Rice Flour Sweet Puri

Ingredients
1. Rice Flour – 1 cup
2. Jaggery – 1/2 cup
3. Coconut Powder – 2 tablespoons
4. Cardamom powder – 1/2 teaspoon
  Let’s see how to make breakfast cum sweet dish, jaggery puri.
This is a very tasty and easy recipe
This dish can be made very quickly
Here I used 1 cup rice flour
For 1 cup rice flour, use 1/2 cup jaggery
Heat a pan and add the jaggery
Add 1/2 cup water and mix till the jaggery melts
As the jaggery melts, add 1/2 teaspoon cardamom powder, 1 teaspoon clarified butter (ghee) and mix
After the clarified butter (ghee) melts, add 2 tablespoons coconut powder
Here I added dried coconut powder
Mix and put the stove on low flame
add rice flour and mix
Close lid and cut off the stove
Let it sit and cool down till it is bearable to knead it by hand
Then knead the dough
If necessary, sprinkle some water and knead it
Make small balls out of the dough
Press it into a poori
We can make small puris and fry or make one big puri and use a bowl to make them
Let’s fry them now
Heat oil for deep fry
Add pooris and press them with spoon
This will make it puffy
Fry on medium flame
Flip and fry till they turn light brown
Frying for long time will make the puris crispy
Rice flour sweet puris are ready!
Serve hot!

How many Types of Indian Breads are there?
The most heard of breads or the most consumed breads nationally might be 3 or 4. However, there are over 25 types of breads in India. These breads are usually eaten as a savoury or are had as a main meal. Due to cultural influences in various states, breads differ in the styles they are made and consumed. Few breads among these different types of breads are-
Chapati /Phulka/Roti- Almost every Indian household diet consists of chapati or phulka or roti. It is made with kneading together wheat flour, oil, water, and a pinch of salt. It is proven one of the healthiest Indian breads and is consumed with curries made with any vegetable.
A paratha we can say is the upgraded version of roti. Paratha separates into different layers and is usually made with stuffing of vegetables, spices, potatoes, paneer, cheese, sugar and dals. Parathas are thicker than rotis and are considered as heavy food. Parathas are most Indians’ staple and favourite.
Naan means bread in Persian. Naan is a soft, spongy bread from Central Asia and is a part of Mughlai food. Naan is a bread and hence is kneaded with milk rather than water to make it softer and is cooked in a tandoor.
Puri is kneaded similar to roti- made with whole-wheat dough or coarse wheat flour or refined wheat flour but unlike roti, puri is deep fried. Salt, cumin (in some places) is used while kneading the dough which is then made flat and deep fried. Puri is served with all veggies as well as sweet savouries such as kheer, halwa but puri and boiled potato vegetable (puri-bhaji) is the most famous.
Bhakr is a thick bread made from flours of different grains such as Ragi, Bajra, Rice, Jowar. It is a thick bread and is most consumed in the regions of Maharashtra, Gujarat, and Rajasthan. It is thicker than roti or chapati and is served with gravies of veggies or chutneys
Luchi is a different variant in the puri family and is consumed mostly in Bengal. Refined flour is used to make luchi instead of whole wheat flour.
Kulcha is again a type of flat bread made with refined flour and cooked in tandoor just like naan. It can be made simply with flour or with stuffing. Kulcha as we can say is a Punjabi variation of naan.
Bhatura is nothing but a variant in the puri family. Bhatura is again a bread which is crispy, deep fried in butter or oil and and larger than poori. it is served with chole (chick peas) gravy in most places known as the famous “chole bhature”.
Thepla is one among the staples and most loved dishes of Gujarat. Fenugreek leaves is the game changer in thepla along with mild spices which are used while kneading the dough. Thepla is served commonly with pickle or any vegetable gravy.
Roomali is an extremely thin flat bread. Rumal which means a handkerchief and hence the name roomali as the bread is as thin as a handkerchief. Roomali is a combination of maida and whole wheat atta and is cooked on top of a Kadhai.
Sheermal is again a bread cooked in tandoor and has Persian origins but now is a part of traditional Awadhi and Nizami cuisine. It is baked in an iron tandoor and is kneaded with ghee, flour, saffron and yeast, and milk. Sheermal is chewy, faintly aromatic and slightly sweet sheermal. It is consumed mostly with kebabs and niharis, and also with a cup of tea
Litti is a traditional dish in Jharkhand and Bihar. It is famous with some spicy chokha (mashed and spiced potato). Litti is smaller compared to all other breads is stuffed with roasted chana dal flour along with spices before being roasted and tossed in ghee.
Laccha paratha is a speciality of Punjab. The dough is similar to regular dough. Only difference is lachha parathas have lot of layers. It is served with gravy of almost every vegetable.
These are few types of Indian breads that are most commonly consumed and are staple foods in almost many states in India. There are other Indian breads too which are prepared using traditional ingredients and recipies.

