糸島産 ムール貝。 偶然数日分の食糧 買い出しに行った いとさいで発見。 　 @hoteldemikuni 清三シェフの動画にヨダレをたらし 　 @nonki_fuzisaki 大将に糸島産の存在を教えていただき やっとめぐり会えました。 　 ワインで煮る？ どんなスープに？ 　 ここは一つ 「何も加えない」作戦です。 　 玉ねぎを1/2スライス、1/2は5ミリ幅であられ切り ニンニク3片🧄 これだけ。 　 水も足さず。 中火〜弱火でゆっくり火入れ❤️‍🔥 　 食あたりだけは 絶対避けたいので 100℃以上加熱は しっかり守る。 　 煮過ぎた… シジミサイズに なっちゃったけど 味が詰まってて 美味い😋🍽 　 最後は 乾燥タラの戻し汁で少し溶いて 味わい深く最後の 一滴まで頂きました。 　 ２枚目は かぼちゃ食べたかったので シンプルに スライス&グリル。 うちでは かぼグルグルと 呼びます。 　 何も足さず弱火で焼き目つけるだけ。 　 天然の潮(塩)味、甘味、 出汁の風味、 味蕾(ミライ)を 優しく鍛える。 心にも違いが 出るらしいですよ。 特に12歳までにご家庭では大切な 味覚の勉強。 詳しくは @hoteldemikuni さんのYoutube ご覧ください。 あとは 足りない栄養素は 朝からしっかりGet。 ココは味より 吸収性と裏付け最重視。 (Fukuoka-shi, Fukuoka, Japan) https://www.instagram.com/p/CS2xlugp2pN/?utm_medium=tumblr
