Simple salad inspo: kale, red lettuce, cucumber and tomatoes marinated with 1 Tbs spicy mustard, 1/2 avocado and the juice of 1/2 lemon. 🥑🍋🙌🏼 served with quinoa and beans (added after the picture😀) - I beat my anemia with beans and legumes so I always add them to all my dishes💚 .