Specially made during fasting days, this Kuttu ki poori is so tasty and healthy apart from being gluten free. It can be made with or without boiled potatoes. In fasting days, Kuttu ka atta or buckwheat flour can be replaced by Rajgira or Singhare ka Atta as well. These pooris recipes super suvai tamil are extremely crisp and taste as good as regular pooris.

How to Make Kuttu Ki Poori recipes super suvai tamil
1.Take 2 cups of Kuttu ka atta in a large deep bowl.
2.Add boiled potato to this flour and mix well with a spatula.
3.Knead a smooth dough by adding sendha namak and required water. Make sure it does not get sticky otherwise pooris would not be rolled properly.
4.Cover the dough with a thin plastic sheet and keep aside for at least half an hour
5.After 30 minutes remove the sheet.
6.Now divide the dough into equal small size balls.
7.Sprinkle flour over the rolling board to avoid stickening of Poori and roll it in a round shape using rolling pin. Don’t make it too thin.
8.Gently slide one poori in the hot oil and deep fry till it puffs up. Fry on both sides till golden and crisp.
9.Repeat the process with rest of the pooris and place on paper towels to remove oil.

1.Soak all the ingredients except semolina for about four hours.
2.Mix the semolina, salt and water. Make a batter and keep it aside overnight to ferment.
Prepare dosa masala:
1.Boil and peel the potatoes and mash them.
2.Grind the garlic, ginger, coriander leaves, green chillies and onions to make a paste.

2 liters milk
4 ordinary barfis
Badam and pistachio for garnishing
A pinch of saffron
Chandi ka vark
Rose petals
1 cup sugar
4 Tbsp desi ghee
How to Make Bread Rasmalai Super Suvai Tamil
1.With a small katori or with a tart mould cut out small rounds from the bread pieces, keep it aside.
2.Take half cup sugar and boil till a thin syrup is formed.
3.Boil milk and while thickening add the powdered barfi and the rest of the sugar.

5.Take a tava and heat it, on this heated tava saute the round bread pieces slightly brown on both sides.

How to Make Luchi recipes super suvai tamil
1.In a deep bowl mix maida, salt, ghee and water to prepare a soft dough.
2.Gradually add water as required for kneading the flour.
3.Divide the dough into equal small portions and make balls to roll it out.
4.Before rolling each ball dip it a little in water or oil from one side to avoid stickening.
5.Now roll each ball into a circle of equal size.
6.Heat oil in a pan or kadhai on high flame.
7.When the oil is perfectly hot, slide the Luchi in the hot oil for frying it.
8.Luchi will begin to puff up. Cook on both the sides and avoid burning it.

How to Make Mysore Masala Dosa recipes super suvai tamil
1.Soak all the ingredients except semolina for about four hours.
2.Mix the semolina, salt and water. Make a batter and keep it aside overnight to ferment.
Prepare dosa masala:
1.Boil and peel the potatoes and mash them.
2.Grind the garlic, ginger, coriander leaves, green chillies and onions to make a paste.
3.Heat oil in a pan and add the mustard seeds to it.
4.Saute the remaining onions in it.
5.Add the paste and fry for some time.
6.Add the tomatoes, potatoes, salt and curry leaves.
Prepare red chutney:
1.Roast the chana dal, until slightly browned.
2.You could roast the onion, garlic and ginger for a minute also or just add them raw to the blender.
3.Mix all ingredients and blend to form a paste.

