One Pot Butternut Squash, Apple and Coconut Soup

A creamy and flavorful butternut squash and apple soup that is made on the stove top in 30 minutes!

I've made my share of soup recipes over the years and there is no end in sight. A couple of my favorite vegetarian soup recipes are the Simple Barley Coconut Curry Soup and the Butternut Squash, Cauliflower and Paneer Curry. 

And I now sort of understand the difference between a broth and a stock. Stock involves bones but not necessarily meat, and broth is a liquid that has had meat in it. Fortunately, that is a simplified definition. Well, if you're interested in a full explanation The Kitchn does a great job of explaining the ins and outs of stock versus broth.   

Speaking of broth versus stock, I used a vegetable broth for this soup recipe but it was labeled stock. Go figure. I've recently got it in my head to make my own vegetable broth because most store-bought broths have onion in the ingredient list. Onions are not my friend. I'll keep you posted on this idea. The weather is expected to start warming up a bit so that may change my mindset on this. We'll see. 

I served this soup with mushrooms and spinach which was a perfect topper. You can customize this soup with garnishes of your choice. Perhaps with croutons, some apple shreds or shredded parmesan cheese. A spoonful of plain Greek yogurt and a bit of black pepper added to each bowl right before serving and you’re good to go.

Serves 4-5

Ingredients

1 medium-sized butternut squash, peeled, seeded and diced

1 sweet potato, peeled and diced

2 apples, cored and diced

2 stalks celery, diced

1 teaspoon yellow curry powder

1/2 teaspoon ground cinnamon

1 (32-ounce) container vegetable broth

1/2 cup canned coconut milk

Salt and freshly ground black pepper

Optional toppings of sliced mushrooms and baby spinach

Directions

Place butternut squash, sweet potato, apples, celery, yellow curry powder, ground cinnamon and vegetable broth in a soup pot. Heat over medium-high heat. 

Bring to a steady simmer, then cover and simmer gently until butternut squash, apples, and sweet potato are tender, about 10-20 minutes. 

Meanwhile, heat a medium-sized pan over medium-high heat and spray with oil. 

Add sliced mushrooms and spray mushrooms with oil. Heat stirring occasionally until mushrooms begin to brown. Remove from pan and add spinach. Cook 1-2 minutes until spinach is wilted. 

When the soup is done use an immersion blender to puree ingredients until smooth. Add coconut milk. Stir into soup and serve with toppings.
