Stephanie: What should I make for the potluck at Bruce’s place?
Crystal: Oh, Steph, all ya need is a sack of potatoes!
Crystal opened the fridge and pulled out a sack of potatoes.
Stephanie (confused): Those weren't in there earlier— Ma, did you sneak those in so I could make a traditional Irish meal?
Crystal (sheepishly): Maybe… but trust me, sweetie. A potato cheese casserole is the best. I never got to make it for ya—
Stephanie (crossing her arms): Because you were addicted to pills?
Crystal shook her head with a smile as she began to open the sack of potatoes.
Crystal: That was the old me. I have the Lord now, and we respect Him in this kitchen.
She pointed to a cross she had hung on the wall next to the fridge.
Stephanie (groaning): Ma, I told you to stop redesigning my kitchen when you're visiting! I’m like Catholic-adjacent!
Crystal: Aye, we’ll discuss that later. Grab some seasonings, and I’ll start chopping. If you’re going to this potluck, the dish you bring has to be scrummy.
Stephanie smiled, rolling her eyes, then shrugged and grabbed the seasonings she knew her mother had snuck in as well.

Deruny (Деруни)
I thought it'd be fun to give the recipes for any of the food they mention in the series, so here's the first! Deruny aka Ukrainian Potato Pancakes! I've made something similar myself as it's a basic recipe, so I can fully recommend making these (even though I haven't specifically made Deruny before).
Ingredients:
About 1lb of potatoes (I've always used non waxy for potato pancakes)
1 onion
1 Egg
3 Tbsp of flour
1 Tbsp of sour cream (I use greek yogurt)
Salt and pepper to taste (I don't add salt to mine until after but that's me)
Frying oil (I like peanut as it's pretty flavor neutral and good for high heat. Avocado oil is another good high heat oil if you're making these peanut free. That said I've used canola and even olive in a pinch though I don't really like either of those for frying foods.)
Grate the potatoes and onion into a bowl so you get a nice pile of potato onion mush. I would alternate grating a potato and then some onion until you run out of both because the potatoes will blacken with air exposure, but the onion stops that.
Then add all the other ingredients, except the oil, and mix together. You should have something slightly gloopier and definitely lumpier then actual pancake batter, kinda like thick applesauce.
Heat a few tbsps of oil in your pan and get it fry hot. To check if the pan is ready give it a couple of minutes and you should see the oil start to waver on the bottom of the pan. When you flick some room temp water at the oil surface it should immediately hiss/spit. It's ready.
Take a large spoon or small measuring cup and pour batter into the hot pan so you have a few small roughly 3-4 inch circles in the pan. Fry until golden brown, like 2ish minutes and then flip and do the same to the other side.
Serve these suckers hot! They go well with sour cream, yogurt, hot sauce, applesauce; Quite frankly whatever you like with your potatoes goes with this dish!

You know what I'm really tired of white people in particular jabbing back at what's clearly mostly poc, particularly Black people, making fun of WHITE British food with the argument of class. Like yes, I think everyone with a brain cell can acknowledge that most white British cuisine that's staple does come from necessity, that's a fucking given. However, I think it adds especially to why poc make fun of it and why its extra infuriating that you guys jab back with not so subtle racism because most cuisine from cultures of color COME FROM NECESSITY. Cause it's like do you think Black Americans were making Soul Food being better off and thinking about what was "affordable"? No, Soul Food comes from LITERALLY surviving off SCRAPS given to the enslaved, not "what's affordable".
And like you think tons of poor Latin Americans (myself included, and this is relevant because a huge food culture in the US is Mexican/TexMex) don't understand nor love the affordability and versatility of beans? Because you fuckers sure don't! And I dont see y'all literally being called a slur over a staple of your cuisine for it either. Baked beans in a can are an affront to the power and potential of the humble bean, call me when you've tried the superior version of beans on toast: from scratch refried beans with cheese on a slice of toasted bolillo bread and then we can talk. Not to mention theres tons of cultures that eat eel with better execution, its not a delicacy either, Unagi and Anago for example is a common every day food in Japanese cooking, you're like again, not doing shit with attainable affordable ingredients.
Like point is, WE KNOW what cooking from necessity is, what's a shame is that the white British pallet show such a complete fucking lack of imagination and versatility within the necessity. Necessity does not mean throwing flavor and enjoyability out the window. Brittish poc and the Jewish British community clearly showed and continue to show that they have a sense of fucking taste and creativity with what they managed to afford, find, and get access to and Britain as a whole should be thankful they created something flavorful and worth being proud of as British staples in contemporary Britain.