2.Pour oil around the dosa and fry well.

4 Tbsp desi ghee
How to Make Bread Rasmalai Super Suvai Tamil
1.With a small katori or with a tart mould cut out small rounds from the bread pieces, keep it aside.
2.Take half cup sugar and boil till a thin syrup is formed.
3.Boil milk and while thickening add the powdered barfi and the rest of the sugar.

5.Take a tava and heat it, on this heated tava saute the round bread pieces slightly brown on both sides.

How to Make Kuttu Ki Poori recipes super suvai tamil
1.Take 2 cups of Kuttu ka atta in a large deep bowl.
2.Add boiled potato to this flour and mix well with a spatula.
3.Knead a smooth dough by adding sendha namak and required water. Make sure it does not get sticky otherwise pooris would not be rolled properly.
4.Cover the dough with a thin plastic sheet and keep aside for at least half an hour
5.After 30 minutes remove the sheet.
6.Now divide the dough into equal small size balls.
7.Sprinkle flour over the rolling board to avoid stickening of Poori and roll it in a round shape using rolling pin. Don’t make it too thin.
8.Gently slide one poori in the hot oil and deep fry till it puffs up. Fry on both sides till golden and crisp.
9.Repeat the process with rest of the pooris and place on paper towels to remove oil.

Social distancing Indian-Americans cooked everything from kesari to French cream horn at this virtual event
How do you feed a family during the COVID-19 outbreak, without stepping out of the house? “Check your pantry. Walk to your backyard. Open the refrigerator. Flip through old recipe books. Call your friends and family! You will find all the ingredients and know-hows to create simple, delicious meals right within your reach,” explains Fremont, US-based Alagu Al, who organised virtual cookery demonstration and presentation by home chefs last week.
The financial controller for a tech company is also the founder of a WhatsApp group called ‘SamayalSamayal’, a by-invitation only forum for food, culinary traditions and health started in 2018, Alagu feels that it is important for people to not step out of their homes. “As part of the WhatsApp group, we generally organise two live demonstrations ever year in [San Fransisco’s] Bay Area, for about 100 families. Keeping the current scenario in mind, we have to first fulfill our moral and civic responsibility of staying home. It is also the time to use our resources wisely, stay connected with friends and family, and keep spirits high,” she says, adding that this sparked the idea for a virtual cooking demonstration, open out to people across the United States. The event was hosted on Zoom, featuring live demonstrations of five dishes (appetisers, main course, sides and dessert), along with a two-minute presentation each of 85 dishes already cooked.
The demonstrations began with a twist on the kuzhipaniyaram, using pancake flour. The second dish was four kinds of chickpea-based chutney (the most popular was the chocolate chickpea dip, paired with grilled idli). The rava khichdi followed, and a further extension of that were the toasted rava balls which work great as an evening snack. On a healthier note, the fourth participant, who happened to be a doctor, created a thengaipal vengaya (coconut milk and onion) kanji and paired it with a tangy paruppu thuvaiyal. The finale was a French cream horn — a decadent dessert that reminded viewers of French pastry shops — created from scratch by a teenage boy.
“Alternatives and repurposing was the backbone to every dish presented. The idea was not for people to run to the grocery store and pick up ingredients. For example, the pancake flour kuzhipaniyaram was served with kollu (horse gram) chutney — if you did not have kollu at home, you could use walnut and other nuts,” she explains. Each presenter had to think of substitute ingredients, tools and techniques and create a dish using minimal ingredients.
“This is the time to do this, so that we don’t unduly hoard resources that should be available for our fellow citizens,” she points out.
Come one, come all
The participants ranged from teenagers and young working professionals to visiting grandparents. “Each person brought a different perspective and knowledge to the table”.
If the demonstrations were insightful, the presentation of already cooked dishes, by 85 callers was eye-catching to say the least. Coconut rice rolled into a ball, with carrots and beets sticking out (almost looking like the Coronovirus), added a scoop of humour; the vegetarian omelette with a pinch of baking soda and frozen vegetables won many hearts. Kumquats, fruits known to build immunity, were plucked from a participant’s backyard and used to make a tangy gravy served with lentil-only pongal.
A few more dishes that clearly fell in the category ‘garden to table’ included aloe vera leaves transformed to a delicious curry; a perfect pudina rice; a karuvepillai soup, diced green apple spicy pickle, a green apple, celery and ginger juice, and fresh orange cake. Desserts like paper-thin polis,kesari pooris, Thiruvayaru Asoka halwa and almond flour cakes helped assure participants that a little indulgence at home, is allowed.
Future forward
Over the years, Alagu has witnessed that involving children in cookery events, is instrumental in bringing about sustainable change and passing down family recipes. “We had many second generation Indian-American children presenting their dishes, and they have certainly raised the bar. These children are not confined to a predefined set of cooking ideas,” Their creations included choco mug cake, sweet and savoury poha, veggie pinwheels, pesto potato chips and Italian orzo salad.
The group currently has 132 users who are actively sharing recipes and their culinary experiments every day. The weeks lining up to the event have changed the dynamics of homes, she observes. Participants were asked to dress in a shade of red. “Red is the colour of energy, and positive energy is more contagious than any virus can ever be,” she says.

