers. Cairo Kitchen, another fast-casual Egyptian restaurant specializing in homestyle meals, introduced brown rice and gluten-free variations of koshari. And further afield, Koshary Lux in Berlin serves up koshari with jasmine rice, beluga lentils, and caramelized rather than fried onions. For now, the signature neon lights of Zooba’s Nolita dining room are switched off, just like the lights on the Nile party boats in Egypt they’re meant to resemble. Until they light up again (it recently opened for takeout and delivery!), the world’s original flexitarian grain bowl is easy enough to make yourself. Anny Gaul Koshari is less about one ingredient than the right mix of textures and tastes. Build-Your-Own The robust grain-and-pulse genre provides a handy template for building a grain bowl from whatever’s on hand. For some good jumping-off points, try Meera Sodha’s twist on kitchari; Maureen Abood’s take on koshari’s Levantine country cousin, mujadara; or novelist Ahdaf Soueif’s koshari recipe. But koshari doesn’t so much require a hard-and-fast recipe as it does a list of stuff to put in a bowl, and a mixture of contrasting textures and tastes is more important than any one ingredient. Here, then, is a basic guide to building your own koshari-inspired pantry grain bowl. Step 1: Form a base The foundation of the dish should include at least one grain (rice, pasta, or in a pinch, bulgar, freekeh, or even couscous) and one pulse (lentils, chickpeas). Today’s koshari typically includes at least two of each (chickpeas, lentils, rice, and pasta), but you can always keep it simple, like many earlier versions of the dish, with just rice and lentils. Aim for short pastas, such as elbow macaroni; for longer pastas like vermicelli and spaghetti, break into pieces before cooking. Most koshari recipes call for a grain-to-pulse ratio of at least 2 to 1. Increase the ratio to stretch the recipe into more servings; decrease it for a lighter meal. The culinary teams at Zooba and Cairo Kitchen suggested that preparing multiple ingredients in the same pot is the secret to rich, homestyle flavors (also fewer dishes!), so feel free to cook your lentils and rice together. Step 2: Sauce it Sauces and dressings can make or break a grain bowl. If you have a jarred marinara-style tomato sauce — ideally something with tomatoes, onion, and garlic — on hand, warm it up and stir it right into your koshari or mix in a bit of your favorite hot sauce first. If you only have tomato paste, improvise a substitute by stirring in some hot sauce and olive oil. Then you need something with a little more garlic and acid. Whip up a quick dressing with some crushed fresh garlic and cumin steeped in white vinegar (traditional) or lime juice (nouveau). You can also start with a basic citrus vinaigrette and experiment with layering other dressings on top, like a drizzle of pomegranate molasses or a balsamic glaze. A squeeze of fresh citrus never hurts. Classic koshari is topped with crispy fried onions, which you can replicate with whatever alliums you have on hand, some oil, and a microwave, one of my favorite hacks. Reserve the oil and toss it with the pulses and grains, and add a dollop of butter or ghee for even more richness. For a crunch that doesn’t involve frying things in hot oil but still feels Egyptian, try dukkah, an Egyptian seed and spice mix. Step 3: Customize From there, you can pepper in some caramelized onions or add your favorite pickles, fresh herbs, greens, or a soft-boiled egg. Follow the lead of dhow sailors with some hot chiles or pickled citrus. Step 4: Eat for days Koshari’s reliance on so many shelf-stable ingredients makes it great for cooking from the pantry, but it can also make the process of preparing it daunting. Pace yourself and split the preparation over a couple of days, remembering that most grain bowl ingredients can be building blocks for multiple meals. If you’re planning a pasta dinner with a green salad on the side, make some extra tomato sauce and a garlicky vinaigrette to dress your koshari the next day. And as you well know, crispy onions make anything better. So the next time you look to your own pantry for dinner inspiration, borrow a page from koshari’s long, global tradition of piling together sturdy nonperishables with the zingiest trimmings on hand — for a combination that has been satiating sailors, traders, street vendors, and home cooks for centuries.
