Frank Tolbert's Original Chili
Ingredients:
2-4 ancho chiles, or 4-8 small dried red chiles, or 2-4 Tbsp chili powder
4 Tbsp vegetable oil
3lb lean beef chuck
1-2 c beef stock or water
1/3 c finely chopped garlic
2tbsp ground cumin
1 Tbsp ground oregano
Salt
1/2 cup sweet Hungarian paprika
1-2 fresh oregano sprigs
Instructions:
If using chiles, trim stems and remove seeds. Place in small saucepan, add water to barely cover.
Bring to boil, remove from heat, cover, and let stand 15 minutes.
Transfer chiles and water to blender and puree until smooth. Set aside.
Brown the meat in a large skillet in vegetable oil for 6 min. Transfer to large pot and add pureed chiles or chili powder.
Place over low heat, simmer. Add enough stock or water to just cover the meat.
Bring to boil, then reduce and simmer uncovered for 30 minutes.
Add garlic, onion, cumin, oregano, salt to taste, paprika, and cilantro.
Notes:
10/27/2024 - Honestly this was terrible. No tomatoes. I've found a recipe that works - the Hawaii one, and probably won't be trying anyf further.

For me this is firmly a demonstration of "You don't know what you don't know".
I make scones; I make pretty damned good scones, even. I used the recipe found in Joy of Cooking, which is a classic cookbook. In my experience it's not exceptionally authentic nor terrifically inauthentic: it's a compendium of recipes gathered by the authors, rather than ones they've made themselves, so it's as accurate as the recipes submitted. The chicken curry is... not great. But it has some other astonishingly niche recipes which clearly came from someone's grandmother from the Old Country.
So, you know, the scones in JoC are the triangular, sweet, usually have some fruit in them, American type. And the funny thing is, I almost always encounter that type in restaurants and the like. The two times I've encountered round, unflavored things referred to as scones, they were NOT in a setting which was explicitly or even implicitly British.
So, I would have rather confidently told you I was making, well, scones. I knew I was at times being very experimental: I make scones with maple and walnut, ones with rosemary and cheddar, and most recently I made apple oatmeal scones; I knew these were not faithfully classic scones, but I would have certainly said they were recognizably scones.
And the funny thing is, in most contexts I'd have been dismissive of criticism that they are not like the British ones. They are like the ones from the recipes I've found, they are like the ones I find in bakeries and coffee shops; they are even like the ones I made using a mix someone brought home from a trip to London! If someone had said "These are good but they're not scones" I'd have treated it in the same way I would a Texan who told me I can't make chili. If you're not familiar - to a Texan, your chili is awful. It's not really chili. Doesn't matter if you're following a recipe handed down for generations. Doesn't matter if it's an award-winning chili. Doesn't matter if you learned how to make chili directly from Frank Tolbert. The problem is, you're not Texan. And therefore your chili is Bad and Wrong and there's nothing you can do to make it better, because you're never ever going to be a Texan so you just can't make good chili.
People get weird about their regional and ethnic food, and they can't or won't communicate actual, tangible stuff because the identity and cultural implications are too important.
So I'd honestly never encountered the idea that the British approach to scones and the American approach is different. I'd never even considered that there was such a thing as an American scone.

The Eerie Apparition of White Rock LakeΒ 
Dallas Park, Texas
Those who have reported seeing ghosts have long been the subject of jokes and derision but the experience is far more common than people realize. It’s the stuff of history, with sightings in every culture throughout the world recorded in myriad, ancient records. In Dallas, Texas, the White Rock Lake Ghost is no laughing matter. The familiar sighting is of a young woman in a drenched evening dress, who waves down drivers to tell them she’s been in a boating accident. She asks for a ride to a house, hops in the back seat, and then completely vanishes.
It’s a beautiful spot, and on a clear, warm day, there are cyclists, runners, families having picnics, and kayaks cutting lazily through the glassy lake. But there’s something more to this lake than meets the eye of the recreational visitor.
Dallas Morning News posted a 1964 story from its archives about the beautiful ghost of the lake, who reportedly wore a dress from Neiman Marcus. A 2004 story from the Advocate traced the beginning of the legend to the Texas Folk Lore Society, which published a story about the ghost in 1943. In that version, a couple picked up the soaking-wet woman on the side of the road and drove her to the address on Gaston Avenue. When they saw that she had disappeared, they walked up to the house. A man answered the door and explained that he had a daughter, but that she drowned in the lake two years earlier.
The New York Post conducted a study of 2,000 people, which showed that 60 percent said they had seen a ghost in their lifetime. Also, more than 40 percent of those surveyed think their pet has seen one too. The research also found one in three people had either lived or stayed in a house they felt was haunted.
It All Started Back in 1943
According to the official White Rock Lake website, a woman named Anne Clark wrote the account of the Lady of the Lake legend and published it in 1943 under the title The Ghost of White Rock. Clark’s report stated that a young couple was parked on the shore of White Rock Lake, and when they turned on their headlights they saw a young girl in a sheer, wet, white dress coming toward them. With a faltering voice, she told the couple, β€œI’m sorry to intrude, and I would not under any circumstances, but I must find a way home immediately. My boat overturned. The others are safe. But I must get home.’” Next, she climbed into the rumble seat and gave the couple an address in Oak Cliff. When they asked her for directions, they turned around only to find their rumble seat empty and wet. Curious, the couple continued to the address the girl gave them. There they met a sad man at the door who told them, β€œThis is a very strange thing. You are the third couple who has come to me with this story. Three weeks ago, while sailing on White Rock Lake, my daughter drowned.”
The Dallas Morning News reported that many Dallas residents wrote to the newspaper to share their encounters with the girl. In the archives of the News, reporter Frank Tolbert had run two emphatic pieces of the event in his column called Tolbert’s Texas. In 1964, he wrote, β€œHundreds of people have called or written this department about the so-called Girl Ghost of White Rock Lake, who sometimes, by testimony of sober witnesses, makes guest appearances in dripping wet evening dress along the shores of the Dallas lake, always at night and in the spring of the year.”
Just because someone hasn’t seen a ghost doesn’t prove that ghosts don’t exist. Logic has nothing to do with it.Β  If you see the ghost of a dripping wet young lady by White Rock Lake and nobody else is around to confirm, does that mean it never happened?

Once in the Highlands, there was a Starkid dreamcast for Brigadoon! As some people know, I’m very active about social issues happening all the time. However, I am a minor and can’t go out alone to protests. But I can fight online.
So let’s talk about racism
Whether this is deliberate in the fandom or not, I’d like to address the issues of the POC recognition here. I remember back when TGWDLM came out that everyone was begging for Corey Dorris to get a solo. When he received a solo in Black Friday, it was practically ignored. Whether it was because people didn’t like Our Doors Are Open or some other reason, I personally thought it was a fitting song for Frank. As well as this, when it was announced James Tolbert, who’s been choreographing StarKid musicals as early as AVPS, was joining the cast alongside Curt, Kim, Angela and Kendall, I saw a lot more people getting excited to see everyone’s performances and James was hardly mentioned.
One of the most iconic StarKid musicals for diversity is Firebringer featuring Tiffany Williams and Lauren Walker, both women of colour. Their performances were amazing, yet where do the fandom speak about them?
And what about Britney Coleman? Who sang for the credits of Twisted and also played Dean Thomas who has gone on to perform on Broadway. Where do people acknowledge her?
This upsets me a lot, as does the current situation in America, but the things these people need now are a swarm of love to show we know we’re there and we all appreciate them being a part of StarKid.