I heard many of my known circle follower friends who work full time now during lockdown have turned to kitchen to prepare their own food, sancks etc. As they have more time to spend, interest in cooking have increased as well as the need to feed family with homemade food.

Lockdown recipes, 200 plus recipes for lockdown to help decide what to cook during lockdown period with minimum dry ingredients.
I heard many of my known circle follower friends who work full time now during lockdown have turned to kitchen to prepare their own food, sancks etc. As they have more time to spend, interest in cooking have increased as well as the need to feed family with homemade food.
During this difficult times, we may be having limited source of fresh veggies or we use it scarcely. I thought I will share some recipes ideas that I already have in my blog but under this post.
Since we don’t eat outside food, make sure to satisfy kid’s cravings and also yours. Make their favorite food. Couples can also take turns to share their cooking works whenever possible. Just make sure to portion control what you eat and keep your meals balanced as working out also becomes challenge. This will help you to maintain a healthy waistline.

Let’s see how to make poori with rice flour
Here I took 2 cups rice flour Let’s make green chilli-onion paste To a mixie jar, add 2-3 ginger pieces, 7-8 garlic cloves, 1 onion, 5-6 green chillies and grind them into a coarse paste Heat 2 teaspoons clarified butter (ghee) in a pan Oil also could be used Add prepared paste and fry for a minute Add chopped curry leaves, a little over 2 cups water, 1 teaspoon cumin seeds, 1/2 teaspoon ajowan seeds, 2-3 teaspoons sesame seeds, 1 teaspoon salt and mix Boil the water Put the stove on low flame and add rice flour Mix Cut off the stove, close lid and let it sit for 10 minutes Move the mixture into a plate and knead it Spread oil or clarified butter (ghee) on your palms Take as much as mixture necessary and put a lid on the rest Roll a small amount of dough over a plastic cover spread with oil You can use a roller or press it with hands Make small pooris or use a mould to shape it These need to be deep fried now Heat oil for deep fry Check the heat by dropping a small amount of dough Drop a poori and drop the next poori after it floats in oil Fry on medium flame Press after a minute and flip Flip and fry till they turn golden brown Serve hot!

Besanwali Masala Bhindi spicy masala bhindi/okra recipe in Indian flavors with chickpea flour and Indian spices.
A no-onion no-garlic, gluten free and vegan dry vegetable curry/subzi.
Easy and quick to make Besanwali Masala Bhindi, relished with rotis paranthas or pooris.
Besanwali Masala Bhindi,can also be made as a side dish with your favorite Dal/Lentil or vegetable curry for a wholesome meal with rice and chapatis. Bhindi or Okra aka Lady’s Finger as it is popularly known in India, is one of the most commonly made and a favorite vegetable among all the age groups. Kids especially eat this vegetable with chapatis or paranthas without any fuss and love to take this for there school lunch.
Bhindi/Okra is a very versatile veggie and it is cooked in many versions and ways depending on the region and state. In North Indian states of U.P and Rajasthan, Punjab and Haryana, it commonly cooked with onion and Indian spices like coriander powder, fennel and cumin seeds, red chilli powder.
Many people down Southern and Western, states make in yogurt based gravy or in peanut and coconut masala and some stir fry it with curry leaves and spices. Whatever way it prepared, it a part of everyday meals and festive menus.
This Besanwali Bhindi recipe is an easy and quick version of Stuffed Bhindi, where spices are mixed with besan or chickpea flour and stuffed vegetable through slits made in bhindi and then the vegetable is cooked in oil.
My naani used to cook masala bhindi this way many times. Bhindi is my favorite vegetable right from my childhood days and I loved having it with hot ghee chapatis and chilled meethi dahi(sweet yogurt). Once when naani was visiting our our place, I just told her that I really like her bhindi masala recipe and the next day when we came back from school, she had prepared it for me. Perfectly cooked bhindi coated in masala!!
This quick and easy version comes handy for busy mornings or preparing and elaborate meal for parties and get-togethers. Bhindi is cut into half and cooked with besan and spices instead of stuffing it vegetable. This saves time to stuff the masala n bhindi. which can take time when preparing for a big crowd. The taste and the texture of bhindi is just like the stuffed one and veg, and bhindis are all coated well in masala, which we call ‘Lipta hua’ in local Hindi dialect in Western U.P.
Cooking Bhindi can get tricky as many people complain of the stickiness in the vegetable.It is due to a slime like substance that makes bhindi sticky and spoils the texture of cooked vegetable.
Few pointers to keep in mind while cooking this vegetable..
Select soft bhindis, thick bhindis are over ripe and have lot of seeds which spoil the taste of vegetable.
Wash Bhindi properly in running water.Pat dry the bhindis with a kitchen towel or tissues.
While cooking, if the vegetable starts getting very sticky or there is lot of slime in it, this trick by my mom always a saver.. squeeze some lemon juice in bhindi, and the cook as per the process till all the vegetable is cooked.
After adding oil with spices, cook it in open pan for 2-3 minutes, then close the lid so that it gets cooked well. Then, again when before switching off the gas saute it in open pan on medium to high flame taking care not to burn it.
How to make Besanwali Masala Bhindi..
To make Besanwali Masala Bhindi, use properly dried fresh bhindi or okra. Besan or Chickpeas flour and powdered spices for Masala Bhindi.
Dry Powder Spices used for the vegetable …
Coriander Powder(dhaniya), Fennel Powder(Saunf Powder), Red Chilli Powder, Dry Mango Powder(Amchur) and Turmeric Powder. All the spice powders are available at Indian Grocery stores outside India .
Other spices used are cumin seeds(jeera), fennel seeds(saunf) and asafetida(hing).
For Gluten-free version avoid, asafetida
In North India, people use Mustard oil to cook most of the dry vegetables, which is used for making bhindi to. Use of oil differs from region to to region like, in Southern states of India Coconut oil is used and in Western India, peanut oil is used. North eastern and eastern India most people use Mustard oil but it varies as per one’s preferences. In case you do not cook in with above mentioned oil, Olive oil or any other good plant based oil can be used to cook the vegetable.

Step to make Besanwali Bhindi Masala
First prepare the veggies(Wash and Cut)
Wash bhindi and pat dry it dry on a kitchen towel or paper tissues.
Cut both the ends of Bhindi, the head and the tip of tail.
Lengthwise cut bhindi into half and if it is very long you can again halve the pieces.
In  a bowl, mix all the powdered dry spices.
Heat oil in a pan (heavy bottomed or non-stick), add hing(optional), cumin seeds. Once the seeds crackle add besan and roast for a 1-2 minutes. Then add masala mix and roast the chickpea flour with spices for another 2 minutes on low flame.
Add cut bhindi to masala and saute well.
Add Fennel seeds and amchur  or dry mango powder and salt. In case you do not have dry mango powder add 1-2 tbsp of lemon juice. Cook in for few minutes in open pan, after that cover it with lid.
Cook till bhindi is till it is on the crispy side. Keep the flame low and keep on lightly stirring the vegetable so that it doesn’t burn.
Before switching off the flame, take off the lid add kadhai masala(optional) and cook the vegetable for another 2 minutes.
Switch off the flame and transfer masala bhindi to serving bowl.
Besanwali Masala Bhindi
Besanwali Masala Bhindi spicy masala bhindi/okra recipe in Indian flavors with chickpea flour and Indian spices.
300 gm Bhindi/Okra (14.5 Oz or 3 Cups(when cut))
¼ Cup Chickpea Flour
1 tsp Cumin Seeds/Jeera
1 tsp Fennel Seeds
2 tbsp Mustard Oil/any other vegetable oil
Dry Spice Powders
2-3 tbsp Coriander Powder/Dhaniya Powder
1-2 tsp Red Chilli Powder
½ tsp Turmeric Powder/Haldi Powder
1 tsp Dry Mango Powder/Amchur
Wash Bhindi properly to wash off all the dirt.
Keep it in strainer for few minutes till the water drains out.
Wipe off all bhindi with a dry kitchen towel or paper tissues.

Do  make this spicy  bhindi vegetable and relish with fresh chapatis or parantha. Since masala bhindi is made with dry spices with no water and onion or tomato, it stays longer and can be carried taken as travel food with paranthas(Tikadia) or pooris.
Make it during the festivals when you abstain from from no-onion no-garlic food. One of the best side dishes with Dal Chawal or any other lentil with chapatis. Luchi Aloo is a popular breakfast combo from the state of West Bengal(India). Luchi is Poori(fired flatbread) made with All-purpose flour and Aloo is spicy Potato gravy that is served with Luchi.
Luchi Aloo is also served along with a Bengali sweet dish.
West Bengal is famous its rich heritage and culture. It’s literature, architecture, music, fine arts and of course Food. Almost every Indian is a fan of Bengali Sweets and these need no introduction. When in West Bengal especially Kolkata(Calcutta), one gets mesmerized by the variety of food the cuisine has to offer. Vegetarian or non-vegetarian no one can say No to the chatpata Bengali Khaana(food).
Few years back we had a brief stay in Kolkata. Rajeev got a good job opportunity and so we moved there from Mumbai but then we were there hardly for 4 months and again he got a great offer back in Mumbai and then we again had to move back with full bag and baggage. Oh.. that was one hectic time , as  my younger one was just a few months old. Shifting places when you have small kids gets too stressful. But then everything just passes by and you are left with good memories.
We too have some very good memories from the City of Joy in that brief period and especially with the food there. I still remember there was a small shop near a Sai Temple that we visited every Thursday. The man there made excellent Luchi Aloo and Gulab Jamuns.It used to be our dinner most of the Thursdays. I was first introduced to Luchi at this shop. Though it is a breakfast item but we used to enjoy it as our late evening snack/ dinner too.
What is Luchi Aloo
For those who do not know about this .. Luchi Aloo is like the Aloo Poori breakfast of Uttar Pradesh. Aloo Poori is one of the most popular breakfast or lunch item all over India. Be it Luchi Aloo or Aloo Poori nothing beats the taste when you have these freshly made on the streets..Luchi Aloo is a must make for all the Bengalis on their special occasions and festivals.

Luchi Dough is made with All-purpose flour. To make it crispy, oil is added to the flour and flour is kneaded with water to soft dough. The rolled dough is then fried in hot oil. Crispy Puffed up luchis are served with spicy Aloo Dum.
Aloo with Panch Phoron
Popular version of Aloo or Potato gravy that is served with Luchis is Aloo Dum. A spicy potato preparation with spices and tomatoes. It is different from the Kashmiri Dum Aloo or Mughlai Dum Aloo or even Pesto Dum Aloo. If you search on net many different versions are there for Aloo Dum.
Bengali Cuisine is incomplete without mention of Panch Phoron. Panch Phoron is a spice mix that consists of Five Spices(Panch).. Fennel Seeds, Cumin Seeds, Mustard Seeds, Nigella Seeds and Fenugreek Seeds. It is widely used in Bengali cuisine. With Luchi I have made Aloo using Panch Phoron spice, as we had it just like this way at the street shop in Kolkata.
I never had Luchis after we came back from Kolkata. Potatoes curries are something quite regular in my house and I make it in different ways.Rasewale Aloo Tamatar, Hing Wale Aloo, Dum Aloo, Aloo Matar, Sookhe aloo or Aloo with Panch Phoron.Potato is such a versatile vegetable and you can play around with the spices and ingredients while making any potato dish.This makes me realize so many dishes that I make for everyday meal are yet to be posted on the blog.
I made Luchi Aloo this weekend for Sunday Brunch and we all had a hearty and chatpata meal. Kids loved the crispy Luchis, though they pointed out the Pooris are different this time. Pooris are made with Atta but  since Luchis are made with all-purpose flour, I made the way these are traditionally prepared.

Luchi
Deep Indian Fried flatbreads made with All-purpose flour, speciality of Bengali Cuisine. Learn how to make Bengali Luchis.
2 Cup All-Purpose flour
1 tsp Salt
Oil for Frying
Mix salt, whole wheat flour and oil in all-purpose flour. 
Rub the flour with fingers, so that the oil incorporates uniformly in flour and it resembles bread crumb like coarse mixture.
Knead to a stiff dough using water.Cover and keep aside for 10 minutes. 
Divide the dough into small tennis ball sized portions. Roll each portion into a small circular disc. Refer the pic for the same. Similarly roll all the dough portions. 
When ready to make, heat oil for frying ina kadhai or heavy bottomed pan. 
For frying, heat enough oil in kadhai or heavy bottomed pan.
Drop a small dough portion when it rises instantly,deep fry in hot oil. till golden brown. 
Serve hot with Aloo Dum or any potato gravy and it even goes well with Chole Masala. 
Panch Phoron is available at Indian grocery stores if you are out of India.
If not, you can take equal amount of Fennel Seeds, Cumin Seeds, Mustard Seeds, Nigella Seeds and Fenugreek Seeds, mix and use as required.

Aloo Dum with Panch Phoron
Bengali style Aloo Dum..spicy potato curry with Panch Phoron or five spice mix. Learn how to make Bengali Style Aloo Dum with Panch Phoron. No-onion, no-garlic Potato recipe.
10-12 Baby Potatoes
2 Tomatoes(Medium)
Ginger piece(small 1/2")
1-2 Green Chillies (optional)
1 tsp Red Chilli Powder as per spicy tolerance (optional )
1 tsp Panch Phoron spice mix
1/2 tsp Asafoetida/Hing
1-2 Bay Leaves
1 tsp Coriander Powder
1 tsp Cumin Powder
1/2 tsp Turmeric Powder
1 tsp Sugar
Salt as per taste
2 tbsp Mustard Oil or any good vegetable Oil
Boil and peel potatoes. I have used baby potatoes, you can use big potatoes and halve them.
Puree ginger, green chillies and tomatoes.
In a kadhai, add mustard oil, heat it till it’s smoking point. Switch off the gas and let it cool a for 1-2 minutes. 
Add panch phoron spice mix and hing, when the seeds crackle, add tomato puree.
Cook tomato puree for 2-3 minutes, then add cumin powder, coriander powder, garam masala and sugar. Cook for few minutes till the masala leaves oil.
Add potatoes and mix well. Masala should coat the potatoes. well. Add 1/2 -1 cup water.
Cover and cook for 5-10 minutes. Keep the consistency of curry as per your liking. I made it on the drier side as we I also had made Chole Masala along with it. 
Garnish with finely chopped fresh coriander leaves. Serve hot with Luchis or Pooris. the se go well with rotis or paranthas also.

Aloo with Panch Phoron can also be also be enjoyed with Pooris. Paranthas or with fresh hot Chapatis. Add more water and keep the gravy with potatoes,it can be relished with Fresh Mint and Peas Rice Pulao or simple Steamed Rice.
